BIRDS NEST BREAKFAST CUPS
Bird's Nest Breakfast Cups are a fun way to eat eggs and hash browns for breakfast. These baked egg cups combine hash browns and cheese to form a "nest" and are topped with an egg.

Steps:
- Preheat the oven to 450 degrees. Spray muffin tin generously with cooking spray. Set aside.
- In a large bowl, add hash browns, olive oil, cheddar cheese, and salt and pepper and mix together.
- Divide hash brown mixture between 12 muffin cups (use a cookie scoop to make your life easier). Each one will hold a generous ΒΌ cup.
- Press the hash browns in to the muffin tin. Make a small depression in the middle, shaping it into a nest.
- Generously spray the tops of the hash brown nest with cooking spray.
- Bake for 20-25 minutes, until the hash browns are golden brown. Keep an eye on them for the last few minutes to ensure they don't burn. Let the hash brown nests cool for about 15 minutes.
- Reduce the oven temperature to 425 degrees.
- Crack an egg into each nest.
- Bake for 12 minutes, or until the whites are set and the yolk is your desired doneness.
- Serve warm. Add salt and pepper to taste.

This is a lightened version of a recipe. It usually has regular bacon and eggs in it. I got this from a Simple & Delicious bonus recipe booklet. I only made one change to add chives instead of parsley. They are so pretty:)

Steps:
- 1. Preheat oven to 350. In a lrg skillet, cook bacon over med heat for 2 min on each side, till partially set but not crisp.
- 2. Coat 6 muffin cups with cooking spray; wrap two bacon strips around the inside of each cup.
- 3. Fill each cup with 1/4 cup egg beaters; top with cheese.
- 4. Bake for 18-20 min.; or till eggs are set. Cool for 5 min. before removing from pan. Sprinkle with chives, or parsley. Great for brunches or on-the-go.

- In a large saucepan over medium heat, melt butter and marshmallows until smooth, stirring occasionally. Add the peanut butter and chocolate chips; heat and stir for 2 minutes or until smooth. Remove from the heat; stir in chow mein noodles until well coated. , Divide into 12 mounds on a waxed paper-lined baking sheet. Using fingers, shape each into a nest; press an indentation in the center of nest. Fill each nest with three or four jelly beans or candy eggs. Cool.

Steps:
- Line a cookie sheet with foil and grease with spray-on cooking oil.
- Pour noodles into a large bowl. Melt the butter and marshmallows over medium heat, stirring until smooth. Pour marshmallow mixture over noodles, stirring until well coated.
- Rub some butter on hands and form noodle mixture into six round balls. Place balls on prepared cookie sheet. With the back of a teaspoon, press the center of each ball to make a hollow indentation.
- Let nests set until they are firm. Fill each with small jelly beans. (Other small candies of your choice may be substituted, such as M & M's, small gumdrops, chocolate covered raisins, chocolate covered peanuts, etc.)

- Take your bag of hash browns and mix in the salt, pepper, oil and 1/3 cup shredded cheese. Divide amongst the cups in your muffin tin, making sure to grease tin beforehand. Bake hash browns at 425 degrees for 15-18 minutes or until toasty. Once they're finished, take them out and lower the temp of the oven to 350 degrees. Crack an egg into each of the cups Top with bacon and a sprinkle of extra cheese Bake at 350 degrees for 13-16 minutes (or until the eggs are as firm as you like them). Slide a knife along the edges to remove from pan when cooled.
