1 tablespoon curry powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 1/2 cups fine couscous
3 tablespoons olive oil
1 cup Greek yogurt
1 tablespoon minced fresh mint
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 small English cucumber, peeled, seeded, diced
1/2 cup olive oil
1/4 cup lemon juice
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
1 tablespoon minced garlic
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
Salt and freshly ground black pepper
1 1/2 pounds ground beef
1/2 cup finely minced red onion
2 ounces nonfat powdered milk
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh mint
1 tablespoon ground ginger
1 teaspoon cayenne
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
Olive oil, for brushing
Pita bread, warmed, for serving

Steps:

  • For the couscous: Preheat the oven to 400 degrees.Place the water in an ovenproof casserole. Whisk the curry, salt pepper into the water. Whisk the couscous into the water. Let the couscous stand for 10 minutes to absorb the water.
  • Pour half of the olive oil into the couscous. Work the olive oil into the couscous by hand, rubbing the kernels to fluff the couscous break up any clumps, making sure that the couscous is evenly coated with the oil. Place the casserole into the oven and bake for 20 minutes.
  • Remove the casserole from the oven and pour the rest of the oil into the couscous. By hand or with a spoon, work the oil through the couscous, breaking up any clumps.
  • For the raita: Place the yogurt, mint, cumin, salt and cucumbers in a bowl and stir to combine. Check the seasoning and adjust if necessary. Refrigerate until time to use.
  • For the vinaigrette: Place the oil, lemon juice, cilantro, parsley, garlic, cumin, paprika and cayenne in a bowl and stir to combine. Season the charmoula with salt and pepper.
  • For the kebabs: Combine the beef, onions, powdered milk, cilantro, mint, ginger, cayenne, salt and pepper in a bowl and mix thoroughly to combine. Divide the mixture into 8 balls. Form each ball into a kebab cylinder about 3 inches long. Refrigerate the kebabs until ready to grill.
  • In the meantime soak, wooden skewers in water. Heat the grill to high heat. Insert the skewers into the kebabs. Brush the kebabs with olive oil and grill until they are cooked, 34 minutes per side.
  • To complete the dish, place a mound of couscous on a serving plate for each person. Place 2 kebabs on each plate. Garnish the plate with the raita and drizzle the charmoula on the kebabs. Serve with warm pita bread.

1/2 large celery root, peeled and cut into 1-inch chunks (about 2 cups)
3/4 cup pitted prunes, chopped
1 1/4 pounds beef stew meat
1 tablespoon ras el hanout (Moroccan seasoning)
Kosher salt and freshly ground pepper
2 cups low-sodium chicken broth
2 tablespoons tomato paste
1 cup couscous
2 teaspoons harissa paste, plus more for serving
Fresh cilantro, for topping

Steps:

  • Stir the carrots, celery root and 1/2 cup prunes in a 6- to 8-quart slow cooker. Toss the beef with the ras el hanout, 1 teaspoon salt and a few grinds of pepper in a large bowl. Arrange on top of the vegetables. Whisk the chicken broth and tomato paste in a small bowl or liquid measuring cup and pour over the meat and vegetables. Cover and cook on low until the meat is tender, 7 to 8 hours.
  • About 15 minutes before serving, cook the couscous as the label directs.
  • Skim the fat off the top of the stew with a ladle and discard. Stir in the harissa and season with salt and pepper. Divide the couscous and stew among bowls. Top with the remaining 1/4 cup prunes and cilantro; serve with more harissa.

150g couscous
4 beef tomatoes
1 garlic clove , crushed
1 tsp smoked paprika
4 spring onions , roughly sliced
1bunch coriander , roughly chopped
1bunch mint , roughly chopped
1 lemon , juice only
50g toasted pine nut
50g sultana
2 tbsp olive oil

Steps:

  • Preheat oven to 200C/fan 180C/gas 6. Put couscous in a heatproof bowl, then pour over 175ml/6fl oz boiling water. Cover and leave for 5 mins. Cut each tomato across about a third of the way down and scoop out the inside with a teaspoon, keeping the tomato intact. Place the tomato bits in a bowl. Scoop out the lid, discarding the core, then reserve the lid. Add garlic, paprika and couscous to the bowl of tomato bits. Leave for 1 min then mix with a fork.
  • Put the spring onions, coriander and mint in a bowl, then add the lemon juice, pine nuts, sultanas, olive oil and seasoning. Mix well. Add to the couscous and stir until combined.
  • Using a spoon, fill the tomato cases with the couscous mix. Top with the lids, place in a roasting tray, drizzle with a little olive oil and bake for 20 mins until soft.

Steps:

1 cup shredded cabbage
1 cup shredded carrots
2 cups shredded leftover cooked beef

Steps:

  • In a large skillet over medium-high heat, add the sesame oil and heat. Add the cabbage and carrots and saute for 2 minutes. Add the hoisin sauce and soy sauce and cook 5 minutes, until mixture heats through and cabbage wilts, stirring frequently.

  • In a small saucepan bring 1 cup water to a boil with 1 tablespoon of the oil and the salt, stir in the couscous, and let the mixture stand off the heat, covered, for 5 minutes. Stir in the remaining 2 tablespoons oil, the vinegar, the celery, the Parmesan, the scallion, the orange juice, the parsley, and salt and black pepper to taste and let the mixture cool to room temperature. Press about 2 tablespoons of the couscous mixture in the palm of one hand, forming a log, and arrange it across a short end of 1 roast beef slice. 1/2 cup dry red wine
2 tablespoons hoisin sauce
2 cloves garlic, minced or pressed
1/2 teaspoon ground coriander
2 1/4 cups beef broth
1 1/2 cups couscous
1 frozen tiny peas, thawed
1/4 cup sliced green onion

Steps:

  • Place beef in an 8- by 12-inch roasting pan.
  • In a small bowl, mix wine, hoisin sauce, garlic, and coriander; brush evenly over beef.
  • Roast in a 425 degree oven until a meat thermometer inserted in thickest part of roast registers 135 degrees for rare (about 35 minutes; after 25 minutes, check temperature every 5 minutes).
  • During roasting, brush beef 4 times with wine mixture.
  • If pan drippings begin to burn, add 4 to 6 tablespoons water to pan and stir to loosen browned bits.
  • Transfer beef to a board and cover loosely.
  • Combine any remaining wine mixture and all the pan juices, then measure; add enough broth to make 2 1/2 cups total.
  • Pour broth mixture into roasting pan; bring to a boil stirring to loosen browned bits.
  • Add couscous; return to a boil, stirring.
  • Remove pan from heat, cover tightly with foil, and let stand until liquid is absorbed (about 5 minutes).
  • Stir in peas, onions, and any juices that have accumulated around beef.

1 1/4 pounds tri-tip steak, cut into 1-inch pieces
1 1/2 cups Israeli couscous

1 large red onion, cut into 4 thick rounds

Steps:

  • Mix together ginger, cinnamon, allspice and cloves and rub into beef.
  • Cook onion and garlic in oil in a heavy-based casserole or saucepan until soft, add beef and cook for 2-3 minutes until beef is browned.
  • Add lemon rind and juice, honey, prune juice, harissa and salt and bring to boil, Simmer gently until meat is tender (1 1/2-2 hours).
  • Check tenderness at 2 hours.
  • Prepare couscous when meat is nigh on cooked.
  • Boil 2 1/2 cups water, pour into a large bowl with couscous and let it stand for about 10 minutes until all water is absorbed.
  • Heat oil in a frying pan and fry onion until soft.
  • Add remaining ingredients, stir well and cook for 2-3 minutes.
  • Add onion to couscous and mix well.
  • Cover with foil to keep warm until meat is cooked.
  • Create a ring of couscous on each plate and spoon beef into the middle.
  • Garnish with the fresh cilantro leaves (coriander).

1 lb boneless beef roast, in 3/4 inch chunks
1/2 teaspoon salt
1/8 teaspoon pepper
2 1/4 cups beef stock
1 1/2 teaspoons cinnamon
8 ounces white pearl onions, peeled
8 ounces butternut squash or 8 ounces sweet potatoes, in 1/2 inch cubes
3 tablespoons vinegar
1 tablespoon honey
1 cup pitted prune
3/4 cup couscous (or quick cooking brown rice)

Steps:

  • Heat oil on medium high.
  • Sprinkle beef with salt and pepper and brown in oil for 5-8 minutes, stirring frequently.
  • Add stock and cinnamon, bring to boil.
  • Reduce heat, and simmer for 1 hour.
  • Stir in onions, squash or sweet potato, vinegar, and honey, bring back to a boil Lower heat, cover, and simmer for 30 minutes until meat and vegetables are tender.
  • Meanwhile, cook couscous in another pot.
  • Add prunes and chick peas to stew, cover, and heat just until mixture returns to a boil (about 2 minutes).
  • Serve stew over couscous.

2 carrots, finely grated
3 tablespoons extra-virgin olive oil
3 tablespoons chopped dried apricots or golden raisins
Kosher salt and freshly ground pepper
1 1/2 cups couscous (10 ounces)
1/2 cup plain yogurt
1/4 cup finely chopped fresh cilantro
2 teaspoons hot paprika
1 1/2 pounds ground beef chuck
3 scallions, finely chopped
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon

Steps:

  • Combine 2 cups water, half of the grated carrots, 2 tablespoons olive oil, the dried apricots, 1/4 teaspoon salt and a few grinds of pepper in a medium saucepan and bring to a boil. Add the couscous; cover and remove from the heat. Set aside until ready to serve.
  • Meanwhile, mix the yogurt, half of the cilantro, 1 teaspoon paprika and a large pinch of salt in a small bowl; set aside.
  • Combine the ground beef, scallions, cumin, cinnamon, 1 teaspoon salt and the remaining grated carrot and 1 teaspoon paprika in a large bowl. Mix with your hands until just combined. Form into four 3/4-inch-thick oval patties.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the patties and cook until browned, 4 to 5 minutes per side for medium rare. Fluff the couscous with a fork and stir in the remaining cilantro. Serve the patties with the couscous and yogurt sauce.

1/4 tsp. ground allspice
1 cinnamon stick
1 cup couscous

Steps:

  • Brown beef in oil and remove. Add onion and pepper and saute until tender. Add water, beef, tomato paste, salt, pepper, allspice, and cinnamon . Simmer, covered, until meat is tender. Stir in couscous, bring to a light boil, reduce heat and simmer until cous cous starts to come to surface.

Steps:

  • Brown beef in a heavy skillet and pour off excess fat.

⅓ cup pomegranate seeds
¼ cup chopped pistachios

2 tablespoons finely chopped fresh mint leaves
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt

2 medium red bell peppers, cut into 1-inch pieces
1 medium yellow onion, cut into 1-inch pieces

  • TO MAKE THE MARINADE: In a small bowl whisk together olive oil, lemon juice, oregano, mint, garlic, Worcestershire sauce, and red pepper flakes.Cut beef into 1 1/4 inch cubes. Place the cubes in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 2 to 4 hours, turning occasionally.TO MAKE THE SALAD: In a large bowl combine the couscous and raisins. In a small saucepan over high heat, bring the broth to a boil and pour over the couscous. Stir to mix, cover and allow to stand for about 10 minutes.In a small bowl whisk together the green onions, parsley, mint, olive oil, lemon juice, salt and pepper. Add to the couscous. Stir gently with a fork to combine and to fluff the salad.Remove the beef cubes from the bag and discard the marinade. Skewer the beef cubes alternately with the bell peppers and onions. Allow the meat to stand at room temperature for 20 to 30 minutes before grilling.Brush or spray the kabobs with olive oil and season with salt.
