Slow Cooker Salsa Chicken with Black Beans and Corn image

This EASY Slow Cooker Chicken dish is cheesy and delicious, made with boneless chicken breast, black beans, corn and salsa topped with melted cheddar cheese. YUM!

2 cups fresh or frozen corn
15 ounce can reduced sodium black beans (rinsed and drained)
2 boneless skinless chicken breasts halved lengthwise (16 oz)
1/2 teaspoon adobo seasoning (or salt to taste)
3/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1 1/4 cups chunky mild salsa
1 cup shredded cheddar (reduced fat Sargento)
chopped cilantro for garnish
optional (serve with avocado and brown rice)

Steps:

  • Combine corn and beans and put them in the slow cooker.
  • Season the chicken with adobo (or salt), garlic powder and cumin then place in the slow cooker and top with salsa.
  • Cover and cook LOW for 6 hours.
  • Top with cheese, cover and cook until melted, about 5 minutes. Garnish with cilantro.
  • To serve, transfer the chicken and vegetables with a slotted spoon and serve over rice or cauliflower rice.

2 1/2 fresh corn kernels (from 5 ears)
1 tablespoon olive oil
2 teaspoons ground cumin
1 cup chopped red bell pepper (from 1 medium pepper)
2 (15-oz.) cans black beans, drained and rinsed
1 cup chopped plum tomatoes (about 2 medium tomatoes [5 oz. total])
1 cup chopped red onion (from 1 small [5 oz.] onion)
1/2 cup chopped fresh cilantro (from 1 bunch cilantro)
3 tablespoons fresh lime juice (from 2 limes)
1 tablespoon finely chopped jalapeño chile, not seeded (1 small chile)
3/4 teaspoon kosher salt

Steps:

  • Heat a medium cast-iron skillet over medium-high until hot. Add corn and oil; cook, stirring occasionally, until corn is browned, 5 to 7 minutes. Add cumin; cook, stirring occasionally, until fragrant, about 1 minute. Remove from heat; stir in bell pepper until combined. Transfer mixture to a large bowl.
  • Add beans, tomatoes, onion, cilantro, lime juice, jalapeño, and salt to corn mixture; toss gently to combine. Let stand 10 minutes. Serve.

4 boneless, skinless chicken breasts
Kosher salt, to taste
Ground black pepper, to taste
1 (16-ounce) can black beans, drained and rinsed
1 (12 to 15-ounce) can corn kernels, drained
2 cups chunky salsa, divided
1 (4-ounce) can chopped mild green chile peppers, optional
1/4 cup chopped, fresh cilantro, divided
1 1/2 cups shredded Mexican cheese blend or a mixture of cheddar and Colby cheeses

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F. Lightly grease a 2-quart casserole dish or spray it with cooking cooking spray.
  • Season chicken with salt and pepper.
  • Combine drained beans, corn, 1 cup of the salsa, chile peppers (if using), and half of the cilantro. Put mixture into prepared baking dish.
  • Arrange chicken over bean and corn mixture, then spoon remaining salsa over chicken. Sprinkle with remaining cilantro and top evenly with cheese.
  • Cover tightly with foil and bake for 30 minutes. Remove foil and continue baking for 10 minutes or until chicken is tender and juices run clear.

15 ounces black beans (1 can, drained and rinsed)
14 ounces corn (1 can. drained)
½ cup salsa
1 ounce taco seasoning packet
⅓ cup water
1 pound boneless, skinless chicken breasts

Steps:

  • If making this into a freezer meal, label a gallon-sized resealable freezer bag with the title of the recipe and how to long to cook in the slow cooker. (If you aren't making it into a freezer meal, jump ahead to step #5).
  • Dump the black beans, corn, salsa, taco seasoning, and water in the resealable bag and mix until all the ingredients are combined. Add the chicken breasts and zip the bag closed. Place in the freezer until ready to use (it will last in the freezer for up to 90 days).
  • When ready to cook, remove bag from freezer and place in fridge overnight so that it can thaw. Spray slow cooker with non-stick cooking spray and dump bag ingredients into the slow cooker. Cook on high for 4-5 hours or on low for 6-7 hours (until chicken is completely done).
  • Shred meat and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
  • If you aren't making this into a freezer meal, dump black beans, corn, taco seasoning, and water in crock pot and mix together until seasoning is dissolved. Place chicken breasts on top and spread salsa on chicken. Cook on high for 3-4 hours or low for 5-6 hours. Shred chicken and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.

1 red onion (minced)
3 green onions (diced)

2 Tablespoons lime juice
½ teaspoon minced garlic
1 jalapeno pepper (seeded and minced)
cumin to taste
13 ounces whole grain tortilla chips (1 bag)

2 teaspoons extra-virgin olive oil
3/4 pound cremini or button mushrooms, trimmed and quartered
1 garlic clove, minced
1/4 teaspoon cayenne pepper
Coarse salt and ground pepper
1 1/2 cups reserved cooked black beans from Spicy Black Bean Soup, or 1 can (15.5 ounces) black beans, rinsed and drained
8 corn tortillas, warmed and halved
2 cups salsa
1 1/4 cups shredded Monterey Jack cheese (4 ounces)

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high. Add mushrooms and cook, stirring often, until browned, 7 minutes. Add garlic and cayenne; season with salt and pepper. Add black beans and stir to combine. Cook until beans are warmed through, 2 minutes. Remove from heat.
  • Arrange 5 tortilla halves in a 2-quart baking dish. Top with half the bean mixture and 1/2 cup salsa, then sprinkle with one-third the cheese. Repeat with another layer of tortilla halves, bean mixture, salsa, and cheese. Top with remaining tortilla halves, salsa, and cheese.
  • Cover with foil and bake until center is hot and cheese melts, 10 minutes. Uncover and bake until cheese is bubbling, 5 minutes.
