Steps:

12 ounces salmon fillets
1 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves, grated
1 tablespoon mustard
1 tablespoon brown sugar
1 pinch red pepper flakes
1 1/2 tablespoons canola oil
4 lemons or 4 lime wedges, to garnish

Steps:

  • 1. Preheat the oven to 400 degrees.
  • 2. In a bowl, combine the salt, pepper, grated garlic cloves, mustard, brown sugar, red pepper flakes, and Canola oil until a paste has formed.
  • 3. Liberally season the fish with salt and pepper. Then smear the paste onto the flesh side of the fish.
  • 4. Heat a cast iron skillet (or oven safe) on the stove and then add a bit of oil to the pan. Cook the fish skin side down first until it's golden brown on one side, then flip and place in the hot oven to cook through. Cook until the desired temperature has been reached.
  • 5. Garnish with fresh lemon or lime wedges.

1 tablespoon(s) each brown sugar and butter
1 teaspoon(s) honey
1 tablespoon(s) olive oil
1 tablespoon(s) whole grain mustard
1 tablespoon(s) soy sauce
1 salmon filet about 2 pounds
salt and pepper

Steps:

  • Remove skin from salmon and cut into portions. Season with salt and pepper and set aside.
  • Preheat oven to 350 degrees. Mix the brown sugar, butter and honey together in a small saucepan until the sugar has dissolved.
  • Add the olive oil, mustard and soy sauce and mix well. Line a baking pan with foil and brush the bottom with a small amount of the brown sugar mixture.
  • Lay the salmon into the pan and brushe the remaining mixture on the top. Bake in oven for about 20 minutes and serve
