Steps:
- Sift together flour, baking powder, sugar and salt together.
- Make a well in the center of the dry ingredients and pour in milk.
- Add lightly beaten egg yolks.
- Blend together till batter is smooth (add a little more milk if needed to make the batter smooth).
- Fold in fresh blueberries.
- Fold in stiffly beaten egg whites.
- Chill, covered, for 30 minutes.
- Form into fritters by making balls with two spoons dipped into hot water, and deep-fry (375 F) until golden brown.
- Serve with blueberry syrup.
PAN FRIED BLUEBERRY CORN FRITTERS
Much better for you than deep fried fritters. They go well with any fruit--canned with light syrup are good, but I like just fresh fruit as well, especially strawberries.

- Heat oven to 250°F degrees.
- Mix together cornmeal, flour, sugar, and baking powder.
- Combine egg whites, milk and margarine, mix well.
- Pour milk mixture into the dry ingredients, stir until just smooth (do not over mix).
- In a large non stick skillet heat the 2 tbsp oil, heat until quite hot but not smoking.
- Drop in a 1/4 cup of batter for each fritter.
- Cook approx 4-6 minutes on each side.
- Keep warm in the oven covered with foil until you have cooked all the fritters.
- Serve with Blueberries or other fruit.
MINI BLUEBERRY CORN FRITTERS
Light, fluffy, and oh so addictive! They are so quick and easy to make, it's almost dangerous - lol. The blueberry is a great addition to a great little corn fritter. These make a great snack, or breakfast treat with a cup of coffee. I hope you enjoy them as much as I do!

- 1. Heat deep fryer for minis, or oil in a medium skillet for regular fritters.
- 2. In a mixing bowl add flour, salt, baking powder, and sugar.
- 3. In a separate container add milk, oil, and egg. Whisk to combine.
- 4. Pour wet ingredients into dry. Stir until combined.
- 5. Fold in corn and blueberries.
- 6. For minis carefully drop a heaping tablespoon of batter into hot oil. I cook 6 at a time. For regular drop about 1/4 cup scant into skillet, 4 at a time.
- 7. Cook until golden about 2 minutes. Turn and cook until golden and crispy another 2 to 3 minutes.
- 8. Drain and allow to cool 5 minutes before serving.
- 9. Dust with powdered sugar if desired and enjoy!
PEACHY BLUEBERRY FRITTERS
These wonderful fritters were shared with our friends in town, only after I had 2 for myself. They are perfect for breakfast with a cup of coffee. I think they could qualify as a desserts as well. Hope you enjoy!

- 1. Heat oil in deep fryer or deep frying pan to 375 degrees F.
- 2. Whisk milk, eggs and vanilla together. Combine flour, baking powder, sugar, salt and nutmeg. Fold in peaches; add melted butter.
- 3. With cookie scoop, scoop batter into hot oil. The batter will sink and then rise. Cook for about 2 - 3 minutes until golden brown, depending on size of fritters. Remove fritters from oil; drain on paper; glaze.
- 4. GLAZE: Mix together and drizzle over fritters.
- 5. NOTE: you can also just roll cooled fritters in powdered sugar if you don't want to glaze.

- Combine 2 T. flour and blueberries; toss lightly and set aside.
- Combine 1 cup flour, baking powder, cinnamon, nutmeg and sugar in mixing bowl.
- Combine egg and milk; gradually add to flour mixture.
- Fold in blueberries.
- Heat 3 or 4" of oil to 375 degrees in Dutch oven.
- Drop 3 or 4 heaping tablespoons at a time. Cook for about 3 minutes, or until golden brown on one side; turn and cook 3 minutes.
- Drain on paper towels.
- Sprinkle with powdered sugar.

DEEP FRIED BLUEBERRY FRITTERS
How to make Deep Fried Blueberry Fritters

- Glaze:
- oz hot water
- ½ cups powdered Sugar
- Fritters:
- lbs yeast raised dough
- ½ cup blueberries
- ¾ cup blueberry compote
- ¼ cup flour
- Deep fryer oil (i.e. vegetable oil, shortening, peanut oil, coconut oil). Use enough oil to submerge fritters.
- Directions:
- Flatten dough and evenly spread compote on top. Sprinkle 1 ½ C blueberries over blueberry compote and sift and fold 1/4C flour into dough. After folding all of the ingredients in, chop dough mixture thoroughly. Form chopped ingredients back into a ball and chop again (repeat this step 4 times). Use an ice cream scoop to portion into balls. Slightly flatten dough onto fryer screen by using fingers (tops should be bumpy). Proof the dough for 45 minutes. Preheat oil to 350 degrees. Submerge fritters in oil for 4 ½ minutes. Glaze while hot. Serve and enjoy!!
