1 tablespoon red wine vinegar

  • Mix all the vegetables, adding the avocado last or add avocado as you serve it to avoid browning.
  • Combine lime juice, salt, olive oil, red wine vinegar, and pepper in a small bowl with a whisk.
  • Pour the dressing over the vegetable mixture.
  • Stir to combine.
  • Chill.
  • Serve as a salad or with chips.

BEST EVER CILANTRO CORN SALSA

Best Ever Cilantro Corn Salsa image

This is a recipe I have been making for years. It is the number one dish people ask me to bring to parties. It is great with tortilla chips or on top of grilled chicken or steak. It also makes a wonderful filling for vegetarian tacos.

BEST EVER SALSA

Best Ever Salsa image

This recipe is so close to the Salsa served at Pappasitos that you will swear you are there. Every time I serve this people ask for the recipe. Best part is that it is so easy and doesn't require fresh tomatoes so it works all winter.

Time 15m

Yield 6 serving(s)

Number Of Ingredients 7

1 (28 ounce) can diced tomatoes
1 medium sweet onion, chopped
1 teaspoon ground cumin
1 teaspoon salt
2 fresh garlic cloves, chopped
2 -3 jalapeno peppers
1 bunch fresh cilantro

Steps:

  • Put all ingredients into blender and mix or pulse until blended.
  • Do not liquify.
  • Note: Seeds in peppers determine heat so remove if you like mild salsa. I use 2 peppers and seeds from one for medium to hot salsa.
