1 lb. lean ground beef
1/2 lb. breakfast pork sausage
6 eggs
6 slices KRAFT Deluxe Pasteurized Process American Cheese
6 English muffins, split, toasted
6 Tbsp. KRAFT Thousand Island Dressing

Steps:

  • Heat oven to 250°F.
  • Mix ground beef and sausage just until blended; shape into 6 (1/2-inch-thick) patties. Cook in large heavy nonstick skillet on medium heat 5 min. on each side or until done (160°F). Transfer burgers to baking sheet or ovenproof platter. Carefully wipe skillet clean with paper towel.
  • Spray skillet with cooking spray; heat on medium-low heat. Slip cracked eggs, 1 at a time, into skillet, leaving spaces between eggs; cover. Cook 4 min. or until whites are firm and yolks are cooked to desired doneness.
  • Meanwhile, place cheese slice on each burger; place in oven. Bake 2 to 3 min. or until cheese is melted.
  • Spread muffin halves with dressing. Place burgers on bottom halves of muffins; cover with eggs and tops of muffins.

1 1/2 pounds ground beef chuck (20% fat)
1 1/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
4 slices American cheese
4 potato rolls (such as Martin's or Oroweat)

Steps:

  • Divide meat into 4 equal portions (about 6 ounces each). Place 1 portion on a work surface. Cup your hands around the meat and begin to gently shape it into a rounded mound. (Use light pressure as you shape so you don't pack the meat too tightly.) Lightly press down on the top of the meat with your palm to gently flatten it. Continue rotating and cupping the meat, patting the top of it occasionally, until you've formed a 4"-diameter, 3/4"-thick patty. Using your thumb, make a small indentation in the center to help keep the burger flat as it cooks. Transfer to a plate. Repeat with remaining portions.
  • Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Season one side of patties with salt and pepper; place on grill, seasoned side down. Grill until lightly charred on bottom, about 4 minutes. Season other side, turn, and top with cheese. Grill to desired doneness, about 4 minutes longer for medium. Transfer burgers to buns and let stand for 3 minutes before serving.

vegetable oil or canola oil, for frying about 1/4 inch
2 (6 ounce) portions salmon, cooked drained well or 2 (6 ounce) cans canned salmon, drained well
1 cup whole wheat crackers, salted crushed
2 large eggs, beaten
1/2 teaspoon celery seed
1/8 teaspoon fresh ground pepper
1 pinch ground cardamom
1 pinch mustard powder
1 pinch ground cloves
1/2 teaspoon paprika
1 pinch mace
1/2 red bell pepper, seeded and finely chopped
1/2 green bell pepper, seeded and finely chopped
1/2 roasted red peppers or 1/2 pickled pimiento, chopped
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 tablespoon dried chives (fresh would be better)
3 tablespoons fresh dill, a handful, finely chopped
3 tablespoons fresh parsley, coarsely chopped
1 teaspoon cayenne pepper sauce
1 lemon, juice and zest of
salad greens
coarse salt
extra virgin olive oil, for drizzling
1/2 cup mayonnaise or 1/2 cup low-fat mayonnaise
1/2 cup chili sauce, mixed with cooked corn and apples
2 tablespoons ketchup
1/2 kosher dill, chopped

Steps:

  • Rinse and spin salad greens of your choice and place in salad bowl.
  • Drain salmon and fluff with a fork in a medium mixing bowl.
  • Add crackers and mix well.
  • Add the rest of the ingredients up until and including cayenne pepper sauce.
  • Zest lemon into bowl and mix well and form into 1 inch thick patties.
  • Heat oil on a medium-high burner.
  • Mix mayonnaise, chili sauce, corn, apple, ketchup, and dill in a bowl.
  • Toss coarse salt with salad greens; drizzle with lemon juice and toss again. Drizzle with olive oil and divide on plates.
  • Fry salmon burgers until golden brown. Flip and brown other side; drain briefly on a paper towel.
  • Place burgers on top of salad greens and dollop mayonnaise sauce on top of burgers.
  • Makes about 7 burgers.

3 pounds ground beef chuck (20% fat), or vegetarian alternative such as Lightlife® Plant-Based Burgers
Kosher salt, freshly ground pepper
8 slices American cheese (optional)
8 potato rolls, split and grilled
Burger toppings

Steps:

  • Form beef (if not using pre-formed vegetarian patties) into eight 4"-diameter, 3/4"-thick patties (don't pack too tightly). Using your thumb, make a small indentation in centers to help keep patties flat as they cook.
  • Prepare grill for medium-high heat. Season patties with salt and pepper and grill until lightly charred on bottom, about 4 minutes. (Resist the temptation to press down on patties.) Flip and top with cheese, if using. Grill patties to desired doneness, about 4 minutes longer for medium. Serve patties on rolls with desired toppings.

2 shallots, minced
1 teaspoon red pepper flakes
1 teaspoon smoked paprika
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon freshly chopped cilantro leaves
1 egg white, slightly beaten
3 tablespoons whole-wheat flour
1/2 tablespoon kosher salt
1 tablespoon cracked black pepper
3 tablespoons olive oil
Spinach
Sliced roasted red peppers, jarred
Sliced red onion
4 multi-grain rolls
Szechuan Tomato Dressing, recipe follows
1/4 cup Szechuan sauce
1/4 cup chopped sun-dried tomatoes
1 tablespoon freshly chopped cilantro leaves
1/4 cup olive oil
Salt and freshly ground black pepper

Steps:

  • In a large bowl, finely mash the black beans with a potato masher or your hands. Add the shallots, red pepper flakes, smoked paprika, Worcestershire, hot sauce, cilantro, egg white, flour, salt and pepper. Mix well with a wooden spoon. Form into 4 patties and arrange on a platter.
  • In a large saute pan over medium-high heat, add the oil. Sear patties for 3 to 4 minutes on each side until they have a nice crust. Remove the patties to a paper towel lined platter. Assemble the sandwiches with a patty, some spinach, roasted red peppers and red onion on the multi-grain rolls. Top with a good drizzle of Szechuan Tomato Dressing and serve.
  • In a small bowl, add the Szechuan sauce, tomatoes and cilantro. Whisk in the olive oil and season with salt and pepper, to taste. Use as a dressing for the black bean sandwiches.
