CREAMY POTATO AND CORN SOUP



Creamy Potato and Corn Soup image

This soup is easy to prep and delicious to eat. It only takes 5 minutes to prep and then you can throw it in the slow cooker to let it cook and simmer.Recipe courtesy of McCormick.

1 pound frozen diced hash brown potatoes
3 cup kitchen basics® all natural original chicken stock
8 ounce cream cheese, cubed
1 tablespoon mccormick® himalayan pink salt with black pepper and garlic all purpose seasoning
16 ounce frozen whole kernel corn
1/2 cup shredded cheddar cheese

Steps:

  • Mix potatoes, stock, cream cheese and Seasoning in 6-quart slow cooker.
  • Cover the slow cooker.
  • Cook 8 hours on LOW or 4 hours on HIGH, stirring in corn during the last 15 minutes of cooking.
  • Stir in shredded cheese until smooth.
  • Ladle into soup bowls.
  • Garnish with additional shredded cheese, sliced green onions and crumbled bacon, if desired.

This soup is so easy to throw together.I use the exprss potatoes.. Easy... We have a sandwich with our soup. Soo yummo.. Taste even better next day and the next..lol... I made this up because I wanted a large amount. You can sprinkle some bacon bits on top for added touch. I like using the creamed corn. You get smaller corn in stead the big chunks.. plus help it be more creamy..

2 package(s) pak. simply potatos with onion as seen in picture below
2 package(s) 32.oz. chicken broth
1 can(s) campells cream potato soup
1 can(s) 15 oz. creamed corn
4 - chicken bouillon cubes
- salt and pepper to taste
3 tablespoon(s) flour
1 cup(s) half and half
2 cup(s) cheese, shredded

Steps:

  • In crockpot Add first five things . I was using a 6 quart crockpot.
  • Stir all things together as seen in picture.
  • Cook on low for about six hours. Then on seventh hour put on High. Mix flour and half and half... Then slowly add to soup... Stir,, dont worry if few lumps... they will cook down.. Stir few times threw last hour... Then add cheese and let it melt and stir..... pooof... sooo yummy and creamy..
  • OH yes.. dont froget the Bacon..lol.. if you choose..

4 potatoes, peeled and quartered
1 (14 ounce) can whole kernel corn
½ cup chopped onion
2 tablespoons butter
1 tablespoon beef base
1 teaspoon salt
¼ teaspoon red pepper flakes
⅛ teaspoon ground black pepper
water, as needed

Steps:

  • Combine potatoes, corn, onion, butter, beef base, salt, red pepper flakes, and black pepper in a saucepan. Pour enough water over the mixture to cover by 2 inches.
  • Bring the soup to a boil, reduce heat to medium-low, and simmer until the potatoes are soft, about 20 minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

6 slices bacon, cut into 1/2 inch pieces
1 onion, finely chopped
2 (10.5 ounce) cans condensed chicken broth
2 cups water
5 large potatoes, diced
½ teaspoon salt
½ teaspoon dried dill weed
½ teaspoon ground white pepper
½ cup all-purpose flour
2 cups half-and-half cream
1 (12 fluid ounce) can evaporated milk

Steps:

  • Place bacon and onion in a large, deep skillet. Cook over medium-high heat until bacon is evenly brown and onions are soft. Drain off excess grease.
  • Transfer the bacon and onion to a slow cooker, and stir in chicken broth, water, potatoes, salt, dill weed, and white pepper. Cover, and cook on Low 6 to 7 hours, stirring occasionally.
  • In a small bowl, whisk together the flour and half-and-half. Stir into the soup along with the evaporated milk. Cover, and cook another 30 minutes before serving.

Every Monday is Soup Day at my house. I had some potatoes I needed to use up so this soup was born. I really like meals that I can use what's on hand. This is nothing fancy just a tasty easy soup.

2 (15 ounce) cans creamed corn
2 (14 ounce) cans chicken broth (low sodium)
1 (10 ounce) can sweet corn
4 potatoes, skinned and cut into small dice
1 small onion, chopped
1 stalk celery, chopped
1/2 green pepper, chopped
1 teaspoon sugar
1 tablespoon olive oil
1/4 cup heavy whipping cream
3 slices bacon, chopped and cooked

Steps:

  • Saute onion, celery, and bell pepper to translucent in the olive oil.
  • Pour all ingredients except heavy cream and whole corn into crock pot.
  • Cook on high for 4 hours.
  • Blend 1/2 the ingredients in blender and pour back into crockpot.
  • Add Heavy cream and whole sweet corn.
  • Let warm for about 30 minutes.
  • Serve and Enjoy.
  • I will sometimes add cheese and or sour cream when serving if anyone.
