One 2 1/4" skinless center cut salmon fillet about 1 inch thick
1 1/2 tsp dried thyme
3/4 tsp kosher salt
1/2 tsp freshly ground black pepper
3 Tbs. unsalted butter
2 Tbs. aged balsamic vinegar

Steps:

  • Cut the salmon fillets into 6 portions and lightly spray each side with cooking spray. Sprinkle with thyme, salt and black pepper. In a large skillet, heat butter over medium high heat until foamy. Carefully place the fillets in the skillet and cook the salmon being careful not to move the fillets until the edges begin to crisp, approximately 2 minutes. Decrease the heat to medium and cook until the fish is golden brown about 1 minute more. Turn fillets and keep cooking until medium rare and skin is crisped, approximately 3 minutesm depending on their thickness. Remove fillets to serving plate and drizzle with balsamic vinegar.
