2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
1 yellow onion, finely chopped (3/4 cup)
1 medium carrot, finely chopped (3/4 cup)
1 rib celery, finely chopped (1/2 cup)
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh thyme
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
2 pounds 85% lean ground chuck
1 large egg, lightly beaten
1 tablespoon light brown sugar

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.
  • Cook the Vegetables:Pulse vegetables in food processor until finely chopped (or do so by hand). Heat olive oil in a large skillet over medium-high. Add vegetables, thyme, and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until vegetables have softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together remaining 1/2 cup ketchup and the brown sugar for glaze; set aside. In a large bowl, combine vegetable mixture with ground chuck, egg, 1/2 cup breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined.
  • Bake and Let Cool:On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with glaze. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes, then serve with comforting sides, like mashed potatoes. and sauteed broccolini.

I got the idea of using sausage in this from my hubby, and I built it from there. This makes an excelent, juicy, and very tasty meat loaf. Note: I mince my onions because I like the flavor, I just don't want to know they are there, but obviously you can chop them to your liking.

Steps:

  • Preheat oven to 350*.
  • In a large bowl, combine beef, sausage, egg, crumbs, onion, water, garlic powder and seasoned salt.
  • Mix together until all the ingredients are incorporated.
  • Lightly spray baking dish (I use a glass, 8X10).
  • Move meat mixture to baking dish, and press to the sides.
  • Squirt ketchup across the top, or spread with a brush.

1 small onion, chopped
1 cup milk
1 cup seasoned bread crumbs

1 teaspoon dried rosemary

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch loaf pan with cooking spray.

1 cup fresh or frozen cranberries, thawed
2 tablespoons ketchup
1 tablespoon honey
1 tablespoon sriracha
2 1/2 teaspoons Dijon mustard

1 small onion

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
  • Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
  • Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
  • Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. Brush the meatloaf on all sides with the remaining glaze and bake until a thermometer inserted into the center of the meatloaf registers 155 degrees F, 30 to 35 minutes. Garnish with rosemary sprigs before serving.

This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.

2 teaspoons kosher salt, divided
½ cup diced yellow onion

2 large eggs, beaten

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Very generously grease a loaf pan.
  • Heat olive oil in a large skillet over high heat. Add mushrooms and 1 teaspoon kosher salt and sauté until nicely browned and juices have evaporated, about 10 minutes. Stir in onion and cook until soft, another 5 to 7 minutes.
  • Add celery, tomato paste, and beef base; cook and stir until tomato paste begins to toast on the bottom of the pan, about 3 minutes. Stir in water and turn off the heat; let sit for about 3 minutes.
  • Transfer mushroom mixture into a food processor. Add cooked lentils and pulse until finely chopped but not pureed.
  • Transfer to a mixing bowl and add eggs, soy sauce, Worcestershire sauce, onion powder, garlic powder, pepper, remaining 1 teaspoon salt, oregano, thyme, cayenne, ketchup, bread crumbs, oats, and Parmigiano-Reggiano cheese. Mix until thoroughly combined.
  • Transfer mixture into the prepared loaf pan, then wrap with foil and place on a sheet pan.
  • Bake in the center of the preheated oven until firm to the touch, about 1 hour.
  • Remove the loaf from the oven and place on a wire rack. Remove the foil and place it on the baking sheet. Grease the foil with 2 teaspoons olive oil. Let the loaf sit for 10 to 15 minutes, and increase the oven temperature to 450 degrees F (230 degrees C).
  • While the loaf is resting, make the glaze: Whisk ketchup, Dijon mustard, and brown sugar together in a small bowl.
  • Invert the loaf onto the foil and spread glaze all over the surface, mostly on the top but some on the sides.
  • Return to the oven and bake until the glaze is cooked on, 15 to 20 minutes.

3 ounces kosher salt
1 -ounce freshly ground black pepper
8 ounces eggs
4 ounces Dijon mustard
16 ounces vitamin D milk
8 ounces tomato paste
3 pounds panko bread crumbs
10 pounds Kobe beef
Applewood bacon
16 ounces ketchup

Steps:

  • Add the onions, garlic, herbs and salt and pepper to a small saucepan over medium heat and cook until the mixture is soft and aromatic.
  • Preheat the oven to 400 degrees F.
  • In a large bowl add the eggs, mustard, milk and tomato paste. Stir in the bread crumbs mix well.
  • Add the sauteed aromatics, and the beef and combine well. Form the mixture into 9-ounce football shapes and arrange on a parchment lined sheet pan. Wrap each meat loaf with strip of applewood bacon and liberally coat each loaf with ketchup. Bake for 15 to 17 minutes... do not let burn! They are ready when the internal temperature registers 140 degrees F on an instant-read thermometer. Transfer to serving plates or platters and serve.
  • To make meatballs, omit the bacon and use a 2 ounce scoop to form the meatballs. Bake in the same manner as the meatloaf.

1 large onion, diced (about 3/4-1 cup)

  • Spray the inside of a 13x9-inch glass pyrex baking dish with a no-stick cooking spray.

85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

1 tablespoon soy sauce
1 teaspoon Dijon mustard
2/3 cup crushed saltines
2 tablespoons minced fresh parsley leaves

GLAZE
1/2 cup ketchup
1 teaspoon hot pepper sauce

Steps:

  • 1. MEAT LOAF: Adjust oven rack to middle position. Heat oven to 375F. Spread cheese on a plate and place in freezer until ready to use. To prepare baking sheet, set a metal cooling rack over a rimmed baking sheet. Fold a sheet of heavy-duty aluminum foil to form a 10" by 6" rectangle. Center foil on cooling rack and poke holes in foil with a skewer (about 1/2" apart). Spray foil with nonstick cooking spray. 2. Heat butter in 10" skillet over med-hi until foaming; add onion and celery and cook, stirring occasionally, until beginning to brown, 6 to 8 mins.   • Combine water and lentils in a heavy pot, cover, and bring to a boil over medium-high heat. Reduce heat to low and simmer until lentils are soft, stirring occasionally, about 40 minutes. Remove lid, but do not drain. Set aside.
  • Combine bell pepper, carrot, onion, and celery in a food processor; pulse until veggies are cut into very small pieces. Remove vegetables to a large bowl. Add lentils to the food processor and process until pureed; add to vegetables.
  • Add ground beef, bread crumbs, egg, salt, and pepper to the vegetable-lentil mixture. Mix ingredients together with your hands until well incorporated. Shape meat and vegetable mixture into a loaf and place in the middle of a 9x13-inch baking dish. Cover with aluminum foil.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove foil and bake until top is browned, 5 more minutes. Top with tomato sauce and bake 5 minutes more. Garnish with parsley.

1 12-ounce red onion, coarsely diced
3 large garlic cloves, peeled
1 1/4 pounds ground beef (10% fat)
1/2 cup ketchup, divided
2 large eggs
1 teaspoon salt
1 teaspoon ground black pepper
7 slices thick-cut bacon, 5 coarsely chopped, 2 halved crosswise
4 slices white sandwich bread, torn into pieces
3 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400°F. Blend onion and garlic in processor until onion is finely chopped. Transfer to large bowl; add beef, 1/4 cup ketchup, and next 3 ingredients.
  • Add chopped bacon and bread to processor. Using on/off turns, blend until bread is chopped. Scrape mixture into bowl with beef. Add parsley; stir gently to blend well. Transfer mixture to 9x5x3-inch metal loaf pan. Arrange bacon-slice halves crosswise atop meat, spacing apart and tucking edges down sides of loaf. Spoon remaining ketchup between bacon slices. Bake meatloaf until cooked through and meat comes away from sides of pan, about 1 hour. Let rest 10 to 15 minutes. Slide spatula under 1 end of meatloaf. Tilt pan; slide loaf out onto platter. Slice and serve.

TURKEY AND BEEF MEATLOAF

My intent was to make Cranberry Bog Turkey Burgers, ala Rachael Ray. Upon discovering that I had defrosted both beef and turkey rather than 2 pounds of turkey, I took her recipe and added my own twists to make a tender and moist meatloaf. The listed amounts of spices and herbs yield a mild flavor so if you like more punch, you'll want to increase them. For better slicing, let the loaves rest after baking or they will crumble under your knife. Mashed potatoes and cranberry sauce make great side dishes with this recipe.

1 lb lean ground beef (I use 90/10%)
1 lb ground turkey (93/7%)
1 1/2 teaspoons poultry seasoning
2 tablespoons Italian parsley, chopped
2 slices bread, cubed
3/4 cup milk
2 eggs
2 tablespoons butter
1 small apple, peeled, cored & diced
1 small onion, diced
2 celery ribs, diced
1/2 teaspoon salt
1/4 teaspoon thyme, ground
water

Steps:

  • In a large bowl, mix the beef, turkey, poultry seasoning & parsley. Set aside.
  • In a small bowl, slightly beat the eggs then stir in the milk. Submerge the bread cubes, mixing gently to break them up.
  • In a medium fry pan, melt the butter then add the apple, onion & celery. Sprinkle with salt & saute until the onions are translucent.
  • Stir apple, onion, celery mixture into the meats then add the bread, milk & eggs.
  • Work the mixture gently (I use my hands) until well combined.
  • Divide in half & shape 2 loaves in a 9X13" baking dish.
  • Tent with foil and bake in a 350º oven for 45 minutes.
  • Remove from oven, pour off juices and reserve.
  • Return loaves to oven (minus their tent) for another 15 minutes or until juices run clear. Let rest for 5-10 minutes while you make the gravy.
  • Gravy:.
  • Strain reserved pan juices and if needed, add water to equal 1 cup.
  • Pour drippings & water into the pan you used to saute the apples/onions/celery. Whisk in the flour.
  • Cook and stir over medium low heat until gravy thickens. Stir in the ground thyme & cook for 2-3 minutes more. Salt and pepper to taste.
  • Slice the loaves into portions, top with the gravy and serve.

2 pounds ground beef sirloin
1 pound ground beef round
1 egg
1 onion, chopped
1 large green bell pepper, seeded and chopped
1 (4 ounce) can mushrooms, drained
garlic powder to taste

1 cup grated Parmesan cheese
1 (12 fluid ounce) can spinach, drained
¼ pound thinly sliced deli ham
¼ pound thinly sliced salami
¼ pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a shallow roasting pan. Prepare instant rice according to package directions.
  • In a large bowl, mix together ground sirloin, ground round, egg, chopped onion, green pepper, mushrooms and cooked rice. Season with garlic powder, salt and pepper.
  • On clean counter top, arrange sheets of wax paper approximately 1 1/2 feet long by 1 foot wide. Place meat mixture on wax paper, and flatten into a large square, about 1/2 inch thick (the thinner the better). Sprinkle with more garlic powder, then layer with parmesan, spinach, ham, salami and Swiss cheese. Using the wax paper, roll the meat as tightly as possible while removing the wax paper as you go. Tuck the two open ends into the meatloaf itself, and with hands lightly coated in vegetable oil, shape into a loaf. While lifting with the wax paper, transfer to shallow roasting pan, then slide wax paper out from underneath.
  • Bake in preheated oven for 1 hour and 10 minutes, or until meat is no longer pink and juices run clear. Allow to cool 15 minutes before serving.

approx 1 1/2 pounds ground beef
3 sweet/ mild or hot italian sausage links ( cassings removed)
2 packages dry onion soup mix
approx 2/3 cup instant oatmeal or 2/3 cup bread crumbs (seasoned or non)
1 teaspoon italian seasoning
1 level teaspoon garlic powder ( more or less, your choice)
1/2 cup tomato sauce
2 large eggs
2 to 3 logs of mozzarella or provolone string cheese ( or several pieces of cubed cheese)
note: add salt and pepper to desired taste or diet
MEATLOAF TOPPING
1/2 cup ketcup
optional 2-3 tablespoon bbq sauce
1 tablespoon brown sugar ( blended well with ketcup and bbq sauce)

Steps:

  • 1. In large bowl combine ground beef and Italian sausage until well blended. Add remaining ingredients except for cheese ... once ingredients are well blended, place meat mixture on waxed paper and flatten into oblong shape approx 1/2 thick. In center of flattened meat place string or cubed cheese down entire center. Roll meat pressing and shaping into a loaf. Carefully place loaf into baking dish or roaster sprayed with non stick cooking spray and about 1/3 cup of water. Bake at 325 degrees for approx. 45 minutes to 1 hour .. until meat is nicely browned.
  • 2. Remove from oven and with back of spoon cover entire meatloaf with ketcup,bbq sauce and brown sugar mixture ... return to oven uncovered for approx. 15 - 20 minutes. Remove from oven and let sit for approx. 5 minutes before cutting into .

FROSTED MEATLOAF (BEEF OR TURKEY)

This is dinner party fare. Looks like it stepped from a food magazine. Easy to make. All ingredients can be made ahead, then chilled & baked. If chilled allow 10 minutes more baking time. Make sure mashed potatoes are room temperature before frosting.

2 lbs lean ground beef or 2 lbs ground turkey
1 tablespoon A.1. Original Sauce
1/2 cup minced onion
1 teaspoon dried cilantro
2 eggs, beaten
1 cup crushed saltine crackers or 1 cup dry breadcrumbs
1/2 cup Catalina dressing
1/2 teaspoon white pepper
1 1/2 cups shredded cheddar cheese or 1 1/2 cups shredded colby cheese
2 cups hot mashed potatoes (3 medium potatoes boiled)
1 egg, beaten
1/2 cup Miracle Whip
1/2 teaspoon salt or 1/2 teaspoon salt substitute
paprika
1 lb broiled mushroom

Steps:

  • In large bowl mix ground meat and A-1 sauce, minced onion, cilantro. Add beaten eggs, mix well. Add crackers or bread crumbs and catalina dressing and white pepper. Mix. Add cheese 1/2 cup at a time and mix, then add another until all cheese is mixed.
  • Form into an oval loaf, place in low side baking pan. Chill if desired.
  • Bake 350* 1 hour. Allow ten more minutes if chilled. I suggest placing a pan on the rack underneath to catch any grease drips from beef or turkey and the melted cheese sometimes drips from the bottom side. I have used a sharp cheese also. When cold this makes an excellent cold meat loaf sandwich. Some family members prefer cold.
  • Cook 3 medium potatoes in water or microwave, peel and mash. Add beaten egg and miracle whip and salt. You may prepare instant potatoes if you desire. Make sure they are a little on the stiff side before adding the egg, miracle whip and salt.
  • When loaf is baked, frost with mashed potatoes. Spread on with spatula. Make peaks all over it.You can also brush melted margarine over it but watch carefully when it is broiling.
  • Broil about 5 inches away until peaks are browned. Take out of oven. Sprinkle with paprika if desired. Broil fresh mushrooms at the same time.
  • Let set ten minutes before serving. Cut in wedges. Serve on a platter with broiled fresh mushrooms surrounding the loaf and slices of lemon in between.
