This recipe is from my mother. This is only one of the many candy recipes she makes at Christmas and gives away to friends.

Steps:
- Butter a 8 or 9 inch square baking dish.
- In a large heavy saucepan, stir together the brown sugar and evaporated milk. Bring to a boil over medium-high heat. Cook until the temperature reaches between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
- Remove from the heat and stir in the butter, vanilla and walnuts. Continue to beat with a sturdy spoon until the mixture looses its gloss. Pour into the prepared pan. Score into squares with a knife then set aside until firm, about 5 minutes. Cut into squares and serve or store in an airtight container in the refrigerator.

- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the sweet potato cubes, cover, and steam until just tender, 15 to 20 minutes depending on thickness. Remove the sweet potato from the steamer and allow to cool. Transfer the cooled sweet potato to a blender. Pour in the orange juice. Cover blender, and puree until smooth. If mixture is too thick, add more orange juice, 1 tablespoon at a time, until the sweet potato is blended.
- Preheat the oven to 350 degrees F (175 degrees C). Line 48 muffin cups with paper muffin liners.
- Beat 1 cup butter, light brown sugar, and white sugar with an electric mixer in a large bowl until light and fluffy. Add the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in 2 teaspoons of vanilla extract with the last egg, then stir in the sweet potato puree and orange zest.
- Sift together the flour, baking powder, cinnamon, ginger, baking soda, and salt in a bowl. Mix the flour mixture into the sweet potato mixture, 1 cup at a time, mixing until just blended. Batter will be thick. Spoon the batter into the prepared muffin tins.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, about 18 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
- To make frosting: Sift the confectioners' sugar into a large bowl; set aside. Heat the brown sugar, heavy cream, and 1/4 cup butter in a saucepan over low heat until sugar dissolves, stirring occasionally. Increase heat to medium high and bring to a boil, stirring constantly. Boil until the brown sugar mixture thickens, about 3 minutes. Remove from heat, then stir in 1/4 teaspoon of vanilla extract. Whisk the brown sugar mixture into the confectioners' sugar until smooth, 1 to 2 minutes. Allow the sugar mixture to cool and thicken before icing the cooled cupcakes.

- Warm 2 cups water over medium heat until it is boiling gently. Measure brown sugar in a dry measuring cup. Pat the sugar in the cup with your finger tips to remove excess air, and then add more sugar to fill the cup. Measure 4 packed cups. Pour the brown sugar into the hot water, and stir with a wooden spoon until all the crystals have dissolved. Remove from heat when the mixture is at a rolling boil or when a candy thermometer reads 247 to 252 degrees F. Transfer the hot sugar solution to a clean glass container, such as a canning jar. Tie one end of a cotton string to the middle of a pencil. Tie a washer to the free end of the string to weigh it down. Dip the string, washer-end first, into the jar of sugar water for five to 10 seconds. Remove the string, and dry it on a piece of parchment paper for two to three days; this creates a layer of starter crystals. Suspend the prepared string in the remaining jarred sugar solution; the pencil balances across the top of the jar and prevents the string from falling into the mix. Do not disturb the jar for seven to 10 days; the candy crystals take longer to form in unstable or humid environments. Remove the candy from the jar. Rinse it for one or two seconds under cool water, and set it on parchment paper to dry.

HOMEMADE CANDY CANE AND BROWN SUGAR EGGNOG RECIPE BY TASTY

- In a mixing bowl, combine the yolks and brown sugar. Whisk well for 5-6 minutes until the mixture has increased in volume and thickened, and a figure "8" can be drawn when lifting up your whisk.
- In a saucepot, add the milk and vanilla then bring up to a barely a simmer. Then, start to slowly add the warmed milk to the yolk and sugar bowl, whisking constantly to avoid scrambling. Continue to temper the mixture until the warm milk and egg mixture has combined, then return everything back to the pot. Then add the nutmeg.
- Cook the mixture on low heat, stirring constantly with a wooden spoon (making sure that no bits begin to stick or scramble to the bottom). Continue to cook slowly and gently until the mixture slightly thickens and coats the back of your spoon. Strain into a bowl (to capture any bits that may have scrambled in the process) then stir in ¼ cup of the ground candy cane. Transfer to a resealable plastic container, then place in the fridge to chill completely.
- When ready to serve, wet a paper towel then swipe the rims of each glass. Dip the glass into some more of the candy cane powder to create a festive rim. Fill each glass with some eggnog, then top with fresh whipped cream and some extra grated nutmeg.

- Pre-heat oven to 350 degrees.
- Slice bacon into 1/2 inch strips and dredge in brown sugar until thoroughly coated.
- Crumple aluminum foil to allow for grease drainage and place it on a baking sheet. Lay out the bacon on this making sure not to overlap pieces.
- Bake until crispy. Allow to cool and harden before serving.
