½ cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

Years ago I worked with this remarkable lady who blessed everyone she knew with her simple, southern cooking. It was such a treat to eat Mrs. Billie's cooking and one of her specalities was brownies. This is witten just like she gave it it me. She would tell everyone when baking to use the best & finest sugar available as that...

Number Of Ingredients 16

1st recipe for 8 x 8 pan:
3/4 c self-rising flour
2 1/2 Tbsp cocoa powder
1 stick melted butter
1 c sugar
1/2 tsp pure vanilla (mexican vanilla is best)
2 eggs, slightly beaten
1/2-1 cup chopped pecans
2nd recipe for 9 x 13 pan
1 1/2 c self-rising flour
5 Tbsp cocoa powder
1 1/2 stick melted butter
1 3/4 c sugar
1 tsp pure vanilla (mexican vanilla is best)
3 eggs, slightly beaten (no, not 4)
1/2-1 cup chopped pecans

Steps:

  • 1. Preheat oven to 325°. Grease and flour pan (I now spray mine with cooking spray). Melt butter and put into mixing bowl, add cocoa to melted butter, mix well. Then add sugar to mixture and blend well. Then add slightly beaten eggs and vanilla, mix well. Now add the flour and nuts to mixture and mix only until the flour and nuts are mixed in well. Don't over stir. Pour mixture into pan. Now, it depends on your oven as to how long to cook them. My oven cooks fairly hot, so if I make an 8 x 8 pan, it takes about 25 minutes or 30 - 35 minutes for a 9 x 13 pan. (The recipe actually says 40 minutes, but I find that's too long in my oven) Mrs. Billie would stress DO NOT OVERBAKE, that is the key to success with brownies! Remove from oven when they 1st look done.

LYNN'S "SICK" BROWNIES BITES

Cooking spray, for coating the baking pan
1 2/3 cups graham cracker crumbs
2/3 cup shredded coconut
2/3 cup chopped walnuts
One 14-ounce can sweetened condensed milk
6 ounces semisweet chocolate chips
Big pinch kosher salt
Confectioners' sugar, for rolling

Steps:

  • Preheat the oven to 375 degrees F. Coat an 8-by-8-inch baking pan with cooking spray.
  • Combine the graham crackers, coconut, walnuts, condensed milk, chocolate chips and salt in a medium bowl. Stir with a wooden spoon until thoroughly combined. Transfer the mixture to the prepared pan and press to the edges.
  • Bake until the chocolate melts and the top is golden, 15 to 20 minutes. Stir the hot mixture in the pan until the chocolate is incorporated throughout. Press back out to the edges and set aside until cool enough to handle.
  • Spread the confectioners' sugar on a dinner plate. Scoop out the brownie mixture by the tablespoon and shape into balls. While still warm, roll each ball in the sugar to coat. The bonbons will keep, tightly covered, for 2 days.

Nonstick cooking spray, for the pan
2 sleeves graham crackers (18 crackers)
1 teaspoon ground cinnamon
1/2 teaspoon chili powder
1/4 teaspoon kosher salt
10 tablespoons unsalted butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted and slightly cooled
1/2 cup cocoa powder
1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ancho chile powder
1/4 teaspoon kosher salt
1/4 cup semisweet chocolate chips
2 cups mini marshmallows
1/2 cup (1 stick) unsalted butter, at room temperature
1 1/2 cups powdered sugar
2 cups marshmallow creme
1/2 teaspoon vanilla extract

Steps:

  • For the graham cracker layer: Preheat oven to 350 degrees F. Grease and line an 8-inch square baking pan with parchment, leaving a 1-inch overhang on each side.
  • Add the graham crackers, cinnamon, chili powder and salt to a food processor and pulse to break up. Add the butter and pulse until the ingredients are combined and the mixture resembles sand. Press the mixture into the prepared baking pan. Refrigerate while you make the brownie layer.
  • For the brownie layer: Combine the eggs, sugars and vanilla extract in a large bowl. Mix until well combined. Add the melted butter, cocoa powder, flour, baking powder, cinnamon, ancho chile powder and salt. Stir to combine, but take care to not overmix. Add the chocolate chips and fold in.
  • Spread the entire brownie layer mixture over the top of the graham cracker crust. Bake until the top is dry and firm, about 40 minutes. (A cake tester will not come out clean because the brownies are so fudgy!) Let them cool completely.
  • For the marshmallow frosting: Turn the oven to the broil setting. Adjust the oven rack so it's 6 inches from the heat source.
  • Spread the mini marshmallows on an unlined sheet tray, then broil until toasty and charred, about 1 minute. (As an alternative, use a kitchen torch and char until you have your desired level of darkness.) Let cool to touch.
  • Add the butter and powdered sugar to a bowl and beat until fluffy and well mixed. Add the marshmallow creme and vanilla and stir until combined. Set aside.
  • Spread the marshmallow frosting over the top of the cooled brownie. Add the charred mini marshmallows all over.
  • Remove from the pan and cut into squares.
