1 tablespoon Russian salad dressing
1/2 lb smoked meat, shaved
1/2 cup sauerkraut
2 slices gouda cheese

Steps:

  • Heat sauerkraut;drain juice; set aside.
  • Microwave the meat;drain juice; set aside.
  • Toast rye bead. Spread with Russian dressing.
  • Top with warm meat, sauerkraut and cover with swiss cheese.
  • Put under broiler until cheese is melted.

In this Midwestern take on a banh mi, we've sandwiched as many up-and-coming food trends as we could manage without violating good taste. We stuffed vegetables, wood flavor, bitterness, real fast food and the Midwest (represented by fried pork, wood-smoked Braunschweiger liverwurst and caraway) into a grand banh mi mash-up. Now if only we could nab it from a passing dim sum cart in a gastropub, our year would be close to complete. If 2014 tastes anything like this sandwich, it'll be an adventuresome and comforting year ahead.

1 cup cauliflower florets
1/2 cup white wine vinegar
1 tablespoon sugar
1 1/2 teaspoons caraway seeds, lightly crushed
1/4 teaspoon kosher salt
1 small carrot, thinly sliced
1 tablespoon Asian fish sauce
1 teaspoon fresh lemon juice
1 teaspoon red wine vinegar
1/4 teaspoon sugar
1 small clove garlic, finely grated
1/2 small jalapeno, seeded and thinly sliced
4 thin boneless pork cutlets (about 8 ounces total), pounded to 1/4-inch thick
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
1 large egg, lightly beaten
1/2 cup breadcrumbs
3 tablespoons vegetable oil
Two 12-inch baguettes
Mayonnaise, such as Kewpie, for serving
Spicy brown mustard, for serving
1/2 pound braunschweiger liverwurst
1/2 English cucumber, sliced
1/4 red onion, thinly sliced
1 small bunch watercress
1 cup loosely-packed fresh cilantro leaves with tender stems
Sriracha, for serving

Steps:

  • For the caraway pickled cauliflower: Cut the florets into 1/4-inch-thick slices. It's alright if the pieces break apart. Combine the vinegar, sugar, caraway seeds, 1/3 cup water and 1/4 teaspoon salt in a small saucepan. Bring to a boil, whisking until the sugar dissolves. Remove from the heat, add the cauliflower and carrot and stir. Allow to cool to room temperature. Transfer to a small bowl, cover and refrigerate at least 1 hour and up to 1 day.
  • For the garlic fish sauce: Whisk together the fish sauce, lemon juice, vinegar, sugar, garlic, jalapeno and 2 teaspoons water in a small bowl. Cover and refrigerate until ready to serve.
  • Preheat the oven to 300 degrees F.
  • For the fried pork cutlets: Lightly sprinkle the cutlets on both sides with salt and pepper. Place the flour, egg and breadcrumbs in three separate shallow bowls. Dredge each cutlet in the flour, dusting off any excess. Then dip in the egg and, finally, coat with the breadcrumbs. Heat 2 tablespoons of the oil in a medium nonstick skillet over medium-high heat. Once the oil shimmers, fry two cutlets until browned, crispy and cooked through, 1 to 2 minutes per side. Drain on paper towels. Add the remaining tablespoon oil to the pan and repeat with the remaining cutlets.
  • For the sandwiches: Trim and discard the bread heels from the baguettes. Halve each so you have a total of four 6-inch pieces. Split each piece lengthwise about 3/4 of the way and press it open like a book. Generously spread the top halves with mayonnaise and the bottom halves with mustard and liverwurst. Arrange the baguettes on a baking sheet and bake until warm, 3 to 4 minutes.
  • Top the bottom half of each baguette with a pork cutlet (halve the cutlets for fit, if necessary) and some of the cucumber, onion, caraway-pickled cauliflower, watercress and cilantro. Top each with a drizzle of garlic fish sauce and a squirt of Sriracha and serve.

2 tablespoons butter
8 slices rye bread
8 slices deli sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained
½ cup Thousand Island dressing

Steps:

  • Preheat a large skillet or griddle on medium heat.
  • Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.
  • Grill sandwiches until both sides are golden brown, about 5 minutes per side. Serve hot.

Started by my mom when I was very young, this sandwich has been a tradition for years on family camping trips. My children and grandchild now insist I make them on all our camping trips. Each person assembles their own sandwich just how they like it, with or without sauerkraut, extra cheese, or any way in-between. Use a permanent marker to label the packets. You'll never want another Reuben that isn't made over a campfire!

8 slices pumpernickel bread
1 cup Thousand Island dressing
¾ pound deli sliced corned beef
½ pound sliced Swiss cheese
1 cup sauerkraut

Steps:

  • Preheat a grill for low heat.
  • Cut 4 large squares of aluminum foil. Place 2 slices of bread side-by-side on each piece of foil. Spread the bread slices with Thousand Island dressing. 8 slices swiss cheese

2 Tbsp. CLAUSSEN Sauerkraut, drained
2 tsp. soft margarine

Steps:

  • Spread one side of each bread slice with dressing. Top 1 of the bread slices with cheese, braunschweiger and sauerkraut; cover with remaining bread slice.
