2 tablespoons olive oil
2 tablespoons lime juice
2 cloves garlic, minced
4 tuna steaks
1 fresh mango - peeled, pitted, and chopped
¼ cup finely chopped red bell pepper
½ Spanish onion, finely chopped
1 green onion, chopped
2 tablespoons chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 ½ teaspoons olive oil
2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon garlic powder
4 tablespoons olive oil

Steps:

  • Whisk together the olive oil, lime juice, and garlic in a bowl. Rub the tuna steaks with the mixture. Place the steaks in a sealable container and chill in refrigerator 3 hours.
  • Combine the mango, bell pepper, Spanish onion, green onion, cilantro, and jalapeno pepper in a bowl; stir. Add the lime juice and 1 1/2 teaspoons olive oil and toss to combine. Chill in refrigerator 1 hour.
  • Stir together the paprika, cayenne pepper, onion powder, salt, pepper, thyme, basil, oregano, and garlic powder in a bowl. Remove the tuna steaks from the refrigerator and gently rinse with water and then dip each side of each steak in the spice mixture to coat.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Gently lay the tuna steaks into the hot oil. Cook the tuna on one side for 3 minutes; remove to a plate. Pour the remaining 2 tablespoons olive oil into the skillet and let it get hot. Lay the tuna with the uncooked side down into the skillet and cook another 3 minutes; remove from heat immediately.
  • Spoon about 1/2 cup of the mango salsa onto each of 4 plates. Lay the tuna steaks atop the salsa and serve immediately.

This can be served as a dinner or an appetizer. It is positively amazing. This is my own creation inspired by my favorite dish at a local NJ restaurant. I hope you like it as much as I do.

2 lbs tuna
3 -4 tablespoons redfish blackening seasoning
1/4 cup olive oil
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons spicy mustard
1 lemon, juice of
2 tablespoons horseradish (or to taste)
1/4 teaspoon paprika

Steps:

  • Make the mustard first: Mix all ingredients in a small saucepan.
  • Bring to a boil, stirring often.
  • When somewhat smooth, it's done.
  • Now start the tuna: TUNA Cut up tuna in large bite size pieces Coat with blackening seasoning Heat oil in pan till very hot, but not smoking Sear tuna on all sides for about 7-10 minutes total.
  • Do not overcook.
  • It's good for the tuna to be slightly pink on the inside.
  • Serve right away with Cajun Mustard.
  • This can also be made with peeled jumbo shrimp.

1 teaspoon salt
1 teaspoon fresh thyme (minced)
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon ground black pepper
1/2 teaspoon fennel seed (crushed)
4 tuna steaks
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 deg.
  • Mix first 7 ingredients in small bowl.
  • Place steaks on baking sheet, brush on both sides with 1 T. oil. Sprinkle top of each with seasoning.
  • Heat heavy large skillet over high heat until very hot. Add remaining 1 T. oil; swirl to coat.
  • Place steaks seasoning side down in skillet. Cook until very brown on bottom (about 1 min) return steaks, browned side up to baking sheet.
  • Place in oven; bake until done (about 8 min).

Soy-Mustard Sauce:
1/4 cup Colman's mustard powder
2 tablespoons hot water
2 tablespoons unseasoned rice vinegar
1/4 cup soy sauce
Blackening Spice: (may substitute 1/4 cup any Cajun spice blend)
1 1/2 tablespoons paprika
1/2 tablespoon cayenne powder
1/2 tablespoon pure red chile powder
1/4 teaspoon freshly ground white pepper
1/2 tablespoon ground sandalwood (optional)
1 ahi tuna fillet, about 2 inches thick by 5 inches long (8 ounces)

Steps:

  • 1. Prepare sauce: mix the mustard powder and hot water to form a paste. Let sit for a few minutes. Add vinegar and soy sauce mix together, and strain. Chill. 2. Mix all the spices together on a plate and dredge the ahi on all sides. 3. Heat a lightly oiled cast-iron skillet and sear the ahi over high heat to desired doneness (about 15 seconds per side for rare). 4. Cut into 16 thin slices.

4 (8 to 9-ounce) tuna steaks
Blackening Spice
4 ounces butter
8 ounces jumbo lump crabmeat
4 ounces ham (Virginia Smithfield preferred), small diced
4 ounces butter
Your favorite Bearnaise Sauce, optional

Steps:

  • Preheat a convection oven to 500 degrees F.
  • Heat an iron skillet over medium high heat. Season both sides of the tuna steaks with blackening spice. Add the tuna to the hot skillet and sear each side for about 1 minute to seal in the moisture. Remove the tuna from the skillet and place in a broiler pan. Top each tuna steak with 1 ounce of butter and place in the oven. Cook for 6 minutes for medium rare or 8 minutes for well done.
  • After you place your tuna in the oven start your Chesapeake topping by sauteing jumbo lump crabmeat with the Virginia Smithfield ham in the butter over medium heat until warmed through. When fish is done, place the Chesapeake topping on fish and finish off with Bearnaise sauce.

1 1/2 teaspoons oregano
1 1/2 teaspoons kosher salt
1 teaspoon granulated garlic powder
1/2 teaspoon onion powder
1/2 teaspoon sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1/2 cup mayonnaise, preferably homemade
1 1/2 teaspoons minced capers
6 drops Tabasco
1 teaspoon tomato paste
1/2 teaspoon minced fresh tarragon
1/2 teaspoon Dijon mustard
3 grinds white pepper
1 1/2 pounds tuna steak, in 1 piece, about 1 1/4 inches thick
1 1/2 teaspoons cold unsalted butter, cut into 4 chunks
2 bunches watercress, washed and tough stems removed
2 heads Belgium endive, sliced into rings
1 large tomato, seeded and diced
16 large basil leaves, finely sliced, plus more for garnish

Steps:

  • To make the blackening spice, combine all the ingredients and mix thoroughly. Set aside.
  • To make the remoulade, combine all ingredients in a small bowl and mix thoroughly. Cover and refrigerate until ready to use.
  • To make the salad, place a cast-iron skillet over high heat for 5 minutes and turn on the exhaust fan. Place the blackening spice on a plate and use your hands to adhere as much as possible to the fish, covering all sides. Place 2 chunks of the butter on one side of the fish and place it, butter side down, in the hot pan. Cook for 2 to 3 minutes, or until the surface of the fish is lightly blackened. Place the remaining butter on the uncooked side of the fish and turn. Cook for another 2 to 3 minutes, or until the tuna is medium rare. Place the tuna on a cutting board and set aside.
  • In a large bowl, combine the watercress, endive, tomato and the 16 basil leaves. Add 4 tablespoons of the remoulade and toss to coat. Transfer the greens to a platter. Using a sharp knife, slice the tuna on the bias into thin slices. Lay the slices over the greens and top the tuna with the remaining remoulade. Garnish with more thinly sliced basil and serve.

Blackened Tuna Steak With Fruit and Balsamic Sauce image

This fast and easy recipe is credited to Cynthia Charbeneau of Traverse City, MI. I made the recipe from the www.fustinis.com website. Fustini's is a store in Traverse City that specializes in all sorts of different olive oils and balsamic vinegars. The balsamics and olive oils also come in infused varieties (I just bought a pomegranate infused balsamic for salads). I love shopping in this store when I am up north. On the website, very few ingredient proportions are listed for this recipe, so I listed the proportions I tried tonight. I would never have thought I would enjoy strawberries with fish, but I really thought this dish was a winner. DH said he "liked it." I used Fustini's 18-year aged balsamic vinegar. I omitted the sugar and water. DH always cooks the tuna steaks by first putting them in the oven on 200F for a short time before pan searing them. This way, they are still rare (but not cold) on the inside. I put the strawberry/balsamic combination in a saucepan on the stovetop between medium low and low, just enough to warm them up. I served with one of our favorite salads, Recipe #191024 191024, using Fustini's 12-year-old white balsamic vinegar.

1 cup fresh strawberries, sliced (approximately)
blackening seasoning, to taste
1 tablespoon balsamic vinegar (use your favorite kind)
water (just a little bit)
1 pinch sugar (depending on the sweetness of your balsamic)

  • Rub fish with your favorite blacken seasoning.

2 tablespoons Cajun seasoning
2 tablespoons olive oil

  • Generously coat tuna with Cajun seasoning.

BLACKENING SEASONING:
4 tuna steaks
Cooking spray
2 tablespoons paprika
1 tablespoon oregano
1 tablespoon thyme
1 teaspoon cayenne pepper (more or less depending on taste, 1 tsp. is medium spicy)
1 1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

  • Make the blackened seasoning. Mix the paprika, oregano, thyme, cayenne pepper, black pepper, onion powder, garlic powder and salt in a shake top bottle, or small bowl. Preheat grill to high. Coat all sides of tuna steaks in a thick coating of blackening seasoning, pressing into the flesh of the fish. Spray one side with cooking spray. Place sprayed side down on grill grates. Close lid and cook 1-2 minutes. Open lid, spray other side of fish and flip. Cook 1-2 minutes more. Tuna is finished when outside edges are cooked but middle is still rare.

1 teaspoon garlic powder

6 fresh tuna fillets, 1/2-3/4-inch thick

1/2 teaspoon white pepper

  • Load grill with charcoal to make very hot fire.
  • Set cast iron skillet on grill.
  • Let cast-iron skillet get very hot before adding ingredients.
  • Combine all dry ingredients in a dish.

Tuna, 6-10 oz. fresh as market provides. The thicker the better. I like Ahi tuna pre-packaged and slightly frozen.
Seasoning, Old Montreal works well but you can use what ever you'd like.
Olive Oil, 1 tb.
Mango, 1 ripe, peeled and diced
Onion, small diced
lime, juice of 1
garlic, 2 cloves crushed
cilantro, 2-3 tb.
jalapeno, 1 small dice.(The heat comes from the seeds and ribs, remove if you'd like)

Steps:

  • Dredge or cover Tuna with seasoning. Pre-heat heavy pan until very hot. add olive oil. Quickly sear tuna, 2 minutes per side. Remove and place in fridge to cool.( If the tuna is slightly frozen it will keep it from over cooking. Tuna should be served rare) Combine mango, lime, onion cilantro, garlic and jalapeno. Salt and fresh ground pepper to taste.(If mango is not ripe, saute along with onion until soft.) To serve, slice very thin and palce on plate, add mango salsa on side.
