BOLA DE CARNE - PORTUGUESE MEAT PIE
This recipe comes from the book of Traditional Portugese Cooking, which I bought in Lisbon. I have not tried this recipe but am posting it by request. Sorry for the vagueness of the recipe but it's all the information I have! Cooking and serving times are an estimation.

Steps:
- In a large bowl, dilute the yeast with the milk.
- In another bowl, mix the flour, salt and melted margarine.
- Now add this to the diluted yeast, slowly so as not to make any lumps.
- Knead all together.
- Continue kneading as you add the whole eggs, one by one.
- Allow the dough to leaven in a warm place for 2 hours.
- Divide the dough into three parts.
- Roll out each part and cover the bottom of a greased baking tin with one of the parts.
- Cover that with half of the meat.
- Add another piece of pastry and again cover with meat.
- Finish with the last piece of pastry.
- Put in the oven for a short while.
- The book says it should only go in the oven "to give it some consistence".
- Remove and brush the top with the egg-yolk.
- Place it again in a medium hot oven to bake.

INDONESIAN MEAT BALLS (SEMUR DAGING BOLA)

- How to make: 1. Season beef with ground pearl onion, garlic and salt and then ball the ground beef, size depends on however you wish, but for this one I like them to be large, I have big thumbs, so about 2/3 of the thumb is the diameter) 2. Boil the balled beef until the meat is cooked. Set aside the water used for boiling the meat for the broth 3. Ground together some pearl onion, garlic, coriander, and salt, stir fry it in the vegetable oil together with some coarsely chopped tomato 5. Put in the boiled balled beef stir fry together with the spices 6. Add the beef broth to the mix, bring everything to a boil, put in the kecap manis*. I like to add a half cube of beef consome to the mix just to ensure perfection in taste. 7. Let it simmer for 15 minutes. *Unlike other recipes, for this you REALLY need to have the kecap manis. This is one of the dish where this particular sauce cannot be substituted. In desperate alternative, you can use mollases.

- Drain chicken, dust with flour or Bisquick and brown. Place in single layer and baste with sauce Cover and bake 300-325 degrees for 1 1/2 hours Remove cover, baste with juices and cover with pineapple Bake for 1/2 hour more basting three times.

- Mix 2/3 cup flour, 2 teaspoons salt, 1 teaspoon celery salt, 1/2 teaspoon garlic salt, and 1/4 teaspoon nutmeg. Dust the chicken with this mixture and brown in butter.Combine the syrup from 1 large can pineapple slices (you need 1 cup) with 1/2 cup soy sauce and 2 tablespoons sugar.Place chicken in shallow baking dish and pour pineapple soy sauce mixture over it. Cover and bake at 350° for 1 hour. Baste several times. Sauté the pineapple slices in butter.Cook 2 cups rice. Place chicken on a warm platter, surround with rice topped with the pineapple slices.

- In a large bowl, combine the first 7 ingredients. Add pork; mix lightly but thoroughly. Shape mixture into 1-in. balls. In a deep cast-iron or electric skillet, heat oil to 375°. Fry meatballs, a few at a time, until golden brown on all sides, 2-4 minutes. Drain on paper towels. If desired, serve with banana ketchup and garnish with green onions.

A good recipe to use up left over boiled potatoes. This is made with recipe #483248 - you can use any paprika paste you like, though.

- Preheat oven to 390°F.
- Thinly slice boiled potatoes.
- Seed and slice tomatoes.
- Layer potato slices in oven proof casserole dish.
- Thinly spread with paprika paste.
- Combine chopped parsley, garlic and chili with olive oil, season with salt and pepper, add lemon juice.
- Spread half of this mixture over potato layer.
- Layer sliced tomatoes on top of the potatoes, spread with remaining parsley mixture.
- Sprinkle with some additional olive oil and bake at 390 F for about 30 to 40 minutes. Serve warm but not directly from the oven.
