BROILED ZUCCHINI
This is a very simple yet tasty side dish. It is a Semi-cooked hot vegetable that gives a totally different taste and texture to cooked zucchini. I created this dish years ago because I did not care for the taste and texture of soft cooked zucchini. This has been a family favorite ever since. I am giving the ingredients for one serving and you can simply multiply it for the number you wish to make.

Steps:
- Wash off zucchini, cut off ends and split lengthwise.
- Lay the split pieces of zucchini cut side up in a lightly greased baking dish.
- Pour over the butter or oil.
- Sprinkle the cheese evenly over the cut edge.
- Sprinkle with spices.
- Broil just until the zucchini slices get a lovely light brown on the top.
- Remove from the broiler, it will be cooked ala-dente' with about half of the crunch still in it.
- It is easiest to eat with a sharp knife handy to cut into small chunks for each bite -- but make sure you get some of the spices and cheese with each bite -- hm-m-m-m.
BROILED BABY ZUCCHINI BOATS WITH PARMESAN CRUST

- Preheat the broiler. Melt the butter in a large cast-iron skillet or something similar with an ovenproof handle. Add the garlic and sauté over medium-low heat for about 30 seconds, being careful to let the garlic brown.
- Place the zucchini halves facedown in the garlic butter and sprinkle lightly with salt and pepper. Sauté over medium high heat for about 5 minutes, or until the zucchini are just slightly tender when poked with a fork.
- Turn the zucchini over, and sprinkle generously with parmesan. (Don't worry if the parmesan spills into the pan. It will melt into additional, delicious crust.) Cook for just a minute or two longer, then transfer the skillet to the broiler.
- Broil for about 3 to 5 minutes, or until the cheese is melted and golden brown. Serve hot, and don't forget to scrape up the spilled parmesan from the bottom of the pan.

- 1. par boil the potatoes over medium high heat till just tender - about 5-6 minutes. set aside to cool
- 2. heat oil in a medium saucepan over medium heat, add garlic, rosemary, thyme and oregano, Add the zucchini, onion, and potatoes and saute till light golden brown - (about 12 minutes or so) tossing gently to make sure all the veggies get coated with the herbs
- 3. preheat the broiler, and line a baking sheet with foil. Spread the vegetables out and sprinkle with salt,cracked black pepper, and parmesean cheese and put under the broiler about 4 minutes or till cheese is golden and bubbly. Enjoy!
- 4. * if you want a little extra "flavor" you can substitute butter for the olive oil. My husband and I love it both ways.
BROILED BABY ZUCCHINI WITH PARMESAN

- Preheat the oven to 475°F.
- Wash and dry the zucchini, trimming the blossom and stem ends slightly if necessary. Quarter each zucchini lengthwise; if they are less than 3/4 inch in diameter, cut them in half instead. In a medium bowl, toss the zucchini with the oil and season with salt and pepper. Lay them out on a baking sheet, end to end, cut sides up, in a tight row. Roast for about 8 minutes or until they are just starting to color but are still al dente, or half tender. Remove from the oven.

- Prepare a 9 x 13 inch pan by greasing it.
- Preheat oven to 350 degrees.
- To make cake, beat eggs, oil, honey and brown sugar tog.
- Mix dry ingredients (baking powder, salt, flour, buckwheat flour and cocoa) and set aside.
- Mix tog buttermilk and soda and set aside.
- Add zucchini to egg mixture, then add 1/3 of the flour mixture.
- Mix the remaining flour mixture and buttermilk alternately into the egg mixture.
- Add almond flavoring.
- After this is all mixed tog well, pour into prepared cake pan.
- Bake at 350 degF for 35- 40 minutes, testing with a tooth pick to see if done, especially in the middle or in the cracks.
- While the cake is baking, prepare the topping by melting the butter, then add brown sugar and milk.
- After the cake is done remove from oven and spread 1/2 of the topping mixture over the cake, making sure all the cake has topping on it, then sprinkle the sliced almonds over the cake evenly and to taste.
- Drizzle the remaining syrup of the almonds on the cake and return to oven.
- Broil the cake until it is nicely browned,watching not to burn the topping.
- Can be served warm or cold.
- Top each serving with some whipped topping, like whipped cream, to taste.
- Enjoy!
