1 tablespoon vegetable oil
1 lb boneless skinless chicken breast, cut into 1-inch chunks
1 package Tasty™ Savoury Seasoning Mix, divided
1 small yellow onion, chopped
4 cups chicken stock
1 cup cherry tomato, halved, 1 (14.5 ounce) can petite diced tomatoes, undrained
8 oz pasta, uncooked, such as penne, fusilli or bow-tie
1 cup bite-size mozzarella cheese balls, or shredded mozzarella

Steps:

  • Heat the oil in large high sided skillet over medium-high heat. Add the cubed chicken and 1 tablespoon of the seasoning mix. Cook, stirring often for 5 minutes or until browned and fully cooked. Remove chicken from the pan and transfer to a large bowl. Set aside.
  • Add the onion to the skillet and cook for 3 minutes or until softened and translucent.
  • Add the stock, tomatoes and remaining seasoning mix to the skillet, bring to boil and stir to release browned bits from bottom of skillet. Stir in the uncooked pasta and cook for 15 to 20 minutes, stirring occasionally until the pasta is fully cooked.
  • Return the chicken to skillet. Stir in the mozzarella and cook for 2 minutes or until thel chicken is heated through. Sprinkle with chopped basil if desired and serve immediately.

My FAVORITE dish from TGIFriday's. I found the copycat and it is delicious. It is super simple to make and don't skimp on the garlic because that is what really makes the flavor. Also, if tomatoes aren't in season use the canned tomatoes in italian seasonings, they work just as well. Add some garlic bread to the side and you're done!

4 (4 ounce) chicken breasts
salt and black pepper (To Taste)
1 lb angel hair pasta
6 -8 medium size roma tomatoes
4 tablespoons olive oil, divided
1/4 teaspoon salt
1/8 teaspoon black pepper
10 fresh basil leaves
2 garlic cloves, sliced into thin coins
1/2 cup tomato sauce
1 cup balsamic vinegar
1 tablespoon granulated sugar

Steps:

  • Tomato Salad (Step 1): Wash, core and dice tomatoes to 1/4" pieces, save juices and place in small bowl. Wash, dry and cut basil leaves into thin strips. Combine tomatoes, left over juice, basil, 2 tablespoons olive oil, salt, pepper, and hold for 2 hours before use.
  • Balsamic Glaze: Bring to a boil vinegar and sugar in small pan and turn down flame to a simmer Reduce by 75% until sauce turns to a thick syrup, hold at room temperature.
  • Pasta: Boil pasta as per directions on box until al dente.Drain and transfer to bowl.
  • Tomato Salad (Step 2): Heat heavy bottom saucepan under medium-low flame. Add 2 tablespoons olive oil, heat oil for 20 seconds. Saute cloves of garlic, that are sliced into thin coins, in oil (if small use 3) for 45 seconds on each side until soft and tender - do not brown garlic (if brown DISCARD and start over). Increase heat and add tomato salad and stir.
  • Tomato Salad (Step 3): Add plain tomato sauce to pan and bring to a boil. Add pasta to sauce pan and toss with fresh sauce (sauce should just coat pasta). Transfer to a service platter or plate individually. Garnish with balsamic glaze.
  • Chicken Breasts: Season both sides of chicken breasts with salt and black pepper. Grill 3-4 minutes per side for grill marks or until the chicken breasts reach 165 degrees F. Grill right before serving.
  • To serve: Slice chicken breast into strips on a bias (45 degree angle) and place on top of pasta.Enjoy!

½ small red onion
4 cloves garlic, peeled
2 tablespoons olive oil
2 tablespoons butter
2 medium tomatoes, cored

½ cup grated Parmesan cheese

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes.
  • While the pasta is cooking, puree onion and garlic in the bowl of a food processor.

5 -6 large ripe roma tomatoes
4 green onions
2 -4 large minced garlic cloves (if you don't like large amounts go with two)
12 large basil leaves, thinly sliced

4 qt water
1 Tbsp garlic powder (not salt)
1 Tbsp dried Italian herbs
2 Tbsp salt
10 oz dry pasta (rigatoni, penne, farfalle, etc.)
FOR BRUSCHETTA:
1/2 c roughly chopped fresh basil
3 medium fresh tomatoes, seeded and diced
1/2 c crumbled Feta cheese
1/4 c toasted pine nuts
1/4 c chopped sun-dried tomatoes (not in oil)
3 Tbsp balsamic vinegar
3 Tbsp olive oil
salt and pepper, to taste

Steps:

  • 1. Place a pot with 4 quarts of water on high and add garlic powder, dried Italian herbs and salt.
  • 2. Once the water comes to a boil add the pasta and boil till the pasta is "al dente" (approximately 8-10 minutes). Drain all of the water from the pasta (don't rinse) and place in a bowl to cool.

The light balsamic glaze is perfectly balanced by the addition of the feta cheese paired with the bruschetta tomato marinade. An easy dinner recipe - ready in just about 20-minutes.

16 ounce box of thin spaghetti
⅓ cup reserved pasta water from the cooked pasta
1 pound boneless-skinless chicken breast (cut into 1 inch bite size pieces)
1 tsp dried basil
1 tsp dried parsley
1 tsp kosher salt (divided)
½ tsp black pepper (divided)
2 cups (1 pound package) campari tomatoes (small diced)
¼ cup + 2 tablespoons olive oil ( divided)
2 tbsp balsamic vinegar
3 tbsp fresh basil (chopped, divided)
2 tbsp fresh parsley (chopped,divided)
1 tbsp garlic ( minced)
½ tsp granulated sugar
½ cup feta cheese crumbles

Steps:

  • Cook your pasta according to package directions. Once your pasta is cooked, remove the ⅓ cup of starchy pasta water and set it aside. Drain your pasta and set it aside.
  • While your pasta is cooking, in a medium sized bowl, combine your diced tomatoes, ¼ cup olive oil, balsamic vinegar, 2 tablespoons fresh basil, 1 tablespoon fresh parsley, minced garlic, sugar, ½ teaspoon salt and ¼ teaspoon black pepper. Allow this bruschetta tomato mixture to sit and marinate while you prepare the remaining dish.
  • In a medium sized bowl combine the diced chicken, dried basil, dried parsley, ½ teaspoon salt and ¼ teaspoon black pepper. Stir the chicken to coat it evenly with the dried spices.
  • Add 2 tablespoons of olive oil to a large skillet, on high heat. Add the seasoned chicken breast to the hot skillet and brown your chicken pieces for 8 minutes, or until all the pieces are cooked through and browned.
  • Turn the heat on your skillet to medium and add the reserved pasta water and the marinated tomatoes. Allow the sauce to cook for another 2 minutes then add the cooked pasta and toss to combine, making sure that all the pasta is coated in the bruschetta tomato sauce.
  • Turn off the heat to your skillet and top your pasta with the feta cheese crumbles, remaining 1 tablespoon basil and 1 tablespoon parsley.

Just like bruschetta on bread but using pasta. I got this recipe from "Sam the cooking guy". This recipe is quick and easy and taste GREAT! I used penne noodles rather than spaghetti noodles.

1/2 lb tomatoes
4 -5 garlic cloves, minced
12 large basil leaves, torn into smallish pieces
3 tablespoons olive oil
kosher salt
pepper

  • Cook pasta according to package directions.
  • Remove seeds from tomatoes and chop roughly.
  • Put tomatoes in a bowl with the garlic, basil and olive oil - season with salt & pepper.
  • Drain pasta, add to bowl and toss well with tomato mixture.
  • Serve with shredded parmesan cheese.

I made this up from craving bruschetta but also wanting pasta...first I thought spaghetti would be great with this but then realised curly pasta would go well because of being able to hold the juice...any curly pasta would do. Also, you can eat this cold or hot. I ate it cold and it was delicious...great on a hot day!

400 g other Italian pasta (strozzapreti, curly pasta)
1/2 medium red onion
1 garlic clove
2 medium ripe tomatoes (hydroponic if you can, vine would do nicely as well)
1 pinch salt
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil (your favourite)

Steps:

  • cook pasta in boiling water and drain.
  • dice onion, garlic (finely) and tomatoes.
  • mix tomato mix in bowl with salt and add balsamic vinegar, soak.
  • mix pasta with tomato mix.
  • drizzle olive oil and mix.

1 lb spaghetti
3 large tomatoes
1 cup packed fresh basil or 1/2 teaspoon dried basil
1/3 cup romano cheese or 1/3 cup parmesan cheese
1/3 cup finely chopped red onion
1/4 cup capers, rinsed
2 tablespoons extra virgin olive oil
1 tablespoon wine vinegar
2 cloves garlic, smashed
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large pot of boiling salted water, cook pasta until tender but firm, about 8 minutes.
  • Reserving 1/3 cup of the cooking liquid, drain and return to pot.
  • Meanwhile, chop tomatoes.
  • Chop basil finely.
  • Add tomatoes and basil to pasta.
  • Add reserved cooking liquid, cheese, red onion, capers, olive oil, vinegar, garlic, salt and pepper.
  • Toss to coat.
