3 tablespoons butter, divided
1/2 lb shallot, thinly sliced
coarse kosher salt
2 tablespoons apple cider vinegar
4 teaspoons sugar
1 1/2 lbs Brussels sprouts, trimmed
2 tablespoons extra virgin olive oil
1 cup water

Steps:

  • Melt 3 tablespoons butter in medium skillet over medium heat.
  • Add shallots; sprinkle with coarse kosher salt and pepper.
  • Sauté until soft and golden, about 10 minutes.
  • Add vinegar and sugar.
  • Stir until brown and glazed, about 3 minutes.
  • Halve brussels sprouts lengthwise.
  • Cut lengthwise into thin (1/8-inch) slices. Heat oil in large skillet over medium-high heat.
  • Add sprouts; sprinkle with salt and pepper. Sauté until brown at edges, 6 minutes.
  • Add 1 cup water and 2 tablespoons oil. Sauté until most of water evaporates and sprouts are tender but still bright green, 3 minutes.
  • Add shallots; season with salt and pepper.

Sauteed Cabbage and Brussels Sprouts with Bacon and Caramelized Shallots image

6 whole shallots, peeled
3 tablespoons canola oil
1 tablespoon sugar
Kosher salt and freshly ground pepper
3/4 pound slab bacon, thinly sliced
1/2 head green cabbage, finely shredded
1/2 pound Brussels sprouts, outer layer removed, thinly sliced
Pinch of red pepper flakes
Splash of red wine vinegar

Steps:

  • Preheat the oven to 400 degrees F. Put the shallots in a small baking dish, toss with 1 tablespoon canola oil and the sugar and season with salt and pepper. Roast, turning a few times, until golden brown and caramelized, 40 to 45 minutes. Let cool slightly, then thinly slice.
  • Put the bacon in a large saute pan over medium heat and cook, stirring occasionally, until the fat has rendered and the bacon is golden brown and crisp, about 10 minutes. Remove with a slotted spoon to a plate lined with paper towels.
  • Pour off all but 1 tablespoon of the bacon fat, then add the remaining 2 tablespoons canola oil to the pan. Return to the stove over medium heat and heat until the oil begins to shimmer. Add the cabbage and Brussels sprouts, season with salt, pepper and the red pepper flakes, and cook until the vegetables are soft and light golden brown, about 15 minutes. Stir in the vinegar and the shallots. Transfer to a platter and top with the crisp bacon.

Slivered brussels sprouts and shallots caramelize, getting crisp and golden if you roast them at high heat. A dash of Worcestershire and a drizzle of lemon juice add just enough tang and acidity to round them out, without obscuring their natural sweetness. 2 pounds brussels sprouts, trimmed and sliced 1/4-inch thick
3 shallots, sliced 1/4-inch thick (about 1 cup)
1/2 cup extra-virgin olive oil
1 teaspoon kosher salt, plus more to taste
8 thyme sprigs
2 garlic cloves, finely grated or minced
1 tablespoon Worcestershire sauce, plus more to taste
1 1/2 teaspoons fresh lemon juice (from 1/2 lemon), plus more to taste
Grated Parmesan, for serving (optional)

Steps:

  • Heat oven to 450 degrees. In a medium bowl, toss together brussels sprouts, shallots, olive oil and salt. Evenly divide brussels sprouts mixture between two rimmed 13-by-18-inch baking sheets, spreading everything into one layer. Top with thyme sprigs.
  • Roast, stirring once, until brussels sprouts and shallots are tender, golden and lightly charred in spots, 20 to 25 minutes.

1-2 slices bacon, cooked & crumbled
freshly ground pepper to taste

Steps:

  • (This step can be done the day before.) Melt butter in medium skillet over medium heat. Add shallots; sprinkle with pepper. Saute until soft and golden, about 10 minutes. Add vinegar and sugar. Stir until brown and glazed, about 3 minutes. (Can store in refrigerator until next day.) Halve brussel sprouts lengthwise. Cut into very thin slices using a food processor with the slicer blade. (Store in refrigerator until ready to use.) (Just before serving.) Heat olive oil in large skillet over medium-high heat. Add sprouts, sprinkle with pepper. Saute until brown at edges, but still bright green, and tender, about 9 minutes. Add shallots and bacon crumbles. Season with salt and pepper to taste.
