1 lb ground beef
1 medium onion (diced)
1 medium bell pepper (diced)
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 can Tomatoes and Chilies
8 oz processed cheese (cubed)
1 cup shredded cheddar
1/2 tablespoon butter
1/2 tablespoon Worcestershire sauce
House Seasoning Blend to taste
1 dash hot sauce (optional)

Steps:

  • Preheat oven to 350⁰
  • In a skillet over medium high heat melt butter and then add in pepper and onion cooking until they become tender and fragrant (2-3 minutes)
  • Add beef salt and pepper to skillet then brown, drain fat
  • Stir in packet of taco seasoning mixing until beef is evenly coated
  • In a sauce pan over medium heat combine onion, bell pepper, cream of chicken soup, cream of mushroom soup,tomatoes with chilies, and the Velveeta cheese and one cup of the cheddar. Add in Tabasco and Worcestershire sauce. Stir occasionally until cheese is melted.
  • Prepare a 9X13 casserole dish with coat with non-stick spray.
  • After preparing your casserole dish, cover the bottom with crushed tortilla chips to create a crust
  • Layer half the browned beef on top of the chips
  • Then add half the sauce on top of the beef
  • Repeat with chips, beef, and sauce
  • Top with remaining cheddar cheese
  • Bake at 350⁰ for 30 minutes or until cheese is bubbly

5 1/2 cups shredded beef or fully cooked brisket
(shredded) or fully cooked shredded beef
2 tablespoons vegetable oil
1 cup onion, chopped
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
2 tablespoons fresh jalapeno, chopped
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon garlic powder
1 tablespoon chili powder
12 ounces canned evaporated milk
1 can Ro*Tel diced tomatoes and green chilies
1 can condensed beef broth
8 ounces grated Cheddar or Mexican blend cheese
12 corn tortillas

Steps:

  • Add oil to large heated skillet and sauté onion, peppers and jalapeno. Mix in all spices and cook until onion is translucent. Add milk, tomatoes and broth. Bring to a simmer. Remove from heat. Stir in beef and cheese. Cut tortillas into quarters and placed half into a greased 2 1/2-quart casserole dish. Top with half of the beef mixture. Repeat layers, ending with beef mixture. Bake at 350 degrees F for 30 minutes.

1 1/2 lbs ground beef
1 onion, chopped
salt & pepper, to taste
garlic powder, to taste
10 corn tortillas, torn in strips
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can evaporated milk
1 cup water
1 (1 1/2 ounce) jar picante sauce
1 (10 3/4 ounce) can green chilies, chopped
1 lb American cheese or 1 lb Velveeta cheese

Steps:

  • Brown meat, onion, salt, pepper and garlic powder.
  • Mix soups, milk, water, picante sauce and green chilies (Note:Some people like less than the whole can, it's ok to add less.) to make a soup mixture.
  • Layer tortillas, meat, soup mixture and cheese twice in casserole.
  • Cover with foil and bake @ 350 degrees for 20 to 45 minutes. (I do about 40) Take off foil for the last 5 minutes.
  • Let cool, and eat :].

6 cooked chicken breasts, shredded
1 (10.75 ounce) can cream of chicken soup
1 (10.75 ounce) can cream of mushroom soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
½ cup chicken broth
½ cup chopped onion
1 (4 ounce) can chopped green chiles
6 corn tortillas, torn into strips - or more as needed
2 cups shredded Monterey Jack cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles and juice, chicken broth, onion, and canned green chiles together in a bowl, stirring until thoroughly combined.

2 pounds lean ground beef
1 medium onion, diced
1 cup bell pepper, diced
dash of salt
1 (10 3/4-ounce) can cream of mushroom
1 (10 3/4-ounce) can cream of chicken
1 (10-ounce) can mild rotel tomatoes, drained
1/4 teaspoon garlic powder
1/2 teaspoon chili powder
2 1/2 cups cheddar cheese, grated
10 corn tortillas

Steps:

  • Preheat oven to 350°F. Heat a skillet over medium heat and add the beef and onions. When meat has almost cooked all the way add the bell pepper and sprinkle with a dash of salt. When the meat is brown and thoroughly cooked drain the grease from the pan. Heat a medium size sauce pan over low/medium heat. Add the cream of mushroom, cream of chicken, rotel tomatoes, garlic powder and chili powder. Stir and cook until the mixture is warm and then turn off the heat. Tear each tortilla into pieces and dip each piece into the sauce mixture. (Does not have to be well coated in the mixture or you will use it all up and won't have enough for the dish) Place the tortillas down in a large casserole dish. Then top with half of the meat mixture and then half of the sauce. Sprinkle 2 cups of the cheese over the sauce and then repeat the layers finishing with the rest of the cheese. Cook for 40 minutes
