Creamy homemade ice cream swirled with the simple Berry Sauce that we've loved for years was an inspired idea the other day when I saw a jar of leftover sauce in the fridge.

1 recipe for Simple Berry Sauce
1 1/2 cups heavy cream
1 1/2 cups milk
2/3 cup sugar
1/4 teaspoon kosher salt
1 teaspoon vanilla extract

Steps:

  • Prepare the Berry Sauce recipe and set aside to cool a bit. Whisk together the cream, milk, sugar, salt, and vanilla. Add 1/3 cup of the Berry Sauce and stir to combine. Place the remaining berry sauce in the refrigerator to chill while the ice cream is churning.
  • Pour into your ice cream maker and freeze according to the manufacturer's instructions. Scoop the churned ice cream into a freezer container, adding a few spoonfuls of the COLD berry sauce along with the ice cream. Swirl lightly with a knife and freeze until firm.
  • Serve with remaining berry sauce on top. Enjoy!

Warm Berry Sauce poured over cold ice cream is truly one of my favorite desserts. I make this sauce year-round and every time I serve it, it gets raves.

2 cups frozen berries ((I typically use a mixture of cherries, strawberries, blueberries and raspberries.))
1/3 cup sugar

Steps:

  • Place the frozen fruit and the sugar in a small saucepan. Set the heat to low, stirring occasionally, until the berries have softened. This should take between 5-10 minutes.
  • Once the berries are mostly thawed, increase the heat to medium. Mash them with a potato masher and stir constantly while the liquid simmers for about 2 minutes.
  • Pour the warm mixture over vanilla ice cream or let cool and then serve with the dessert of your choice. Store in the refrigerator until ready to use. Enjoy!

Tofu Chocolate Ice Cream with Mixed Berry Sauce and Whipped Coconut Cream image

One 13.5-ounce can coconut milk, chilled overnight
3/4 cup agave syrup
One 16-ounce package silken tofu
1/2 cup cocoa powder
1 tablespoon coconut oil
1 teaspoon vanilla bean paste
Pinch kosher salt
One 12-ounce package frozen mixed berry blend
1/2 cup agave syrup
2 tablespoons lemon juice

Steps:

  • For the ice cream: Place a metal loaf pan in the freezer to chill.
  • Using a spoon, remove the solidified cream from the top of the coconut milk, leaving the coconut liquid behind in the bottom of the can. Place the cream in a large mixing bowl. Add 1/4 cup agave, then beat with a hand mixer until soft peaks form, 2 to 3 minutes. If the mixture is lumpy, add a little bit of the coconut liquid from the bottom of the can.
  • Combine the tofu, cocoa powder, coconut oil, vanilla bean paste, salt and remaining 1/2 cup agave in a blender and blend until smooth, about 2 minutes. Pour the mixture into the bowl with the whipped coconut and fold until combined. Transfer to the chilled loaf pan and place in the freezer until firm, 4 to 6 hours, or up to overnight.
  • For the mixed berry sauce: Add the berries, agave and lemon juice to a medium saucepot over medium heat. Bring to a boil, then reduce heat and simmer until it starts to thicken, 5 to 7 minutes. Remove from the heat and add to a clean blender; blend, making sure to remove the center of the blender top, for about 30 seconds. Pour into a heatproof container and let cool slightly before serving, about 15 minutes.
  • Scoop the ice cream into bowls and top with the berry sauce.

3 cups mixed raspberries and blueberries
2 to 3 tablespoons sugar
Zest of 1/2 lemon and juice of 1 lemon

Steps:

  • Combine the berries, sugar, lemon zest and juice in a medium saucepan set over medium heat. Bring to a boil and cook until the berries burst and the liquid starts to thicken, about 5 minutes.
  • Strain the mixture through a fine-mesh sieve, forcing the berries through by pushing and scraping with a rubber spatula. The more you force through, the thicker the sauce will be (the pulp closest to the seeds contains the most pectin, which is a natural thickener). Let cool completely and store in the refrigerator until ready to serve.

500g mixed frozen berries (blackberries, blueberries, raspberries, redcurrants)
142ml carton double cream
140g white chocolate
1 tbsp white rum (optional)

Steps:

  • Make the sauce. Pour the cream into a small saucepan and break in the chocolate. Heat gently, stirring, until the chocolate melts into a smooth sauce. Take care not to overheat or the chocolate will seize into a hard lump. Remove from the heat and stir in the rum, if using.
  • Scatter the frozen berries on 4 dessert plates or in shallow bowls. Pour the hot chocolate sauce over the fruits and serve immediately, as the fruits start to defrost.

34 cup baking cocoa
3/4 cup heavy whipping cream

  • Puree raspberries in a food processor or blender. Press through a fine sieve; set aside. , In a saucepan, combine cocoa and cream. Add sugar, corn syrup, butter and raspberries; mix well. Summer fruits with a truly scrumptious white chocolate sauce

350g mixed summer berries, such as raspberries , blueberries, tayberries and small strawberries that have been hulled and quartered
100g white chocolate , broken into pieces
2 tbsp double cream

Steps:

  • Pile the berries into pretty glasses or onto plates and freeze for 20 mins - press the fast-freeze button if you have one. The berries should become iced but not frozen solid.
  • When ready, place the chocolate in a non-metallic bowl with the cream and microwave on High for 1 min. Check to see if it is soft enough to stir into a sauce, if not give it 30 secs, then stir again. Leave to cool slightly, stirring occasionally. To serve, pour the chocolate sauce over the iced berries.
