1/3 cup canola oil
1/2 pound sliced fresh mushrooms
3 small zucchini, chopped
2 medium onions, chopped (about 1-1/2 cups)
1 medium green pepper, chopped
2 cups cubed fully cooked ham
2 garlic cloves, minced
2 packages (8 ounces each) cream cheese, softened
1/2 cup half-and-half cream
12 large eggs, lightly beaten
4 cups cubed day-old bread
3 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add the vegetables and ham; cook and stir until vegetables are tender. Add garlic; cook 1 minute longer. Drain and pat dry. , In a large bowl, beat cream cheese and cream until smooth. Gradually beat in eggs. Stir in the remaining ingredients and vegetable mixture., Transfer to two greased 11x7-in. baking dishes. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

This was served at my sister-in-laws baby shower along with a wonderful salad with balsamic dressing and seasonal fruits. It was so elegant. I had to ask for the recipe it was so delicious! My mother-in-law asked her friend for the recipe and here it is! I couldn't believe how easy it is to make. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking. You put this together in the evening the night before. Try changing the cheese and toppings with your favorites! Very versatile dish! Enjoy.

1 loaf French bread (4 cups cubed)
10 eggs
4 cups milk
1 teaspoon dry mustard
1/4 teaspoon onion powder
1 teaspoon salt
1 teaspoon Worcestershire sauce (optional)
8 -10 slices bacon (crumbled)
2 cups cheddar cheese (shredded)
1/2 cup fresh tomato (chopped)
1/2 cup mushroom (sliced)

Steps:

  • Butter a 13 x 9 inch casserole dish.
  • Arrange bread cubes in casserole dish. Sprinkle with shredded cheddar cheese.
  • Beat together the eggs, milk, dry mustard, onion powder, salt and worcestershire sauce. Pour over the bread and cheese in the casserole dish.
  • Sprinkle with crumbled bacon, mushrooms and chopped tomatoes.
  • Cover and chill overnight.
  • Bake uncovered for 1 Hour or until set. (cover if getting too brown on top).

CHICKEN AND ASPARAGUS STRATA (BRUNCH CASSEROLE)

This is one of my favorite brunch item - everyone seems to love it. This is a very easy menu item and you can prepare it the night before. Enjoy!!

1 loaf Italian bread (break up into cubes) or 1 loaf French bread (break up into cubes)
6 eggs
2 cups milk
16 ounces shredded swiss cheese
1 rotisserie-cooked chicken (Picked off of the bone. I use only the breast, but you can use the whole chicken)
1 bunch asparagus
3 shallots
2 tablespoons olive oil
Pam cooking spray

Steps:

  • Spray baking dish with Pam (9X13).
  • Pick rotisserie chicken from the bone and set aside. Let cool.
  • Finely chop 3 shallots and sauté in olive oil. Add shallots to chicken and let cool.
  • Boil a small pot of water - cut the fresh asparagus up into 1 inch pieces. Add the asparagus pieces to the boiling water and cook for 2 minutes. Strain and put asparagus pieces in an ice water bath to stop cooking. Remove asparagus and dry on a paper towel. Add to the chicken.
  • Mix eggs and milk in separate dish (make sure eggs are well beaten).
  • Add cubed bread, shredded cheese, chicken, shallots and asparagus to the egg and milk mixture. Make sure chicken, asparagus and shallots are all cooled before adding them to the egg mixture.
  • Pour all ingredients into your baking dish
  • Bake on 350 degrees for 45 minutes. It will puff up slightly, like a quiche. Let is set for about 15 minutes before serving. It will settle and fall a bit.

1 loaf italian bread (9x5 inches), cut into 1/2 inch slices
6-8 eggs
21/2 c. milk
1/2 c. heavy cream
Herbs to taste (dried oregano or thyme, fresh basil or parsley)
1/2 cups parmesan or romano, grated
1 lb (16 oz) spicy vegetarian sausage, sliced
2 large shallots or 1 bunch scallions, finely chopped
1 red or green pepper, thinly sliced
2-3 c. cheddar (or similar) cheese, grated
1/2 pint cherry tomatoes, sliced in half

Steps:

  • Butter a standard (9x13) casserole dish. Combine eggs, milk, cream, herbs and parmesan or romano thoroughly (If you're using whole milk you don't need the cream--just replace it with more milk). Heat a tablespoon or so of oil in a medium skillet. Sauté the sausage over medium-high heat until browned. Remove from pan. Add a little bit more oil and the shallots or scallions and the pepper. Sauté until slightly softened. Combine with sausage. Assemble the strata. Place a layer of bread slices on the bottom of the dish. Tear little bits off extra slices to fill in gaps. Cover with half the sausage/pepper mixture. Pour half the egg mixture over and than sprinkle on half the cheese. Repeat. Top with cherry tomatoes. Cover and refrigerate until needed, at least 20 minutes. Uncover and bake at 350 degrees 45 minutes to 1 hour. Variation Ideas: Mediterranean strata: Use a combination of artichoke hearts, olives, sun-dried tomatoes, feta cheese and other Mediterranean ingredients. Swiss strata: How about onions, mushrooms, spinach and Swiss cheese? Simple strata: Steamed broccoli and tomatoes.

Perfect for a weekend brunch, you can chill 2 hours or up to 24 hours! Use either French or Italian if possible day-old bread (for easier slicing) for this. You can increase the apples to 3 if desired, roughly half a loaf of bread should be enough for this recipe!

2 medium apples, peeled and coarsely chopped
3/4 cup raisins
1/2 cup finely chopped walnuts

1 cup sour cream, divided
6 large eggs
1 1/2 cups half-and-half, 10% cream (or use full-fat milk)
1/4 cup maple syrup

Steps:

  • Butter a 9-inch baking dish.
  • Melt butter in a medium skillet over medium-high heat.
  • Add in apples and saute until just softened (about 3 minutes) remove from heat.
  • Stir in the raisins, walnuts, sugar, cinnamon, nutmeg and 1/2 cup sour cream.
  • In a medium bowl beat eggs, half and half, maple syrup and remaining 1/2 cup sour cream.
  • Layer HALF of the sliced bread in the bottom of the prepared baking dish.
  • Spread the apple/sour cream mixture over the bread slices, then top with remaining bread slices.
  • Pour the egg mixture over the top of the bread.
  • Cover and refrigerate from 2-24 hours.
  • Set oven to 325 degrees.
  • Bake for about 50-60 minutes or until set and lightly browned.
  • Let stand for 10 minutes before serving.

1 prepared angel food cake (10 to 12 ounces), cut into 1-inch cubes

1 tablespoon vegetable oil
1 pound spinach
1 pinch salt and ground black pepper to taste
1 quart milk
12 eggs
1 teaspoon salt
freshly ground black pepper, or to taste
1 sourdough baguette, sliced
1 pound soy sausages, cut into cubes
6 ounces shredded extra-sharp Cheddar cheese
6 ounces shredded low-fat mozzarella cheese
½ cup thinly sliced scallions

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Set an oven rack in the center position of the oven. Prepare a 13x9-inch baking dish with cooking spray.
  • Heat oil in a skillet over medium-high heat. Saute spinach in hot oil until wilted, 2 to 3 minutes; season with salt and pepper to taste.
  • Beat milk, eggs, 1 teaspoon salt, and freshly ground black pepper together in a bowl until smooth.

Steps:

  • Preheat oven to 325º F.

1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion

1 (12 ounce) can hormel corned beef, coarsely chopped
1 cup shredded cheddar cheese
1 1/2 cups milk
3 eggs, beaten

Steps:

4 cups tightly packed torn fresh spinach
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 eggs, beaten
2 Tbsp. chopped fresh oregano
3/4 cup KRAFT Shredded Italian* Five Cheese Blend

Steps:

  • Heat oven to 375ºF.
  • Cook and stir onions and peppers in large skillet sprayed with cooking spray on medium-high heat 5 min. or until crisp-tender. Remove from heat. Stir in spinach.
  • Prepare stuffing as directed on package. Add to spinach mixture along with the eggs and oregano; mix well.

Great recipe for Christmas brunch or any brunch. You can put it all together the day before and just pop it in the oven. If you wish to bake it right away that's fine too but let it sit at room temp for about 1/2 hour so the bread has a chance to absorb the egg. This recipe is favorite of mine but originally came from "Company's Coming for Christmas".

12 slices your favorite bread, crusts removed
2 cups aged cheddar cheese, grated
8 large eggs, beaten
1/2 teaspoon onion powder
1 teaspoon Worcestershire sauce

2 2/3 cups milk
2 lbs your favorite sausages, slipped out of their casings (Brats, hot Italian etc)

Steps:

  • Grease a 9x13-inch baking dish.
  • Scramble fry the sausage meat until cooked, drain off all the fat.
  • Line the greased dish with 6 slices of bread.
  • Sprinkle in the cheese.
  • Pour the fried sausage meat over the cheese layer.
  • Cover meat with remaining slices of bread.

1 cup shredded mozzarella cheese (4 ounces)
2 tablespoons chopped fresh dill or 1 1/2 teaspoons dried dillweed

3 cups milk
2 tablespoons all-purpose flour
1/2 teaspoon pepper
Additional cooked, peeled and deveined shrimp (optional)

Steps:

  • Directions Spray a 13x9x2-inch baking dish with nonstick cooking spray. In a large skillet melt margarine or butter; cook leeks for 3 minutes or until tender. Tear tortillas into bite-size pieces. In the baking dish layer half of the tortilla pieces, half of the leeks, half of the shrimp and crabmeat, half of the cheese, and half of the chopped dill. Steps:

  • Spray two 13x9x2-inch baking dishes with nonstick cooking spray. In a large skillet melt margarine or butter; cook leeks for 3 minutes or until tender. Tear tortillas into bite-size pieces.
  • In each baking dish layer one-fourth of the tortilla pieces, one-fourth of the leeks, one-fourth of the shrimp and crabmeat, one-fourth of the cheese, and one-fourth of the chopped dill. 1/2 cup chopped red peppers
4 cups tightly packed torn fresh spinach
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 eggs, beaten
2 Tbsp. chopped fresh basil
3/4 cup KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 375°F.
  • Cook and stir onions and peppers in large skillet sprayed with cooking spray on medium-high heat 5 min. or until crisp-tender. Remove from heat. Stir in spinach.
  • Prepare stuffing as directed on package. Add to spinach mixture along with the eggs and basil; mix well.

4 English muffins, torn or cut into bite-size pieces (4 cups)
1 1/2 cups cubed cooked ham (7 to 8 ounces)
1 package (9 oz.) frozen asparagus cuts, thawed and drained
1 cup shredded Swiss cheese (4 ounces)
1 cup frozen or refrigerated egg product, thawed
1/4 cup sour cream
1 tablespoon Dijon-style mustard
1 1/4 cups milk
2 tablespoons finely chopped onion
1/8 teaspoon black pepper

Steps:

  • In a greased 2-quart square baking dish, spread half of the muffin pieces. Top with ham, asparagus, and cheese. Top with remaining muffin pieces.
  • In a medium bowl, whisk together egg product, sour cream, and mustard. Stir in milk, onion, and pepper. Pour over layers in dish. Press top layer into liquid with the back of a wooden spoon. Cover and chill for 2 to 24 hours.
