BOWTIES WITH ITALIAN SAUSAGE IN A CREAM BASIL SAUCE

3 cups bowtie pasta
1 19 oz pkg Johnsonville® Sweet Italian Sausage (casings removed)
2 Tbsp. olive oil
1/2 tsp red pepper flakes
1/2 cup diced onion
3 cloves garlic, minced
1 1/2 cups fresh tomatoes, chopped or 28 oz. plum tomatoes (Italian style, drained and coarsely chopped)
1 1/2 cups cight cream
1/2 tsp salt
1/4 cup grated parmesan cheese
1/2 cup chopped fresh basil
*garnish w/ a sprinkle of fresh basil or shaved parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta for 8-10 minutes, or until al dente, drain and rinse with cold water. Set aside.
  • In a large skillet, heat oil over medium heat. Add decased sausage to skillet and crumble with a wooden spoon as it cooks. Add red pepper flakes and continue sauteing until sausage is no longer pink. Add onion and garlic to skillet and continue until onion softens. Stir in tomatoes and salt, (if using fresh tomatoes saute them for 3 minutes until softened) then add light cream and parmesan cheese; simmer gently until mixture thickens (about 5 minutes). Stir in the cooked pasta and basil and heat through, about 3 minutes.

16 ounces bow tie pasta ((farfalle) save ½ cup pasta water )
2 ¼ cups light cream
1 ½ cups chicken broth (not reduced sodium)
1 ½ tablespoons cornstarch
1 ½ tablespoons butter
3 cloves garlic (minced)
1 ½ teaspoons Italian seasoning
½ cup oil-packed sundried tomatoes (drained and diced)
1 ½ cups fresh spinach leaves (slightly chopped, or baby spinach)
¾ cup Parmesan cheese (freshly grated, plus extra for garnish)
¼ teaspoon kosher salt and pepper (to taste )

Steps:

  • Combine cream, broth, and cornstarch in a bowl. Set aside.
  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente (firm). Reserve ½ cup pasta water and drain pasta well. Do not rinse.
  • While pasta is cooking, melt butter in a large saucepan over medium-high heat. Add garlic and Italian seasoning and cook just until fragrant, about 1 minute.
  • Stir the broth mixture and add to the saucepan with sundried tomatoes. Simmer for 3 minutes or until slightly thickened.
  • Reduce heat to medium-low and add bow ties, 3 tablespoons of pasta water, spinach, and parmesan cheese. Cook 2-3 minutes or until sauce has thickened and is heated through, adding more pasta water if needed.
  • Season with additional salt and pepper to taste. Garnish with fresh basil and parmesan if desired.

2 tbsp. olive oil
1 lb. mild Italian pork sausage, casing removed
3 cloves garlic, chopped
1 lb. bowtie pasta
3 c. chicken broth
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. ground black pepper
4 c. small broccoli florets (from 1 8-oz. piece of broccoli)
1/2 c. julienned sun-dried tomatoes, drained of oil
1/3 c. heavy cream
1/2 c. grated parmesan cheese, plus more for serving
2 tbsp. fresh lemon juice (from 1 lemon)
Red chili flakes, for serving (optional)

Steps:

  • Heat a large pot over medium-high heat. Add the olive oil, then the sausage. Cook, breaking the sausage into small pieces with a wooden spoon, until it is golden brown and no longer pink, about 6 minutes. With a slotted spoon, remove the sausage to a plate and set aside.
  • Reduce the heat to medium and add the garlic cloves. Cook for 1 minute.
  • Add the pasta, broth, 2 cups of water, oregano, salt, and pepper to the pot and bring to a simmer. Reduce heat to medium or medium low to keep it simmering for 5 minutes, stirring occasionally to prevent sticking.
  • Stir in the broccoli. Cover the pot and let cook until the pasta and broccoli are just tender, about 5 minutes, stirring half-way through.
  • Uncover the pot. Add the sun-dried tomatoes, heavy cream, and reserved sausage. Cook until heated through, about 1 minute.
  • Remove from the heat and stir in the parmesan cheese and lemon juice. Serve topped with more parmesan cheese and red chili flakes, if you like.

2 cloves garlic, peeled
1 medium red pepper
1 small eggplant, cut lengthwise in half (about 1 1/4 lbs)
2 teaspoons olive oil
12 ounces bow tie pasta
4 sun-dried tomatoes
4 ounces mozzarella cheese, but into 1/2 inch dice
1/2 cup heavy cream or 1/2 cup whipping cream
10 medium basil leaves, thinly sliced
1 cup grated parmesan cheese
1/2 cup ricotta cheese

Steps:

  • Heat covered 4 qt saucepan of salted water to boiling.
  • Preheat broiler.
  • Rub garlic, whole red pepper and eggplant halves with oil;place in broiling pan (without rack); place pan in broiler about 4 inches from heat& broil vegs until garlic is lightly browned (about 8 min), skin on pepper is blistered and charred and eggplant is fork tender (about 14 min), turning vegs occasionally& removing them as they are done; do not turn broiler off.
  • Cool vegs and peel off skin from pepper; cut pepper in half& discard seeds& stem; peel eggplant& cut into 1/2 inch dice; place in large bowl.
  • Cook pasta in boiling water.

2 tablespoons olive oil
1 pound sweet Italian sausage, casings removed and crumbled

1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 ½ cups heavy cream
½ teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
