1/2 cup fat-free reduced-sugar strawberry yogurt
1/2 cup fat-free plain yogurt
1/4 cup fresh or frozen unsweetened whole strawberries, thawed and mashed
1 tablespoon honey
1 tablespoon chopped walnuts
Assorted fresh fruit
Additional walnuts, optional

Steps:

  • In a bowl, combine the first five ingredients. Serve with assorted fresh fruit and additional nuts if desired.

1 (16 ounce) package fresh strawberries, hulled and halved
1 large peach, pitted and cut into bite-size pieces
2 plums, pitted and cut into bite-size pieces
2 kiwi fruit, peeled and cut into bite-size pieces
1 cup dark sweet cherries, pitted and halved
1 cup honeydew melon balls or cubes
1 cup cantaloupe balls or cubes
1 cup cubed fresh pineapple
1 cup grapes
2 (16 ounce) containers low-fat vanilla yogurt

Steps:

  • In a large salad bowl, lightly mix together the strawberries, peach, plums, kiwi fruit, cherries, honeydew melon, cantaloupe, pineapple, and grapes until the fruit is well mixed. Serve in bowls with yogurt spooned over the top.

Super-Cheap! Cut your weekly fruit waste to almost zero with a festive touch to fruit salad. This came from Cheap, Fast, Good! I have not tried this, just posting for safe keeping.

8 ounces canned fruit (smallest size can, recommended pineapple, mandarin oranges, or pears)
1 medium red apples or 1 medium green apple
1 medium banana (See Note)
1/2 cup seedless grapes
1/2 cup strawberry yogurt
1 teaspoon grated orange zest (optional)
2 tablespoons orange juice

Steps:

  • Pour the canned fruit, with its juice, into a serving bowl. Core the apple but do not peel it. Cut the apple into bite-size pieces and add the pieces to the bowl. Stir to coat the apples with the juice.
  • Slice the banana and add it to the bowl. Add the grapes, cutting them in half, if desired. Set the fruit aside, without stirring, until just before serving.
  • When you are ready to serve the salad, stir the fruit and serve it in small bowls. Spoon a little of the dressing on top of each bowl and pass the rest at the table.
  • NOTE: If you are waiting a while to serve the salad, don't peel, slice, or add the banana until right before serving. The banana can hold in the salad for only about 10 minutes before turning brown and mushy.
  • Strawberry Yogurt Dressing: Pour the yogurt into a small mixing bowl. Add the orange zest (if using) and the orange juice. Stir until well combined. Spoon over fruit salad or refrigerate, covered, until ready to serve, up to 24 hours.

I cut this out of something. Not sure what, but it must have to do with the Reynolds corporation because this recipe, instead of just saying "8x8 pan" specifies "Reynolds Pot Lux cookware 8x8 pan." Whatever. I just know this sounds REALLY tasty, especially for a summer afternoon when the fruits are fresh and in season. Obviously, with a recipe of this sort, other fruits that strike your fancy can be added or substituted.

1 pint strawberry, sliced
1 pint blueberries
4 peaches or 4 nectarines, peeled and sliced
1/2 honeydew melon, chunked
1/3 cup light cream cheese, softened
2 tablespoons sugar
1 (8 ounce) carton low-fat strawberry yogurt
1 teaspoon lemon peel, grated
1 teaspoon fresh lemon juice

Steps:

  • To make the fruit salad, combine fruit in pan (personally, I'd use glass or plastic and not metal; I'd worry about the taste of the fruit being compromised.).
  • Cover and refrigerate.
  • Prepare Strawberry Dressing by stirring cream cheese and sugar in a medium bowl until smooth; then adding yogurt, lemon peel, and juice, and stirring until smooth again.
  • Serve fruit with dressing on the side or drizzle over fruit, stirring to coat.
  • Makes 9-10 servings of fruit and 1 1/2 cups of dressing.
