SWEET POTATO-BEET HASH



Sweet Potato-Beet Hash image

1 large sweet potato, peeled and cut into 1/4-inch dice
1 large fresh beet, peeled and cut into 1/4-inch dice
1 tablespoon olive oil
Kosher salt and freshly ground pepper
1 slice bacon, cut into lardons
1 small onion, diced

Steps:

  • Preheat the oven to 400 degrees F. Toss the cut sweet potatoes and beets with olive oil and season with salt and pepper. Place on a parchment-lined baking sheet and bake until vegetables are golden, about 25 to 30 minutes, stirring every 10 minutes.
  • Meanwhile, in a medium skillet over medium-low heat, add the bacon and render the fat until the bacon is crispy. Add the onions and season with salt, and continue to cook until the onions start to caramelize and turn golden, about 10 minutes. Add the roasted sweet potatoes and beets to the pan and stir to combine cooking another 5 minutes. Taste and adjust the seasoning, if necessary and serve immediately.

Think beets are high maintenance? Think again. Peeled and diced, they tenderize in 10 minutes. Poached eggs also work in this recipe -- simply spoon over the hash.

1 pound beets, peeled and diced
1/2 pound Yukon Gold potatoes, scrubbed and diced
Coarse salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 small onion, diced
2 tablespoons chopped fresh parsley
4 large eggs

Steps:

  • In a high-sided skillet, cover beets and potatoes with water and bring to a boil. Season with salt and cook until tender, about 7 minutes. Drain and wipe out skillet.
  • Heat oil in skillet over medium-high heat. Add boiled beets and potatoes and cook until potatoes begin to turn golden, about 4 minutes. Reduce heat to medium, add onion, and cook, stirring, until tender, about 4 minutes. Adjust seasoning and stir in parsley.
  • Make four wide wells in the hash. Crack one egg into each and season egg with salt. Cook until whites set but yolks are still runny, 5 to 6 minutes.

BEET GREENS AND POTATO HASH



Beet Greens and Potato Hash image

This recipe begins as if you were making hash brown potatoes, but then you add beets and their greens and end up with a much more nutritious, and decidedly pink, dish. If you have leftovers and want to do something different with them, warm and toss this hash with a vinaigrette for a delicious potato salad.

1 pound red boiling potatoes or baby Yukon golds, cut in small dice about 1/2 inch
1 bunch beets, roasted, peeled and cut in small dice about 1/2 inch
1 generous bunch of beet greens, stemmed and cleaned in 2 changes of water
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1 teaspoon fresh thyme leaves
Salt
freshly ground pepper
1 tablespoon vinegar - sherry, red wine or Champagne (optional)
Poached eggs, if desired, for serving optional

Steps:

  • Place the diced potatoes in a steamer above an inch of boiling water. Cover and steam for 10 minutes. Add the beet greens to the steamer, and steam for five minutes until wilted; turn them halfway through so they cook evenly. Turn off the heat underneath the steamer. With tongs, remove the greens to a bowl, and rinse them with cold water. Drain, squeeze out excess water and chop. Set the potatoes aside.
  • Heat the olive oil over medium heat in a large, heavy nonstick skillet. Add the potatoes, turn the heat to medium-high, and cook, stirring from time to time, until the potatoes are lightly browned, about five minutes. Stir in the garlic, beets, greens, thyme, salt and pepper. Cook, stirring often, for another five minutes, pressing the mixture down into the pan so the edges brown. Taste, and adjust salt and pepper. Stir in the vinegar if using. Serve, topped with a poached egg if desired.

1 pound medium Yukon Gold potatoes (about 3), diced
Kosher salt
5 tablespoons extra-virgin olive oil, plus more for the pan
Freshly ground pepper
1 small bunch red Swiss chard, leaves torn and stems sliced
4 scallions, thinly sliced
3/4 teaspoon dried thyme, lightly crushed with your fingers
2 8.8-ounce packages fully cooked beets, diced
4 cloves garlic, finely chopped
6 large eggs
6 thin slices pimiento-stuffed olives (2 to 3 olives)
Hot sauce, for serving

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 1 inch. Season with salt and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are barely tender, 4 to 5 minutes. Drain well and let cool at least 5 minutes.
  • Heat 1/4 cup olive oil in a large nonstick skillet over medium-high heat. Add the potatoes, season with salt and pepper and cook, stirring occasionally, until the potatoes are browned and crisp, 10 to 15 minutes. Remove to a large plate, leaving the excess oil behind.
  • Add the chard stems, scallions and thyme to the skillet and cook, stirring, until crisp-tender, about 3 minutes; season with salt and pepper. Stir in the beets and garlic until combined, then gradually add the chard leaves, stirring to wilt before adding more. Add 2 tablespoons water and continue to cook until the greens are wilted and tender, about 5 minutes.
  • Return the potatoes to the skillet. Cook, stirring, until heated through, 2 to 3 minutes. Season with salt and pepper.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a second large nonstick skillet over medium-high heat. Working in batches, crack the eggs into the hot skillet; season with salt and pepper. Cook until the whites are almost set, 3 to 5 minutes. Top each yolk with a slice of pimiento-stuffed olive, then cover the pan to finish fully cooking the white around the yolk, about 2 minutes.
  • Top the hash with the eggs. Drizzle with hot sauce.

1 large fresh beet, peeled and cut into 1/4-inch dice (I dice mine smaller than the potato so it softens)
1 tablespoon olive oil
kosher salt (I do not use the salt, for medical reasons)
fresh ground black pepper
1 slice bacon, cut into lardons (I use 2 slices of low-sodium bacon, for medical reasons)
1 small onion, diced

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the cut sweet potatoes and beets with olive oil and season with salt and pepper.

BRAISED LOBSTER WITH GRILLED ASPARAGUS, POTATO HASH, WHITE WINE BEET CREAM, AND TEQUILA LIME RELISH



Braised Lobster with Grilled Asparagus, Potato Hash, White Wine Beet Cream, and Tequila Lime Relish image

1/4 cup diced red bell pepper
2 limes, segmented
2 limes, zested and blanched
2 ounces tequila
1 small red onion, julienne
2 tablespoons minced chipotle chiles
2 tablespoons white wine
1 tablespoon red wine vinegar
1 tablespoon chopped cilantro
1/2 cup beet juice
2 cups heavy cream
Salt and freshly ground black pepper
1 cup white wine
4 potatoes, cubed
4 lobster tails
1 lemon, juiced
1 tablespoon butter, plus 1 teaspoon butter
2 cups sliced zucchini
1 pound asparagus
2 cups sliced leeks
2 tomatoes, julienne
4 cups baby spinach
Salt and freshly ground black pepper

Steps:

  • To prepare the relish, combine all of the ingredients in a large bowl, mix well, and let stand for 2 hours before serving.
  • To make the beet cream, combine the beet juice, heavy cream, and white wine and mix well. Season with salt and pepper.
  • Preheat oven to 375 degrees F.
  • Blanch the cubed potatoes in boiling water, and set aside. Par-boil the lobster tails for 6 minutes in the shells, and then shock them in ice water. Remove the tails from the shells, cube, and set aside.
  • Using a large pan, place the cubed lobster with lemon juice, 1 tablespoon butter, salt and pepper, and place in the oven until cooked to medium, or approximately 5 minutes.
  • Saute the zucchini, asparagus, and leeks, until just tender, about 5 minutes, and add them to the potatoes. At the last moment add the tomatoes and spinach, just to heat through and wilt. Finish off with 1 teaspoon of butter and season with salt and pepper.
  • To serve, place the potato mixture in the center of each of 4 plates and top with the cubed lobster tail. Drizzle the white wine beet cream around the plates and add the tequila relish to the sides of the lobster.

6 medium sized beets, slivered on a mandolin slicer
1 medium onion, diced
3 cloves garlic, diced
1 can black beans (or 1 1/2 cups home cooked) mashed
1/4 cup dates, chopped fine
3/4 cup brown rice, prepared
1 large egg
1/3 cup steel cut oats
2 tablespoons olive oil
1 heaping tablespoon smoked paprika
2 teaspoons spicy mustard
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon herbs de provence
1 teaspoon kosher salt
2 tablespoons apple cider vinegar
olive oil for frying

Steps:

  • Combine all ingredients and mix thoroughly. Preheat a heavy cast iron skillet on medium high heat. Add a tablespoon of olive oil to hot pan and and scoop out about a cup and a half of of the mixture and add it to the pan. Cook 3-4 minutes per side until dark crust forms. You may refrigerate unused mixture for up to 3 days or portion and freeze. Serving suggestions: Serve hot with poached eggs, sour cream and salsa, or even ketchup.

2 cups peeled, cubed Yukon gold potatoes
2 cups peeled, cubed sweet potatoes
1/2 tablespoon chopped fresh sage
3 cloves garlic, minced
1 cup cubed cooked beets
1/4 teaspoon each salt and pepper
4 eggs
Frisee or curly endive salad
Dijon vinaigrette dressing

Steps:

  • Saute 1 cup finely chopped onion in a skillet in 1 tablespoon olive oil. Add 2 cups peeled, cubed Yukon gold potatoes and 2 cups peeled, cubed sweet potatoes. Add 1/2 tablespoon chopped fresh sage, 3 cloves garlic, minced; cook until tender, about 25 minutes. Add 1 cup cubed cooked beets and 1/4 teaspoon each salt and pepper; cook 10 minutes. Meanwhile, poach 4 eggs. Divide hash among four plates; top with a poached egg. Sprinkle with more sage if you like. Serve with frisee or curly endive salad dressed with a Dijon vinaigrette.
