3 tablespoons paprika
1 tablespoon salt
1 tablespoon cayenne
1 teaspoon ground fenugreek
1 teaspoon ground ginger
1 teaspoon onion powder
½ teaspoon ground cardamom
½ teaspoon ground nutmeg
½ teaspoon garlic powder
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon allspice
12 chicken drumettes
½ cup flour
1 tablespoon baking powder
1 tablespoon cornstarch
2 tablespoons unsalted butter

Steps:

  • In a medium bowl, combine the paprika, salt, cayenne, fenugreek, ginger, onion powder, cardamom, nutmeg, garlic powder, cloves cinnamon, and allspice. Mix well.
  • Save two tablespoons of spice mix. Set aside.
  • Add the chicken drumettes to the bowl with the spice mixture and toss to coat evenly. Marinate in the fridge at least 30 minutes, up to overnight.
  • In a small bowl, combine the flour, baking powder, and cornstarch. Sprinkle the flour mixture over the marinated chicken. Toss them until well-coated.
  • Preheat the oven to 425˚F (220˚C).
  • Place the chicken on a wire rack set over a parchment paper-lined baking sheet. Bake them for 30-40 minutes or chicken is slightly browned.
  • In a small saucepan, melt the butter. Once the butter is melted, add the reserved 2 tablespoons spice mix and stir to combine.
  • Drizzle the spice butter mixture over the drumettes.

3 garlic cloves, quartered
1 small onion, coarsely chopped
one 1-inch piece fresh ginger, peeled and chopped
3 tablespoons sweet paprika
2 teaspoons kosher salt
1 teaspoon ground coriander
1 teaspoon fresh ground pepper
1 teaspoon finely grated lemon zest
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
4 chicken breast halves, on the bone with skin (2 pounds)
lemon wedge, for serving

Steps:

  • In a food processor, combine all of the ingredients except the chicken and lemon wedges and process to a paste. Spread the paste all over the chicken and refrigerate for at least 1 hour or up to 4 hours.
  • Light a charcoal grill. When the coals are hot, move them to one side of the grill to create a high-heat zone. Oil the grate and place the chicken on it, skin side up, opposite the coals. Cover and grill the chicken until browned and just cooked through, about 30 minutes. Turn the breasts over and grill over high heat until the skin is crisp and lightly charred, about 2 minutes longer. Let the breasts rest for 5 minutes, then serve with lemon wedges.

I love berbere spice, a classic Ethiopian spice blend, but it never occurred to me to make my own. Actually, authentic berbere spice would use whole spice seeds/pods, toasted, and ground. But I usually toast the spices during the cooking process. Berbere is one of the most delicious and versatile spice mixes ever.

¼ cup paprika
1 tablespoon cayenne pepper
1 teaspoon onion powder
1 teaspoon ground ginger

½ teaspoon garlic powder
