1 pound mild Italian sausage links, cut into 1-inch slices
1 large onion, chopped
2 medium apples, peeled and quartered
1 can (27 ounces) sauerkraut, rinsed and well drained
1 cup water
1/2 cup packed brown sugar
2 teaspoons caraway seeds

Steps:

  • In a large skillet, cook sausage and onion over medium heat until sausage is no longer pink and onion is tender; drain. Stir in the apples, sauerkraut, water, brown sugar and caraway seeds. , Transfer to a 2-1/2-qt. baking dish. Cover and bake at 350° for 1 hour.

This recipe was given to me by my Aunt V, and I found it so easy and it was just full of flavor and so different-tasting than what we were used to. It was something new to my family and we love it! It is pretty versatile; you can add more or less of an ingredient to your taste.

1 (8 ounce) package egg noodles
10 slices bacon, chopped
1 small onion, chopped
1 (14 ounce) can sauerkraut, drained
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup milk, or more to taste
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in noodles and return to a boil. Cook, uncovered, stirring occasionally, until barely tender and firm to the bite, about 6 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until barely crispy and fat is rendered, 6 to 7 minutes. Reserve 3 tablespoons fat in the pan; drain bacon slices on paper towels.
  • Drain noodles. Cook onion in the skillet until softened, 4 to 5 minutes. Mix in noodles to coat.
  • Transfer noodle mixture to a casserole dish. Toss in sauerkraut, bacon, and mushroom soup. Measure milk into the soup can, shake, and pour into the dish. Mix to combine; season with salt and pepper.
  • Bake in the preheated oven until heated through and bubbling, 20 to 30 minutes.

5 slice bacon
1 can(s) 16 oz sauerkraut drained
1 can(s) cut up tomatoes undrained
3/4 c brown sugar

Steps:

  • 1. In a small skillet saute bacon and onions together. In a 2 quart casserole combine sauerkraut, tomatoes, brown sugar bacon and onions.
  • 2. Bake uncovered in 350 degrees for 2 hours. Casserole should look carmally around the edges.

2 1/2-3 cups cooked beef or 2 1/2-3 cups cooked chicken
1 tablespoon butter
1 teaspoon olive oil
1/4 cup chopped yellow onion
1 clove garlic, minced
1 cup catsup
1/4 cup packed brown sugar
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
Tabasco sauce or your favorite hot sauce, to taste
2 cups packed sauerkraut, rinsed and drained (I prefer Bubbie's naturally fermented kraut)
1 cup dry breadcrumbs
1 tablespoon finely grated parmesan cheese
olive oil (in mister or pan spray)

Steps:

  • Preheat oven to 350 degrees F.
  • In a saucepan over medium heat, melt the butter and olive oil together, then add the onion and sauté until lightly browned, about 5 to 7 minutes.
  • Reduce the temperature to low, add the garlic, catsup, brown sugar, lemon juice, Worcestershire, mustard, and Tabasco or hot sauce, and simmer for 10 minutes; add the shredded cooked meat, remove from heat, and set aside.
  • In a colander rinse the sauerkraut well under running water, then set aside to let drain.
  • In a lightly sprayed casserole dish, pour the meat and barbecue sauce mixture, then spread the sauerkraut over the meat.
  • In a bowl, combine the breadcrumbs and Parmesan.
  • Sprinkle crumb mixture over the sauerkraut, lightly spray with olive oil or pan spray, then bake at 350 degrees F for 20 to 25 minutes or until crumb topping is golden brown and crisped to desired texture.
  • Serve as is or over toast (dark rye is good!) or toasted hamburger buns.
  • Note: you can put a layer of barbecued beans under the shredded meat, if desired; also, you can use commercially prepared barbecued sauce instead of making your own as above (about 1 1/4 cup of sauce).

A hearty and easy supper entree. I need to say up front that this one is a spin-off of Mareesme's: Recipe #199769 -- but I didn't have the proper ingredients for that fine recipe so I changed to smoked sausage and I eliminated the stovetop techniques, so it's all just baking/broiling. Hey, this was GOOD and I credit Mareesme for turning me on to the basic ingredients and some shrewd seasoning with the little touch of brown sugar. 1 lb smoked sausage
6 slices bacon
32 ounces sauerkraut, drained, not rinsed
1/2 medium onion, diced
1 teaspoon brown sugar
1/4 cup water

Steps:

  • Preheat oven to 350-degrees F.
  • Cut the smoked sausage into 6 pieces.
  • In a 9" x 9" ungreased baking dish, layer in half the sauerkraut and then lay out the sausage on top of it. Cover with the remaining sauerkraut.
  • Spread the diced onion over the sauerkraut, lay out the bacon slices across the casserole, and then sprinkle the brown sugar over it. Pour the water over the casserole which will make the sugar dissolve a bit. Cover with aluminum foil and bake on the middle rack for 90 minutes.
  • At the end of the 90 minutes, remove the aluminum foil and, on the same rack, BROIL for 6 minutes. Serve hot along with mashed potatoes.
  • Note: You won't have to add salt -- there's plenty of salt in the sauerkraut.

8 oz uncooked egg noodles
1 1/2 lb lean (at least 80%) ground beef
1 small onion, chopped (1/4 cup)
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (32 oz) sauerkraut, undrained
2 cans (10 3/4 oz each) condensed cream of chicken soup
2 cups shredded Swiss cheese (8 oz)
Chopped red onion, if desired

Steps:

  • Heat oven to 350°F. Cook and drain noodles as directed on package.
  • While noodles are cooking, cook beef, onion, salt and pepper in 10-inch skillet, over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
  • In ungreased 3-quart casserole, mix noodles, beef mixture, sauerkraut, soup and 1 cup of the cheese.
  • Bake uncovered 45 minutes. Sprinkle with remaining 1 cup cheese. Bake uncovered 5 to 10 minutes or until cheese is melted. Sprinkle with red onion.

1 lb bulk pork sausage, cooked curmbled and drained or 1 medium kielbasa, sliced
3 cups sauerkraut, rinsed and drained well
mashed potatoes
2 cups grated cheddar cheese or 2 cups smoked cheese, of choice
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9x13 inch pan or casserole dish.
  • Spread 1/2 of the mashed potatoes on the bottom, then half of the sauerkraut.
  • Use remaining potatoes on top of the sauerkraut, then the remaining sauerkraut.
  • Evenly distribute the pork sausage or keilbassa, sprinkle with pepper and top with the cheese you're using.
  • Bake for 35 to 40 minutes.
