1 tablespoon olive oil
1 cup onion, chopped
2 cloves garlic, minced
½ cup light mayonnaise (such as Hellmann's Light®)
½ cup crumbled blue cheese
ground black pepper to taste

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes; drain on a plate lined with paper towels. Crumble the bacon once cooled enough to handle.
  • Heat the olive oil in a skillet over medium heat; cook and stir the onion and garlic in the hot oil until translucent, about 5 minutes; transfer to a bowl. Add the crumbled bacon, light mayonnaise, blue cheese, and black pepper to the onion and garlic; stir to combine.

3 pounds lean ground beef
4 ounces blue cheese, crumbled
½ cup minced fresh chives
¼ teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 teaspoon coarsely ground black pepper
1 ½ teaspoons salt
1 teaspoon dry mustard
12 French rolls or hamburger buns

Steps:

  • In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into about 12 patties.
  • Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

1/4 cup onion, minced
1/4 cup blue cheese, crumbled
12 green olives, chopped
1 teaspoon olive oil, garlic flavored

Steps:

  • Mix all ingredients.
  • To serve, spread on bottoms of hamburger buns, top with hot burger. (The irony has not escaped me that I call it a "topping" but put it on the bottom. You can put it on top or bottom!).
