- Preheat the oven to 325°. In a Dutch oven, heat the butter over medium-high heat. Add onion; cook and stir until tender, 2-3 minutes. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cheese and salt until cheese is melted., Remove from heat. Gradually whisk in eggs. Stir in vegetable blend. Transfer to a greased 8-in.-square baking dish. Bake, uncovered, until set, 50-60 minutes. Let stand 10 minutes before serving.

- Cover the cauliflower in cold water, add the stock cube, then bring up to the boil. Add the broccoli and cook for 1 min, then drain (reserving some of the stock) and allow to steam-dry for 1-2 mins. (The veg shouldn't be tender.)
- Heat oven to 200C/180C fan/gas 6. Mix together the crème fraîche, mustard, wine (if using), nutmeg and some seasoning. Add the veg and mix well. Tip into an ovenproof dish, scatter with the breadcrumbs and bake for 30 mins until golden and crisp on the top.

- Steam broccoli and cauliflower until crisp-tender (it will cook a bit in the dish). Drain.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
- Bring a large pot of lightly salted water to a boil. Add broccoli and cauliflower. Cook, uncovered, until tender, 3 to 4 minutes. Drain in a colander and rinse under cold running water. Transfer to the prepared casserole dish, making sure vegetables are evenly distributed.
- Beat eggs in a bowl. Mix in cream of mushroom soup, 1/2 cup of Cheddar cheese, mayonnaise, and onion. Pour evenly over vegetables in the casserole dish. - In a small bowl, combine bread crumbs, cheese, parsley, 1 tbs oil, and garlic. Set aside.
- Heat remaining tbs of oil in large skillet and cook broccoli/cauliflower 2 minutes, stirring frequently.
- Blend soup mix with water and pour into skillet with broccoli.
- Bring to boil and reduce heat to low.
- Simmer uncovered, stirring occasionally, 8 minutes or until broccoli is almost tender. Add tomato and simmer 2 more minutes.

- Combine frozen cauliflower and broccoli with water in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 0 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Remove vegetables with a slotted spoon to the prepared baking pan. Dump out any remaining water from the pot.

- In a medium saucepan with enough water to cover, boil cauliflower and broccoli until tender, about 10 minutes. Drain, and transfer to a medium baking dish.

- 1. Prepare your vegetables - either by steaming or boiling in salted water. Only cook until tender as they will cook more in oven and you don't want mushy vegetables. In a medium saucepan melt your butter over medium heat. Whisk into the butter your flour and cook for at least a minute, stirring continuously. Whisk in the milk and stir until thickened.
- 2. Remove from heat and stir in the salt, pepper, chives, nutmeg and cheeses. Stir until cheese is melted. Preheat oven to 375 degree F.

VEGAN CAULIFLOWER AND BROCCOLI BAKE

- Parboil the broccoli and about a third of the cauliflower for 5 minutes, so they still have some bite. Drain and set aside.
- Boil the rest of the cauliflower (can do this at the same time and just remove the veg for step 1 first) until very soft, 10 minutes.
- Place the cauliflower in a blender and add the milk gradually, until you have the desired texture. 300 ml will give a thick puree consistency when baked. Add the flavourings and any other herbs or spices you would like.
- Stir through the veg from step 1 and transfer to a dish. Place the thinly sliced tomatoes and seeds on top, and bake in a preheated oven for 30 minutes at 200C.
