SHRIMP QUESADILLAS

1 pound uncooked medium shrimp (peeled and deveined)
1 tablespoon olive oil
1/2 cup onion (chopped)
1/2 cup bell pepper (chopped)
2 cloves garlic (minced)
2 tablespoons taco seasoning
1-2 cups melting cheese (mozzarella, cheddar, Mexican blend or Monterey Jack)
6-8 Medium flour tortillas

Steps:

  • Heat 1 tablespoon oil in a large skillet or pan. Add the chopped onion, bell pepper, and garlic to the pan. Cook for 1 minute or until tender.
  • Add the shrimp and taco seasoning and cook for another 1-2 minutes or until shrimp begins to turn pink.
  • Transfer the mixture to a bowl and rinse and whip down the pan with a paper towel. Return the pan to the heat and spray cooking spray or brush with about 1 teaspoon vegetable oil.
  • Place a tortilla in the pan and sprinkle cheese on one side of the tortilla. Spoon about 5-6 shrimp or enough to cover with another sprinkle of cheese. Fold tortilla in half. Cook for 2-3 minutes on each side or until golden and crispy. Repeat for reaming tortillas.
  • Serve with Sour cream, salsa, or guacamole.

I have posted many shrimp recipes that I thought were great. I found this one on the internet and tried it tonight for dinner and this is the best one I have ever had. The shrimp are dusted with flour, dipped in egg, then dredged in Parmesan cheese, fried to a golden brown and drizzled with a lemon butter sauce. These are absolutely awesome!

1 lb large shrimp, peeled and deveined
1/2 cup flour
2 eggs, beaten
1 cup grated parmesan cheese
3 tablespoons oil
1 lemon, juice of
4 tablespoons butter

Steps:

  • Butterfly shrimp by cutting down the middle to open them to lay flat.
  • Dry shrimp and dredge them in flour.
  • Dip in beaten eggs, then into Parmesan cheese.
  • Heat oil on medium heat and fry shrimp until brown on both sides - do not overcook.
  • Remove shrimp to platter.
  • Remove oil from pan, but do not wash.
  • Add lemon juice and butter to pan and stir until butter melts.
  • Cook for 2 minutes.
  • Drizzle over shrimp and serve immediately.

9 under 8 # mexican white shrimp
flour
egg wash and parmesan cheese. Also canola oil
fresh lemon juice and unsalted butter

Steps:

  • Make sure to clean, devein and dry off the shrimp. Slice 3/4 of the way down the shrimp to open them upso they lay flat. Dust in flour then egg wash and then parnesan cheese. Make sure your sautee pan is hot add the canola oil and when hot place your shrimp open side down. Cook until they release themselves from the bottom of the pan which they should be golden brown. Turn over, discard the oil, and squeeze the lemon juice around the pan twice. Add 2 1/2 tablespoons of butter and cover for about 2 minutes. Check to make sure the shrimp is translucent plate and pour the sauce over the shrimp. I serve it with risotto.

25 -30 large shrimp, raw and peeled (or jumbo)
3 tablespoons chopped garlic, fresh (see tip) or 3 tablespoons from a jars (see tip)
1 cup fresh parsley, chopped
2 teaspoons paprika
fresh ground sea salt, to taste (see tip)
fresh ground pepper, to taste
1/2 cup olive oil
2 tablespoons butter

Steps:

  • In a large Ziplock freezer bag, mix everything except the butter and swish it around good to coat all of the shrimp. Or, mix everything in a large bowl and cover TIGHTLY with Saran wrap.
  • Refrigerate for 1 hour.
  • Preheat large heavy bottom pan with the butter in it on medium. Toss shrimp around for about 10 minutes until pink and lightly browned.
  • TIPS: Do not substitute with garlic powder OR dried parsley! Sea salt is stronger than table salt so use less than normal. Table salt can be substituted.
  • Serve with steak or pasta with a white sauce.
  • I KNOW THIS IS VERY SIMILAR TO MY OTHER SHRIMP RECIPE, BUT I MADE IT THIS WAY TONIGHT AND IT WAS SO UNBELIEVABLE THAT I HAD TO POST IT! EVEN BETTER THAN MY OTHER SHRIMP RECIPE!

1 pound fresh shrimp
1 package dried Italian seasoning

Steps:

  • Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, and sprinkle with one package of dried Italian seasoning. Put in the oven and bake at 350 for 15 minutes. Best Shrimp you will EVER taste:)

1/2 cup dry white wine or broth
3/4 teaspoon kosher salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 3/4 pounds large or extra-large shrimp, shelled
1/3 cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread

Steps:

  • In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
  • Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.
