SEARED BEEF, GRILLED PEPPER & CAPER BERRY



Seared beef, grilled pepper & caper berry image

This Spanish beef, pepper and caper berry skewer is great for a tapas evening or dinner party

Number Of Ingredients 6

400g sirloin steak in one piece, fat trimmed
2tbsp olive oil
2 garlic cloves, crushed
4 piquillo peppers, or 2 regular ready-roasted red peppers, sliced into strips
12 caper berries
12 cocktail sticks

Steps:

  • Heat a griddle pan until blisteringly hot. Season the steak all over with lots of ground black pepper.
  • Brush the steak very lightly with a little of the oil and mix the rest of the oil with the garlic. Cook on the griddle for 3 mins each side for medium rare. When cooked to your liking, brush the steak all over with the garlicky oil and sprinkle with salt. Remove to a plate and leave to rest for 5 mins.
  • Cut the steak into small chunks and top each chunk with a twirl of red pepper and a caper berry. Push a cocktail stick through everything to hold it together, drizzle over the oil and grind over more pepper.

Beef and Molasses Short Ribs Recipe image

Number Of Ingredients 5

3 pounds beef short ribs, trimmed of fat
Salt and pepper, to taste
1 teaspoon olive oil
12 ounces beer
1/2 cup molasses

Steps:

  • Follow manufacturer's directions and heat pressure cooker to high. Season ribs with salt and pepper. Add olive oil to cooker. When hot, add ribs and brown on all sides. Remove ribs from pot and pour off the fat. Place ribs back in pot with beer and molasses. Cover and cook 30 minutes at 15 pounds pressure. Adjust heat to maintain high pressure. After 30 minutes, turn off heat and let the pressure drop naturally. Remove ribs from pot and reduce the sauce until thick enough to coat the back of a spoon. Serve with roasted potatoes and a vegetable, if desired.

2 t sweet paprika
1 t dark brown sugar
Kosher salt & pepper
1 1/2 lb. sirloin steak
1/4 C olive oil
3 thinly sliced garlic cloves
2 med. shallots, thinly sliced
1 T drained capers
1 t chopped fresh sage
8 piquillo peppers ( roasted Spanish peppers) seeded & chopped
1 t Dijon mustard
1/2 t Worcestershire sauce

Steps:

  • In small bowl, mix paprika with sugar, 2 t salt & 1 t pepper. Pat over all the meat. In small skillet, heat oil over mod. heat. Add garlic, shallots & capers & cook til softened, 3 min. Stir in sage & cook for 1 min. Add piquillos, mustard & Worcestershire; simmer over mod heat 15 min., stirring occasionally. Light grill & grill steak over mod high heat 12 min., turning once, until thermometer registers 125-130. Let rest 5 min, then slice & serve with pepper sauce.

2 tablespoons vegetable oil
1-1/4 pounds beef top round steak or top sirloin steak, cut into 1-inch cubes
1 garlic clove, minced
1 medium onion, cut into wedges
1 medium red bell pepper, seeded and cut into strips
1 medium green bell pepper, seeded and cut into strips
1 can (10-1/2 ounces) beef broth
1/4 cup water
3 tablespoons cornstarch
Salt and pepper to taste
Hot cooked rice

Steps:

  • Heat oil in skillet, brown beef on all sides. Add the garlic and continue to cook for 2 minutes. Add onion, peppers and broth; cover and simmer 20 minutes. , Combine water and cornstarch; stir into broth. Cook and stir until gravy is thick and shiny. Add seasonings. Serve over hot cooked rice.
