There are about as many fried chicken recipes as there are cooks, but this one has long been my favorite. I clipped it from the cooking section of my hometown newspaper many years ago. Full of flavor!

TO PREPARE CHICKEN:
6 boneless chicken breasts, with or without skin
water to cover chicken
3 Tbsp salt
DRY COATING:
4 c flour
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp sweet paprika
1/4 tsp celery salt
1 tsp msg (accent) optional
EGG MIXTURE:
4 eggs
1/4 tsp black pepper
1/4 tsp onion powder
1/4 tsp celery salt

Steps:

  • 1. Cover chicken with water. Add salt and mix well. Soak chicken in salt water in refrigerator for 24 hours.
  • 2. Mix together all dry ingredients; set aside.
  • 3. In a medium size bowl, beat eggs, then add pepper, garlic and onion powders and celery salt.
  • 4. Rinse chicken lightly, if desired. Roll chicken in the flour mixture; shake off excess. Roll in the egg mixture, then back in the flour mixture.
  • 5. Fry in a large skillet with 1/2 inch of melted shortening at medium to medium-high heat until bottom side is golden brown; turn and fry top side. It will take about 8 - 10 minutes each side - check for doneness. Drain on paper towels.

Delectable pork cubes, coated, skewered and slow simmered in chicken broth and herbs. Serve over rice, noodles, or mashed potatoes.

1 ¼ pounds pork loin, cut into 1 inch cubes
1 ½ cups all-purpose flour for coating
salt and pepper to taste
2 cups chicken broth
1 pinch dried thyme
1 bay leaf

Steps:

  • Mix salt, pepper and flour in a bowl. Coat pork cubes with flour mixture. Slide pork onto skewers
  • In a skillet, brown pork skewers on all sides in a small amount of vegetable oil. Drain off any excess oil.
  • Add chicken broth, thyme and bay leaf to skillet. Scrape up any brown bits. Reduce heat and simmer 1 hour or until meat is tender and sauce has thickened.
