This Italian Breakfast Casserole has layers of salami, ham, eggs and cheese for the perfect breakfast, lunch, or even dinner! This recipe is a family favorite waiting to be discovered.

Steps:
- Preheat oven to 350 degrees F. Generously coat a 9×13 baking dish with nonstick cooking spray.
- Add olive oil to a large skillet over high heat. When it just starts to smoke, carefully add bell peppers and onions and cook, stirring occasionally, until they are soft and slightly blackened around the edges. Remove to a plate and set aside.
- In the prepared dish, layer crescent rolls, ham, and salami. Beat the eggs with the salt and pepper and pour on top. Top with peppers and onions and cheese.
- Bake at 350 for 30 minutes.

ITALIAN SAUSAGE BREAKFAST CASSEROLE
Steps:
- Preheat oven to 350°F and spray an 8 x 8-inch baking dish with some non-stick cooking spray.
- Set a large skillet over medium heat and add the sausage. Cook until slightly browned, breaking up the sausage with a wooden spoon as it cooks, approximately 3-4 minutes.
- Add the onion and potato and season with salt and black pepper, to taste. Cook, stirring occasionally, until the onion softens and the potatoes become golden brown, approximately 6-7 minutes.
- In the meantime, whisk the eggs and whole milk in a small bowl and season with salt and black pepper, to taste. Add one-half cup cheddar cheese and stir to combine.
- Transfer the sausage-potato mixture into the prepared baking dish and stir in the diced broccoli. Spread into an even layer and pour the egg mixture evenly over the top. Sprinkle remaining cheese across the top.
- Place in the pre-heated oven and bake until the eggs are set and the potatoes are cooked through, around 30-35 minutes.
- Remove from oven and cool for several minutes before slicing. Top with fresh chives and serve immediately. Enjoy!

Toasting the croissants before building the casserole adds caramelized notes that can stand up to the bits of browned sausage, sage and melted Gruyère strewn throughout. - Heat oven to 500 degrees. Spread croissants on a large baking sheet and toast, cut side up, until golden brown, 5 to 10 minutes (watch carefully to see that they do not burn). Let cool, then tear into large bite-size pieces.
- In a medium skillet over medium-high heat, warm the olive oil. Add sliced scallions and sausage meat; cook, breaking up meat with a fork, until mixture is well browned, about 5 minutes. Stir in sage, and remove from heat.
- In a large bowl, toss together croissants and sausage mixture. In a separate bowl, whisk together eggs, milk, cream, 1 1/2 cups cheese, salt and pepper.
- Lightly oil a 9- x 13-inch baking dish. Turn croissant mixture into pan, spreading it out evenly over the bottom. Pour custard into pan, pressing croissants down gently to help absorb the liquid. Cover pan with plastic wrap and refrigerate at least 4 hours or overnight.
- When you're ready to bake the casserole, heat oven to 350 degrees. Scatter the remaining grated cheese over the top of the casserole. Transfer to oven and bake until casserole is golden brown and firm to the touch, 45 minutes. Let stand 10 minutes. Garnish with sliced scallion tops before serving.

- Preheat oven to 350°; in a skillet over medium heat, cook pancetta until crisp, about 5 minutes.
- Remove to a plate, leaving 2 tablespoons drippings in pan (add oil if necessary).
- To pan, add onion, bell pepper, mushrooms, and garlic; stir/saute 6-7 minutes, until tender; return pancetta to skillet.
- In a bowl, whisk eggs, milk, flour, parsley, basil, oregano, salt, and pepper together.
- Add pancetta/vegetable mixture to eggs; fold in mozzarella.
- Pour mixture into a lightly oiled 13x9 inch baking dish.
- Sprinkle with parmesan cheese.
- Bake, about 40 minutes, until set; let stand for 10 minutes.
- Cut into squares and serve.
