These shortcake biscuits made with Bisquick® are great with strawberries and whipped cream.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Mix baking mix, milk, eggs, sugar, and butter together in a bowl. Drop into 6 mounds on the prepared baking sheet.
- Bake in the preheated oven until golden, about 10 minutes. Let cool before splitting and filling.

- 1. Mix strawberries, blueberries and 1/2 cup sugar in a medium bowl; set aside.
- 2. In a large bowl, stir Bisquick mix, milk, 3 Tbsp. sugar and the melted butter until soft dough forms. Drop by 6 spoonfuls onto an ungreased cookie sheet.
- 3. Bake in a preheated 425º oven for 10-12 minutes or until golden brown. Split warm shortcakes horizontally; fill and top with berries and whipped topping.

BISQUICK BLUEBERRY COBBLER
Steps:
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a 9-inch baking pan with oil or butter.
- In a large bowl, add the blueberries and sugar. Toss until the blueberries are fully coated. Set it aside.
- Mix the Bisquick, milk, and butter until fully combined. The dough should be soft.
- Pour the blueberries into the greased baking pan.
- Spoon the dough out evenly over the blueberries. Bake for 45 minutes or until the topping turns golden brown and the blueberry filling begins to bubble.
- Serve it warm with a scoop of ice cream or whipped cream topping. Enjoy!

BISQUICK BLUEBERRY SHORTCAKE (LIGHTER)
This is something that my 6 year old and I have just discovered as a terrific treat for after school. I never really grew up fully, because I too look forward to that after school snack. There are so many different directions that this recipe can be taken, but this is by far our favorite. My son is the kid who, if I make him smoothies or another healthy snack, he says, "You know what this needs, mommy? It needs chocolate!" but he doesn't say that with this. :D

- Preheat oven to 350.
- Combine blueberries and yogurt. Add some splenda if it's not sweet enough for you. Set the bowl near the oven so that the mix can warm a tad.
- Put bisquick and sugar in a mixing bowl. Add skim milk and cinnamon, if using. (I haven't tried any extracts, but I'm curious as to how it would work out.).
- Drop by spoonful into 4 equal portions onto foil covered cookie sheet. Set in oven.
- Pour a cup of coffee and cook shortcakes for 12 minutes.
- Remove from oven, put on plates and top with blueberry yogurt mixture. Serve and enjoy!

In another bowl, combine the biscuit mix, milk and remaining sugar. , Spread half of the batter into a 1-qt. baking dish coated with cooking spray; top with half of the blueberries and half of the reserved sugar mixture. - Heat oven to 425°F. Grease bottom and sides of 9-inch square pan with shortening or cooking spray.
- Drain blueberries (from muffin mix); rinse and set aside. In medium bowl, stir together sour cream and egg; gradually stir in water and oil. Stir in muffin mix just until blended. Gently stir drained blueberries into batter. Spread batter in pan. Sprinkle with coarse sugar.
- Bake 20 to 25 minutes or until golden brown. Cool completely, about 1 hour. Meanwhile, in medium bowl, stir together strawberries, 1 cup fresh blueberries and 1/3 cup granulated sugar. Refrigerate until ready to serve.
- Cut shortcake into 9 squares; cut each square diagonally in half. Place 2 halves on each serving plate; top with berries and whipped topping.
