An old favorite, this recipe is based on vodka and flavored with anise, peppermint and ginger.

8 whole cloves
1 teaspoon chopped crystallized ginger
4 cups white sugar
12 drops peppermint extract
2 teaspoons vanilla extract
1 teaspoon anise extract
15 drops yellow food coloring
2 (750 milliliter) bottles vodka

Steps:

  • Place the cloves and ginger in a small jar and add enough vodka to cover. Seal and soak for 3 days. NO MORE! Strain the liquid, discarding the solids.
  • Measure the sugar into a gallon container. Add the peppermint, vanilla and anise extracts as well as the food coloring. Pour in the vodka, the strained vodka and yellow food coloring. Cover tightly and shake until the sugar dissolves. Age for one week MINIMUM.

Homemade Galliano image

1 qt vodka
15 whole cloves
2 c granulated sugar
1 Tbsp vanilla
1 tsp anise extract
1/4 tsp peppermint extract
4 or 5 dash(es) yellow food coloring

Steps:

  • 1. In a gallon GLASS bottle, not plastic, put 1 cup of the vodka and the cloves. Let this set for 10 days, Remove the cloves and add the sugar, and remaining 3 cups of vodka, vanilla, anise and peppermint. Stir well- add coloring. Let set for 2 weeks. Pour into bottles and enjoy! enjoy!

JALAPENO DINOSAUR EGGS

This my adaption of Scotch Eggs, a classic appetizer. I dearly love the eggs but I can cut the cholesterol by at least half by substituting stuffed hot peppers instead. Try this one and I know you'll be pleased if you are a lover of chili peppers. Of course, if you are a true chili head, you can use habaneros, or other really hot peppers, which is what I do.

1 1/2 lbs good quality country sausage
12 extra large jalapenos
8 ounces jack cheese with hot peppers
4 ounces deli sliced boiled ham
3/4 cup flour
2 eggs beaten with water for egg wash
1/4 cup water
1 cup cornmeal or 1 cup plain breadcrumbs
1 tablespoon cayenne pepper (optional)
1 teaspoon black pepper
1/2 teaspoon salt
oil (for frying)

Steps:

  • divide sausage into 12 equal portions and shape into thin patties.
  • mix cornmeal or bread crumbs with pepper, salt and cayenne pepper.
  • slice jalapenos in half and remove most of the seeds and membranes.
  • slice cheese into sticks that will fit in the jalapenos used.
  • slice ham into strips that will wrap around cheese.
  • place wrapped cheese into jalapeno cavity and reassemble halves.
  • form sausage patties around stuffed jalapenos, covering completely.
  • roll covered peppers in flour;.
  • then egg wash;.
  • then finish with seasoned crumb or cornmeal mixture.
  • allow to dry on a platter for about 5 minutes.
  • put oil in a large pot to a depth of about 1 1/2 inches.
  • heat to 325 degrees.
  • with a slotted spoon, lower covered peppers into hot oil.
  • cooking a maximum of 4 peppers, brown until well browned.
  • when browned, check with a chef's/digital thermometer (about 7-8 minutes).
  • insert to a depth of about 1/4 inch, looking for a temperature of 175 degrees.
  • allow to cool on absorbent towels, then slice across into 3/4 inch slices.
  • arrange on serving platter or keep warm if serving later.
  • serve with ranch or other favorite dipping sauce.

4 ounces skinless chicken breasts
1 egg
1/2 teaspoon water
2 tablespoons water
1/4 teaspoon dashi
1 tablespoon low sodium soy sauce
1 tablespoon mirin (preferred brand ( Takara)
1 teaspoon brown sugar
1 tablespoon onion (minced)
1 cup calrose rice (already cooked)
2 tablespoons rice flour
4 tablespoons panko breadcrumbs, flakes
mitsuba
salt
pepper

Steps:

  • Preheat the deep fryer to 340 degrees (if you have a digital fryer) OR 350 degrees Fahrenheit (if your fryer has a dial). Use a fry thermometer to make sure the oil reaches the correct temperature.
  • Cut the onion and mitsuba (Japanese parsley) into small pieces.
  • Place flour in one tray and panko flakes in another tray.
  • Pound the chicken with a meat tenderizer. This will soften the meat and flatten any bumps. It isn't necessary to flatten the meat very thinly! Afterwards, sprinkle salt and pepper on one side of the chicken.
  • Crack the egg into a small bowl.
  • Then put 1/4 of the egg into another bowl. Then beat the remaining 3/4 egg with a whisk.
  • Add 1 teaspoon of water to the 1/4 egg. Whisk the egg and water together.
  • Dredge the chicken in the flour. Shake off the excess.
  • Then coat the chicken in the egg/water mixture.
  • Afterwards, coat the chicken in the panko flakes.
  • Place the chicken in the deep fryer and deep fry until golden brown and delicious. (About 3 minutes).
  • Remove the chicken from the fryer and drain on a rack. Once cooled, cut chicken into 1 inch pieces.
  • In a small pan, mix soy sauce, mirin, 2 tablespoons of water, dashi, sugar, and onion. Put the lid on the pot. Cook ingredients on medium heat. When it starts to boil, reduce heat to low and cook for 3 minutes.
  • Add chicken to the sauce mixture. Then place the 3/4 beaten egg on top of the chicken. Put the lid on and cook for 20 to 30 seconds on high heat.
  • Remove from the heat and add the mitsuba to the top of the chicken.
  • Place the rice in a bowl and gently place the chicken/sauce mixture on top of the rice.

GALLIANO LIQUEUR RECIPE

This is very simailar to "the real stuff". It does call for glycerine. In the 90's, when I lived in the states, you could buy glycerine at the drug stores. I don't know if you still can find it there. Galliano is a "must" in Harvey Wallbangers! Yield: approximate. I don't know where this recipe comes from.

32 ounces distilled water
3 3/4 cups white sugar
1 teaspoon glycerine
2 teaspoons anise extract
2 teaspoons banana extract
1 teaspoon lemon extract
1 teaspoon vanilla extract
7 drops yellow food coloring
2 cups 100 proof vodka

Steps:

  • Bring to a rolling boil, the first three ingredients.
  • Cool until lukewarm, then add remaining ingredients.
  • Mix and pour into bottles.
  • Keep in cool, dry place.
