There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

1 yellow onion, chopped
1 red bell pepper, chopped
1 Anaheim chile pepper, chopped
2 red jalapeno pepper, chopped

¼ cup Worcestershire sauce
1 pinch garlic powder, or to taste
2 beef bouillon cubes
1 (12 fluid ounce) can or bottle light beer (such as Coors®)
1 (28 ounce) can crushed San Marzano tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
1 (12 ounce) can tomato paste
½ cup white wine
2 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon brown sugar
1 tablespoon chipotle pepper sauce
2 ½ teaspoons dried basil
1 ½ teaspoons smoked paprika

Steps:

  • Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. Stir beef mixture into pepper mixture.
  • Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.
  • Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
  • Blend sour cream, cilantro, and remaining 1/2 teaspoon cumin in a food processor until smooth. Serve sour cream mixture with chili.

3 dried ancho or guajillo chiles
1 to 2 cups boiling water
2 tablespoons tomato paste
3 garlic cloves
1/4 cup chili powder
1-1/2 teaspoons smoked paprika

1 pound ground beef
1-1/2 teaspoons Montreal steak seasoning
2 pounds beef tri-tip roast, cut into 1/2-inch cubes
2 teaspoons salt, divided
2 teaspoons coarsely ground pepper, divided
2 tablespoons canola oil, divided
1 large onion, chopped (about 2 cups)
1 poblano pepper, seeded and chopped
1 teaspoon dried oregano
1-1/2 teaspoons crushed red pepper flakes
3 cups beef stock
1 bottle (12 ounces) beer
2 cans (14-1/2 ounces each ) fire-roasted diced tomatoes, undrained
1 can (16 ounces) kidney beans, drained
3 tablespoons masa harina

Steps:

  • Combine chiles and enough boiling water to cover; let stand until softened, about 15 minutes. Drain, reserving 1/3 cup of the soaking liquid. Discard stems and seeds. Process chiles, tomato paste, garlic and reserved liquid until smooth. , In a small skillet, toast chili powder, paprika and cumin over medium heat until aromatic, 3-4 minutes; remove and set aside. In a Dutch oven, cook and stir ground beef and steak seasoning over medium-high heat until beef is no longer pink, about 5 minutes; remove and drain. , Sprinkle steak cubes with 1 teaspoon each salt and pepper. In same Dutch oven, brown beef in batches in 1 tablespoon oil over medium-high heat; remove and set aside. Saute onion and poblano pepper in the remaining 1 tablespoon oil until tender, about 5 minutes. Stir in toasted spices, oregano and pepper flakes. Add the cooked meats along with stock, beer, tomatoes, beans, remaining salt and pepper, and chile paste mixture. Cook over medium heat 20 minutes; reduce heat to low. Stir in masa and simmer 30-45 minutes longer. Serve with desired toppings. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

1 large chopped onion (yellow or white)
4 minced garlic cloves
2 tablespoons chili powder

1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste

1 cup dark beer (Newcastle or ?)

  • Cook ground beef in large frying pan.
  • While cooking, stir and chop beef with spatula to crumble.
  • Continue cooking for about 7 minutes or until the meat is brown and cooked through.
  • Add the onion, garlic, chili powder, salt, cumin, oregano, cayenne, and tabasco.
  • Cook while stirring, until onion is translucent, about 5 minutes.
  • Transfer to large pot. Add the Kidney beans (juice and all), canned tomatoes (juice and all), the tomato paste, jalapenos (yep, juice and all), splenda (or sugar), and beer.
  • Stir well and bring to a boil.
  • Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally.
  • Top individual bowls of chili with a dollop of sour cream and a generous sprinkle of cheese.

Rachael's Recipe Notes: Yes, you are reading the ingredients correctly - fennel seed, ground cinnamon and unsweetened baking cocoa are what make this delicious! I make this in a 4 quart stainless steel pan on the stove top, but after sweating the onions and peppers and browning the meat, if you want to put this in a crockpot and cook on LOW for 4 to 5 hours, it's just as good! If you like, you can add a can of diced tomatoes, undrained (15 to 16 ounces), at the same time you add the tomato paste. Sometimes my family likes the diced tomatoes, sometimes they don't. I serve this with homemade jalepeno cornbread and/or crispy tortilla strips.

1 small yellow bell pepper, coarsely chopped

2 -3 tablespoons chili powder (more to taste if you like a good KICK!)
2 (6 ounce) cans tomato paste
1 teaspoon ground cumin
1/8 teaspoon unsweetened baking cocoa
1/8 teaspoon ground cinnamon
2 teaspoons fennel seeds
2 teaspoons red pepper flakes (more to taste if you like it very hot!)
2 lbs beans (I use dark red kidney and pink beans or light red kidney beans, 15 to 16 ounces each can, drained an)
8 ounces green chilies, canned, chopped & undrained (4 ounces each)
3 cups water

Steps:

  • In a very large, deep pre-heated skillet, add olive oil, then add chopped onions and peppers. I also add a little bit of water to the pan (maybe tablespoon or two); cover and cook on medium-low heat, just until onions and peppers begin to sweat. Uncover and add ground beef, using spatula to break up chunks of meat. Cover and cook on low heat until meat is cooked through, about 20 minutes or so (I add a little water during the cooking process). While the meat is cooking, I add the chili powder. I start with 1 Tbsp., and add as I go.
  • Once the meat is browned, add the tomato paste, stirring to incorporate completely (I also add more water at this point, enough to make it start looking like chili, a nice, thick chili). Cover and cook on lower heat (slow simmer) for 30 minutes.
  • Add the 5 ingredients, stir to incorporate, cover and cook on low (at a slow simmer) for another 60 minutes.
  • Add beans and green chiles (including the "juice"), stirring to incorporate. At this point, add more water if you need to do so. Cover and cook on low (slow simmer) for another 40 minutes.
  • Total cooking time is about 2-1/2 to 3 hours on stovetop. I know this sounds like a long time, but it really needs that much time to simmer and let the flavors blend.
  • Serve with chopped red onion, sour cream, hot sauce, and shredded cheddar, colby and/or Jack cheese(s).

8 lbs cubed lean pork
6 slices bacon
28 ounces diced tomatoes
28 ounces green chilies
1 1/2 gallons chicken broth
4 ounces chopped jalapenos (hot)
3/4 teaspoon ground cumin
3/4 teaspoon granulated garlic
3/4 teaspoon paprika
3/4 teaspoon oregano
3/4 teaspoon basil
3/4 teaspoon parsley
3/4 teaspoon salt
3/4 teaspoon white pepper
3/4 teaspoon cayenne pepper

Steps:

  • Start chicken broth in a large pot, (to a slow simmer).
  • Brown bacon, save grease (make a bacon sandwich).
  • Brown cubed pork in bacon grease, add enough flour to absorb grease, and lightly brown flour.
  • Add pork to simmering chicken broth, whisk vigorously (to avoid lumps).
  • simmer for 45 minutes.
  • Add rest of the ingredients,and simmer for another 45 minutes.
  • Serve with warm tortillas.

2 (28 ounce) cans crushed tomatoes, juice included
2 (28 ounce) cans dark red kidney beans (or 1 can red beans and 1 can of pinto beans)
1 (12 ounce) bottle pilsner beer (or of your choice)
4 -6 stalks green onions, chopped
4 fresh garlic cloves, minced
1 large red bell pepper, diced
2 jalapenos (stemmed, seeded, and minced) or 2 serrano peppers (stemmed, seeded, and minced)
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon paprika
1/4 teaspoon cayenne powder
1 1/2 tablespoons dried oregano
1 tablespoon adobo seasoning
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt (or to taste)
1/4 cup water (or stock to thin out adding more if necessary)

Steps:

  • In a skillet, brown the ground meat, remove and drain well. In the same pan fry the onions, garlic, and peppers, until the onions are translucent and peppers begin to wilt.
  • In a large stew pot or Dutch oven, add meat and vegetables and stir over low heat.
  • Add spices and seasonings, stir.
  • Add crushed tomatoes.
  • Add kidney beans that have been drained and rinsed.
  • Add beer, stir.

6 poblano peppers
8 ounces bacon, cut into 1/2" pieces
1/4 cup bacon fat, rendered from the bacon
2 medium sweet onions, diced
2 red bell pepper, seeds removed and diced
2 jalapeño peppers, seeds removed and diced
1 bulb garlic, minced (10-12 cloves)
1 lb beef chuck, cut into 1/2" chunks
2 lbs ground beef
1 lb sweet Italian sausage, casings removed
3 tbsp chili powder
1 tbsp cumin
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
2 tsp ground coriander
2 tsp sea salt
2 tsp black pepper
1/4 tsp cayenne pepper (or less depending on heat)
2 (8 oz cans) tomato sauce
1 (14.5 oz can) diced tomatoes
1 (6 oz can) tomato paste
2 cups low-sodium chicken or beef broth
1 tbsp Worcestershire sauce
2 (15 oz cans) black beans, rinsed and drained
2 (15 oz cans) can kidney beans, rinsed and drained
cheddar cheese, sour cream, chips and diced avocado for toppings

Steps:

  • Preheat the oven to broil (500ºF) Set an oven rack at the top, directly under the broiler. Spread out the poblano peppers on a tray, and roast for 15-20 minutes, turning them every 5 minutes. Place the peppers in a bowl and tightly cover with plastic wrap. Let them steam for 15 minutes and then peel off the skin. Remove the seeds and membranes and chop.
  • Heat a large Dutch oven over medium-high heat and add bacon, cooking until almost crisp. Remove the bacon and reserve about 1/4 cup of bacon grease.
  • Add the chopped poblanos, onions, red bell peppers and jalapeños, cooking for about 5 minutes or until softened. Add the garlic and cook for another minute. Transfer the cooked veggies to a bowl and set aside.
  • With the Dutch oven still on medium-high heat, add the beef chuck and brown on all sides, about 4 minutes. Stir in the ground beef and sausage. Break it up with a spoon and cook for 7-10 minutes or until no longer pink. Add the veggies as well as the bacon back in.
  • Add chili powder, cumin, paprika, garlic powder, onion powder, coriander, salt, black pepper and cayenne pepper and cook for another minute.
  • Stir in tomato sauce, diced tomatoes, tomato paste, broth and Worcestershire sauce. Add beans and bring to a boil. Reduce to simmer and cook for 2 hours, uncovered. Top with favorite toppings.

½ onion, cut into 2 pieces
1 serrano pepper
2 cloves garlic, unpeeled
½ cup chopped fresh cilantro
1 teaspoon salt
4 cups chicken broth
2 (15 ounce) cans great Northern beans, drained
2 skinless, boneless chicken breast halves
2 teaspoons ground cumin
½ teaspoon salt, or to taste
4 Hatch chile peppers, halved and seeded
½ cup shredded jalapeno Jack cheese

Steps:

  • Place tomatillos, onion, serrano pepper, and garlic in a hot cast iron skillet and cook until blackened, turning frequently, 7 to 10 minutes. Peel garlic cloves and transfer to a blender. Add the blackened vegetables, cilantro, and salt; blend until smooth.
  • Place chicken broth, beans, chicken, cumin, and salt in a slow cooker. Pour in blended salsa. Cook on High until chicken is tender, 3 to 3 1/2 hours.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place Hatch peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 10 minutes.
  • Remove 1 cup beans from the slow cooker; mash and stir back in. Remove chicken breasts and shred using 2 forks. Stir into the slow cooker. Peel broiled peppers and dice flesh into 1-inch pieces; add to the slow cooker. Sprinkle in Jack cheese.
  • Cook until chili is warmed through, about 30 minutes more.
