3 cups fresh baby spinach
2 cups fresh blackberries, halved
1-1/2 cups cherry tomatoes, halved
1/3 cup crumbled feta cheese
2 green onions, thinly sliced
1/4 cup chopped walnuts, toasted
1/3 cup balsamic vinaigrette

Steps:

  • In a large bowl, combine the first 6 ingredients. Divide salad among 6 plates; drizzle with dressing.

1 tablespoon butter
1 cup pecan halves
6 cups torn mixed greens
2 cups fresh blackberries
1 ripe avocado, peeled, pitted and cubed
3 tablespoons crumbled goat cheese
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 small garlic clove, minced
1/2 teaspoon dijon-style mustard
1/4 teaspoon sea salt (or to taste)
1/4 teaspoon fresh ground black pepper (or to taste)

Steps:

  • Melt butter in a small skillet over medium heat. Saute pecans until lightly browned. Set aside until cool.
  • To make dressing, whisk all dressing ingredients together and set aside.
  • Place all salad ingredients in a large bowl and gently toss to combine. Pour dressing over salad and gently toss to coat.
