BRAISED LETTUCE WITH PEAS

- Melt the butter in a large sauté pan with a lid. Fry the onion gently for about 5 mins, until softened. Meanwhile, pull any damaged or coarse outer leaves from the lettuces and trim the bases. Cut the lettuces in half lengthways, through the base.
- Place the lettuce cut-side up on top of the onions and cook for half a minute, then turn over and cook for another 30 secs. Pour over the stock and lightly season. Put the lid on the pan, reduce the heat to the minimum and cook for 10 mins.
- With a slotted spoon, lift the lettuces out and put into a sieve over a bowl. Raise the heat under the pan and boil the juices until reduced by half. Add the cream or crème fraîche and petits pois and boil for 1 min until heated through. Arrange lettuces in a serving dish and pour over the pea-and-cream sauce.

- Melt butter in a large wide saucepan over medium-low heat. Cook leeks, partially covered and stirring occasionally, until tender but not browned, 5-7 minutes. Season with 1 tsp. salt and 1/2 tsp. pepper, then pour in wine. Increase heat to medium-high and continue to cook, stirring occasionally, until wine is reduced by half, 1-2 minutes. Add lettuce, peas, and 1 cup water. Partially cover pan and bring liquid to a simmer. Reduce heat to medium-low to maintain a gentle simmer and cook, stirring occasionally, until lettuce and peas are tender, about 5 minutes.
- Remove from heat, then stir in chives, mint, and lemon zest; season with salt and pepper. Transfer to a platter. Top with pistachios.

- Heat oil in a medium frying pan over medium-high heat. When it shimmers, add shallots, season with salt and freshly ground black pepper, and cook until golden brown, about 2 minutes. - Slowly heat the butter(he says a nob of butter not a TB) and a good glug of olive oil in a pan.
- Add the flour and stir around.
- Slowly add the stock.
- Turn up the heat and add the spring onions, peas and lettuce with a pinch of salt and pepper.
- Put the lid on and simmer for five minutes or until tender.
- Salt and pepper to taste, squeeze in a bit of lemon juice, and drizzle with oil. Serve!

BRAISED ROMAINE LETTUCE WITH MUSTARD AND BACON

- Brown the bacon in the olive oil in a large skillet over medium heat. Remove the bacon from the pan and drain on a paper towel-lined plate. Place the romaine halves in the same pan, cut-side down, and brown in the rendered bacon fat, turning as needed until wilted, about 4 to 6 minutes. Remove the lettuce to the plate with the bacon. Add the wine to the skillet and use a wooden spoon to scrape up any browned bits that cling to the pan. Add the broth, thyme, and mustard and bring to a simmer. Return the lettuce to the skillet, and season with salt and pepper. Bring the liquid to a boil over high heat, and then adjust heat to maintain a gentle simmer. BRAISED LETTUCE ON ANCHOVY TOAST

- Remove the outer leaves from the romaine, saving them for soup. Trim the stem, leaving it intact and leaves connected. Cut the head into 6 thin wedges, each wedge connected at the core/stem.
- Make anchovy butter by pounding the anchovies to a paste with the garlic paste, then mashing in 4 tablespoons butter. Combine well.
- Toast the bread.
- Warm a pan large enough to fit all of the lettuce wedges. Add remaining butter. Once it has melted, add the stock, and fit the romaine wedges closely into the pan in a single layer. Salt lightly. Cook over medium heat for about 2 minutes, and turn all the wedges to another side. Salt again, and scatter with lemon zest. Continue to cook, turning once or twice more, until the liquid in the pan is absorbed and the lettuce is very wilted on the leaf end and tender on the stem end. Turn off heat.
- In the pan or on a cutting board, cut each wedge once or twice horizontally.
- Spread each piece of toast thickly with anchovy butter, then top with the sections of a wedge of lettuce. Sprinkle each lightly with salt again, if desired. Serve hot.

PORK LOIN CURED IN SPICED APPLE CIDER WITH RICOTTA GNOCCHI, BRAISED LETTUCE, AND CORN

- For the brine: Combine all the ingredients for the brine in a large non-reactive pot. Bring to a simmer and remove from heat. Allow to steep for 30 minutes, then cool in an ice bath. Place the pork loin in a container large enough to submerge it and pour the cooled brine over the pork. Make sure the entire loin is submerged, use a heavy plate, if necessary. Cover the container and place in the refrigerator at least 24 hours and up to 48 hours to cure.
- Remove the pork from the brine, discard liquid. Dry the pork loin with a cloth and cut the loin into 8 (8-ounce) fillets. (You may alternately roast the entire loin whole, then slice medallions for presentation.)
- For the braised lettuce: Cut the lettuce through the core into 16 wedges, reserve. Blanch the corn in salted water until tender, then cool and drain, reserve. Cook the apples over medium heat with a tablespoon of butter in a skillet until beginning to brown. Cool and reserve.
- In a large heavy bottomed skillet, large enough to hold all the pork loins (or 2 smaller pans), heat the vegetable oil over medium heat. Season the pork with salt. Saute the pork fillets about 7 minutes each side for medium.
- For the gnocchi: Meanwhile prepare the sauce. Have a pot of salted boiling water ready for the gnocchi. In a large skillet, melt the butter over medium high heat. Add the lettuce quarters in batches with a pinch of salt and brown on both sides. Remove from the pan. Repeat until all the lettuce is browned. Return all the lettuce quarters to the pan, and over medium high heat, deglaze the pan with the white wine and apple cider. Reduce to a glaze. Add the pork stock and corn kernels and bring to a simmer. Mount the sauce with the remaining butter, add the chopped thyme, adjust seasoning, and reserve warm.
- Cook the gnocchi until they float, then transfer them to the sauce to coat. Divide the lettuce, corn, gnocchi, and sauce among 8 large bowls. Top each with a pork fillet.
BRAISED LETTUCE

- Trim about 1/2 inch of stem and many outer leaves from lettuce heads, leaving tight, fairly firm centers about the size of large lemons. Reserve about 15 unbruised outer leaves. Rinse lettuce heads and leaves, and shake lightly to remove excess water.
- Grease bottom and sides of a heavy 3-quart casserole with 1 tablespoon butter. Line casserole bottom and sides with outer leaves. Place trimmed heads standing up snugly in casserole. Dot with remaining butter, season with salt and pepper, cover and place over very low heat until lettuce is tender when poked in center with a small knife, about 1 hour. Swirl casserole from time to time to keep butter emulsified.
- Remove lettuce to a serving dish. Discard loose leaves. Swirl sauce in pan, whisk in lemon juice, check seasoning and spoon sauce over lettuce. Serve.

RACK OF LAMB, MINT BEARNAISE AND BRAISED PEAS AND LETTUCE
Steps:
- Bearnaise: Put all ingredients exceptthe egg yolks and butter in a small saucepan and simmer until reduced by half, this will take only 1-2 minutesStrain liquid into a bowl and discard the solids Place the egg yolks and vinegar reduction into a food processor, and process until light and frothy. With the motor running, slowly drizzle in the hot butter to make a thick sauce. Add mint, season well and process again. Tip into bowl, cover and keep warm until ready to serve. Lamb: Preheat oven to 200c. Heat an ovenproof saute pan with a little olive oil. Season the lamb and quickly brown on both sides. Roast 7 mins, turn the racks over and roast for a further 7 mins for medium rare lamb. Cooking time will depend on the size of the lamb rack. Transfer to a plate, cover loosley and rest for 5 mins. Braised peas: Melt the butter in a saucepan and cook the bacon, onion and garlic with a pinch of salt , until the onion is tender. Add the peas, lettuce, wine and stock and bring to the boil. Simmer until the peas are cooked. Add mint just before serving. To serve: Slice the lamb into cutlets. Divide the peas and the lettuce between shallow serving plates and top each one with four lamb cutlets and a spoonful of mint Bearnaise.
BRAISED LETTUCE
Steps:
- In a large saucepan of boiling salted water, blanch lettuce for 3 minutes and refresh. Drain gently, squeeze dry. Slice each head in half lengthwise. Sprinkle with salt and pepper. Fold in half crosswise and shape with your hands to make fat triangles.
- Preheat oven to 350 degrees F and set rack in lower third of oven.
- In a casserole, cook the scallion and carrot in the butter until tender but not browned. Arrange the lettuce in the casserole, and spoon the vegetables over the lettuce.
- Pour in enough liquid barely to cover the lettuce. Add the thyme and bay leaf. Bring to a simmer on top of the stove. Place the buttered paper over the lettuce to cover the casserole.
- Place casserole in center of preheated oven. Regulate heat so lettuce simmers slowly for 1 hour. Remove the lettuce to a serving dish and keep it warm. Quickly boil down the braising liquid until it has reduced to a syrup (about 1/2 cup).
- Sprinkle with parsley and serve.
BRAISED LETTUCE
This is so yummy! For anyone who likes wilted lettuce, you have to try this. I don't remember where I got the recipe but it's not my own.

- 1. Pull away and discard any tatty leaves, then cut each lettuce into quarters. Wash under cold, running water to remove any grit. Melt the butter in a heavy-based pan which has a lid. Add the diced bacon and leave to stew for 5 minutes or so over medium heat. Trim, wash and cut the leeks into short pieces, add them to the pan and continue cooking, stirring now and again, till they start to soften.
- 2. Add the peas, the lettuce, the stock, a seasoning of salt and black pepper and bring the liquid to a boil. Turn it down as soon as it starts to bubble furiously, then cover the pan with the lid. Simmer for 20 minutes, by which time the lettuce will have sunk to four silky mounds and the liquid will have almost cooked away. Lift out the lettuce, peas,and bacon with a draining spoon and place on a serving dish. If there is more than a ladleful of liquid left in the pan, turn up the heat and boil furiously to reduce a little, check the seasoning then pour over the lettuce.
