CLASSIC HOT CHOCOLATE

3 cups milk
1 cup heavy cream
1/2 cup sugar
1/4 cup unsweetened cocoa powder
Kosher salt
6 ounces milk chocolate, chopped
1 teaspoon pure vanilla extract
Marshmallows or whipped cream, for topping

Steps:

  • Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
  • Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.

I got this out of the cookbook Honest Pretzels, by Mollie Katzen. It really IS the best hot cocoa ever. There is also a recipe for whipped cream, you might want to make it before the cocoa.

2 tablespoons semi-sweet chocolate chips
1/2 teaspoon sugar
1 1/2 cups milk (low fat works fine)
1/8 teaspoon vanilla extract (if you like extra, add extra)
whipped cream (optional, recipe follows or you can buy some)
cinnamon (optional)
1 cup whipping cream
1/2 teaspoon vanilla extract
3 tablespoons powdered sugar

Steps:

  • ***DO NOT TURN ON FIRE UNTIL IT SAYS SO***.
  • Put 2 tablespoons chocolate chips plus 1/2 tsp sugar into a small saucepan.
  • Pour the milk into a 2-cup measuring cup until it reaches the 1 1/2 cup line.
  • Slowly pour the milk into the saucepan.
  • Add vanilla extract.
  • Put the pan on the stove and turn heat to medium.
  • Stir slowly (important!) with a wooden spoon as the milk heats up. the chocolate chips will slowly begin to melt. (It takes about 5 minutes to reach the right temperature. keep stirring constantly and be patient, DO NOT LET IT BOIL!).
  • It will be brown all the way through and the chips will be melted and milk hot when it is ready.
  • When it's ready take the cocoa off the stove and slowly pour it into 1 or 2 mugs.
  • Serve plain, or with a little whipped cream (recipe follows) or cinnamon on top.
  • ***WHIPPED CREAM***.
  • Get out large bowl and a whisk.
  • Put the cream, vanilla, and powdered sugar in a bowl. Beat strongly but not too fast with a whisk. It's best to take turns with someone, so your arms won't get tired.
  • When it gets nice and puffy but is still soft, it's ready.
  • It can keep in a covered container in the refrigerator, it keeps up to 2 days. but the sooner you use it, the better.

⅓ cup unsweetened cocoa powder
¾ cup white sugar
1 pinch salt
⅓ cup boiling water
3 ½ cups milk
¾ teaspoon vanilla extract
½ cup half-and-half cream

Steps:

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

2 cups confectioners' sugar
1 1/2 cups Dutch-processed cocoa powder
1 1/2 cups white chocolate chips
1/4 teaspoon salt

Steps:

  • Combine ingredients in large bowl.
  • Working in two batches, pulse ingredients in food processor until chocolate is finely ground.
  • Store in airtight container for up to 3 months.
  • Too make hot cocoa, stir 1/3 cup of the mix into 1 cup of hot (not boiling) milk.
  • Top with whipped cream or mini marshmallows and a little chocolate powder. I sometimes use cinnamon or nutmeg powder, instead. A little brandy and a crackling fire make for a real treat!

4 (1 1/2 ounce) Godiva dark chocolate bars, chopped
1/2 cup water
3 cups whole milk
8 whole cloves
4 cinnamon sticks
1 dash cayenne pepper
1/2 cup granulated sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup heavy cream
1 tablespoon confectioners' sugar
1/4 teaspoon vanilla extract
1 pinch cayenne pepper

Steps:

  • HOT CHOCOLATE:.
  • Place chocolate and water in microwave-safe bowl and microwave on medium (50% power) 1 minute; Stir.
  • Microwave an additional minute more or until chocolate softens, stir until smooth; let cool.
  • Combine milk, cloves, cinnamon sticks & cayenne pepper in a saucepan.
  • Warm milk mixture over medium heat until bubbles form around edge of pan.
  • Whisk chocolate mixture into milk.
  • Add sugar and bring to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Strain mixture, reserving cinnamon sticks.
  • Rinse cinnamon sticks, pat dry and set aside for garnish.
  • Return mixture to saucepan and stir in cream.
  • Over low heat, heat to simmer.
  • Stir in vanilla extract.
  • CAYENNE WHIPPED CREAM:.
  • Combine all ingredients in bowl and whisk until stiff peaks form.
  • Pour hot chocolate into four mugs and serve immediately topped with Cayenne Whipped Cream and a cinnamon stick garnish.
