- Press pizza dough onto a lightly greased 14-in. round pizza pan. Bake at 450° for 4 minutes; set aside. , In a large skillet, cook the sausage, onion, 1 teaspoon fennel seed, oregano, basil and garlic until the sausage is no longer pink and onion is tender; drain. , Sprinkle crust with 1/2 cup mozzarella cheese. Spread with pizza sauce, sausage mixture, tomatoes, sauerkraut and remaining fennel seed and mozzarella. Sprinkle with Parmesan cheese. , Bake at 450° for 18-20 minutes or until golden brown and bubbly. Let stand for 5 minutes before cutting.

Quick Bratwurst Pizza is a super quick and yummy way to use up those leftover brats. Made in a flash with naan bread, a creamy mustard sauce, sauerkraut, red onions, sliced leftover brats and Swiss cheese! If you have 5 minutes to prep this, and 10 minutes to bake this, you will have dinner ready in no time!

- Preheat oven to 400°F.
- Mix mayonnaise, deli mustard and salt and pepper.
- Spread creamy mustard onto the naan flatbread.
- Top flatbread with sauerkraut, red onions, sliced bratwurst and Swiss cheese.
- Cook on a pizza stone in the oven for 8 minutes.
- Change oven setting to broil, place pizza on the top rack and broil for 1-2 minutes, or until the top of pizza gets a little bubbly and brown. Make sure to watch it closely so it doesn't burn.

BRATWURST STEWED WITH SAUERKRAUT
Wisconsin may be the cheese state, but bratwurst (ground meat sausages that are grilled, or in this case, pan-fried) are the state's culinary claim to fame. Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. (Madison, Wisconsin is home to an annual "Brat Fest") Michael Symon's simple recipe calls for the links to be cooked with onions, garlic and tangy sauerkraut and then served on a baguette.

- In a large pan, heat oil over high heat. Brown bratwurst in oil and reduce heat to medium. Add onions and garlic and cook until lightly caramelized. Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes. Remove from heat and stir in fresh dill. Serve on baguette.

The first time I had this... I hesitated to try it.... well not anymore! Since then... I am first in line!!! lol This is one of my favorite pizzas! There is a place in town that makes them... and I order it when I go there.... can't get it often enough!

- 1. Preheat oven to 425 degrees.
- 2. Prepare your pizza crusts and put on pizza pans or baking sheets.
- 3. Choose what kind of sauce you want, and spread it onto the crust. "Fluff UP" the prepared sauerkraut, sprinkle evently over the two pizza crusts. Evenly distribute the brat coins on top of the sauerkraut layer. Sprinkle the cheeses over the pizzas.
- 4. Bake for 18 minutes or until the cheeses are melted, and browned slightly. Remove from oven, cut into wedges or squares... serve!
- 5. *** You can either bake both pizzas now... or bake one and freeze one... I bake both right away and have left overs during the week.
SAUERKRAUT PIZZA
One word " Delicious " I found this recipe in my local newspaper last year and made this New Years eve..my husband loved it.. You can use Sausage or Kielbasi..I used Kielbasi and I used Barvarian Kraut..soooo good! Enjoy!

- 5. Sprinkle with Parmesan cheese. Bake for 18-20 minutes. Let stand for 5 minutes before cutting.
CHICKEN PARMESAN BURGERS
Steps:
- In a large skillet, heat 1 tablespoon oil over medium-high heat. Add onion; cook and stir until tender, about 3 minutes. Add garlic; cook 1 minute longer. Remove from heat; cool slightly., In a large bowl, combine 1/4 cup marinara sauce, chopped mozzarella cheese, bread crumbs, seasonings and onion mixture. Add chicken; mix lightly but thoroughly. With wet hands, shape into four 1/2-in.-thick patties., In the same skillet, heat remaining 2 tablespoons oil over medium heat. Cook burgers until a thermometer reads 165°, 4-5 minutes on each side. Top with sliced mozzarella cheese; cook, covered, until cheese is melted, 1-2 minutes., Serve in buns; top with remaining 1/2 cup marinara sauce, Parmesan cheese and, if desired, basil leaves.

- Preheat oven to 450. Saute' sausage with the onion, 1/2 teaspoon fennel seed, oregano, basil and garlic. On the pizza crust spread a thin layer of mozzarella and a layer remaining items in this order, pizza sauce,sausage, diced tomatoes and kraut.
- Sprinkle remaining fennel seed over kraut, top with remaining mozzarella and sprinkle with parmeasan. Salt and pepper to taste. Bake for 18 to 20 minutes.

- Preheat oven to 425 degrees F. Heat oil in heavy large skillet over medium-high heat. Add onion and caraway seeds and sauté until onion just begins to brown, about 7 minutes. Transfer onion mixture to large bowl. Mix in sauerkraut and 1 tablespoon sauerkraut juice. Cool to lukewarm, then mix in cheese. Season generously with pepper.
- Place pizza crust on baking sheet. Spread with Dijon mustard and top with sausage, then sauerkraut mixture.
- Bake pizza until cheese melts, topping begins to brown and crust is crisp, about 15 minutes. Transfer pizza to work surface; cut into wedges and serve.
