This recipe comes from the 'Dr. Fishbone Recipe Book' and is a collection of favorites from the Carolina's. I am placing it here for safe-keeping, it looks simple enough to be a tasty, easy soup to prepare.

Number Of Ingredients 10

4 (6 1/2 ounce) cans minced clams, undrained
1/2 lb salt pork or 1/2 lb bacon, diced
1 cup onion, chopped
1/2 cup celery, chopped
3 cups water
3 1/2 teaspoons salt
1/4 teaspoon pepper
4 cups half-and-half
3 -4 tablespoons cornstarch
1/4 cup fresh parsley, chopped

Steps:

  • In a skillet, saute the meat and onion until brown, drain and put in a slow cooker with the clams and juice. Add celery, water, salt and pepper. Cover and cook for 3 hours on high or until vegetables are tender. During the last hour of cooking add the half and half and cornstarch that you have blended together. Be sure to heat through before serving. Garnish with the parsley and serve with crusty French bread of crackers.

1 (10 3/4 ounce) can condensed cream of celery soup
1 (10 3/4 ounce) can condensed cream of potato soup
1 (10 3/4 ounce) can New England clam chowder
2 (6 1/2 ounce) cans minced clams
1 quart half-and-half cream
1 pint heavy whipping cream

Steps:

  • Mix cream of celery soup, cream of potato soup, clam chowder, 1 can undrained clams, 1 can drained clams, half-and-half cream, and whipping cream into a slow cooker.
  • Cover, and cook on low for 6 to 8 hours.

1/4 lb salt pork or 1/4 lb bacon
1 medium onion, chopped
3 -4 potatoes, pared and cubed
1 1/2 cups water
1 3/4 teaspoons salt
1/8 teaspoon pepper
2 cups half-and-half or 2 cups milk
1 1/2-2 tablespoons cornstarch (optional)

Steps:

  • Saute pork or bacon and onion until golden brown;drain.
  • Put clams in crock pot with bacon.
  • Add all remaining ingredients, except milk or half-and-half.
  • Cover and cook on High 3-4 hours.
  • Add 1 cup milk or half-and-half and cornstarch last hour of cooking.
  • Add remaining milk or half and half before serving.
  • STOVE TOP INSTRUCTIONS: Place all ingredients EXCEPT milk and cornstarch in kettle.
  • Simmer on low heat for 45 minutes.
  • Mix cornstarch into milk and add to kettle.
  • DO NOT BOIL.
  • Heat to warm, then serve.

1/2 lb salt pork or 1/2 lb bacon, diced
1 cup chopped onion
6 -8 medium potatoes, peeled and cubed
3 cups water
1 bay leaf
3 1/2 teaspoons salt
1/4 teaspoon pepper
4 cups half-and-half cream or 4 cups milk
3 -4 tablespoons cornstarch
chopped fresh parsley

Steps:

  • In skillet, saute salt pork or bacon and onion until golden brown; drain. Put into slow cooker with clams. Add all remaining ingredients, except milk, cornstarch, except parsley.
  • Cover and cook on high 4 hours or until vegetables are tender. During the last hour of cooking, combine 1 cup of milk with the cornstarch. Add cornstarch mixture and the remaining milk and stir well; heat through. Remove Bay Leaf before serving.
  • Top each serving with a little chopped parsley and serve with Oyster crackers or crusty French bread.

3 (10 1/2 ounce) cans New England clam chowder
3 (10 1/2 ounce) cans cream of potato soup
1 quart half-and-half
1 (6 ounce) can minced clams
1/2 cup butter or 1/2 cup margarine
1/2 medium onion, finely chopped

Steps:

  • Melt butter over medium heat. Add chopped onion to butter and saute until onions are soft.
  • Add sauteed onions, butter and remaining ingredients to crock pot. Stir well to mix.
  • Cook on high for 4 hours or on low for 6 to 8 hours.
