GRILLED SABLEFISH WITH GARLIC-HERB OIL
This is an EASY way to make delicious sablefish (black cod), but you can use this method with any firm white fish like salmon, Pacific cod, halibut, or rockfish.

Steps:
- Lay the fillets on a large plate, skin-side down, and sprinkle each fillet with a generous pinch of sea salt. Let the fish rest at room temperature for 10-15 minutes.
- Meanwhile, put the oil & garlic into a small skillet and GENTLY heat over medium-low heat. When the garlic starts to sizzle a little, remove the pan from the heat and stir in the herbs and a pinch or two of sea salt. Let it sit for 10-15 minutes so the flavors can combine well.
- Preheat the grill to high heat. Grease the grill grates, if needed.
- Place the fillets on the grill skin-side UP. Cook, covered, for 3-4 minutes and then flip them over. You'll want to use a large spatula for this and use swift movements.
- Continue to cook until the fish seems to be separating and it pulls apart easily with a fork. Don't over cook it.
- Transfer the fish to a large platter and drizzle the herb oil over the top. Serve.
B.B.Q. GARLIC CRAB

- Lightly cook the garlic in the olive oil in a saute pan (about 2 to3 minutes on medium-low heat). Allow to cool.
- Add the crab and toss with the salt and pepper.
- Preheat the grill to high, carefully place all the marinated crab onto the grill, allowing the oil to drip off before putting onto the grill, and cover with lid. Allow to cook about 4 to 5 minutes then turn over and allow to cook another 3 to 4 minutes.
- Remove from the grill, and place into a large metal bowl. Squeeze the fresh lemon juice over the crab and toss well.
- Serve on a large platter with fresh lemon wedges and chopped Italian parsley.

- In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Grilled Sablefish or Black Cod is sweet and buttery with a smooth texture. Brushed with garlic and herb butter for a simple and delicious meal that you can feel good about feeding your family.

Steps:
- Prepare a grill fire to 350° with oak or pecan for smoke flavor.
- Pat sablefish filets dry with paper towels.
- Prepare garlic butter by melting butter with minced garlic and cook for 3-5 minutes over medium heat, just until garlic starts to brown. Remove from heat and stir in parsley.
- Place sablefish skin side down over indirect fire.
- Brush with garlic butter and close the lid.
- Cook 12- 15 minutes or until internal temperature reaches 145°. Fish will be flaky.
- Remove from grill and serve with cucumber tomato salad.

BBQ HERB & GARLIC FISH
This recipe is an oldie from Miracle Whip and it is very good! I used Newzealand Blue Hoki Fillets but you can use red or white fish. You may also try 1/4 cup lowfat yogurt with only a 1/4 cup Miricle whip.This is quick and easy.

- Mix dressing and seasoning.
- Place Fish fillets on greased BBQ grill over medium heat (or on a rack of a broiler pan 2-4 inches from heat).
- Brush with half of the dressing.
- Grill or broil, 5-8 minutes.
- Turn; brush with remainder of the dressing.
- Continue grilling 5-8 minutes until the fish flakes easily with a fork.

- In a large saucepan over medium low heat, mix together ketchup, garlic, 1 cup of water, hot sauce, honey, molasses, brown sugar, Worcestershire sauce, soy sauce, salt, Cajun seasoning, paprika, red pepper, white pepper and black pepper.
- Allow the mixture to simmer approximately 30 minutes.
- In a small bowl, dissolve cornstarch in 1 tablespoon of water.
- Adjust amount of water as needed to fully dissolve cornstarch.
- Stir into the sauce mixture.
- Continue simmering approximately 15 minutes.
- Stir butter into the sauce mixture.
- Continue simmering mixture approximately 15 more minutes, or until butter is melted and the sauce has begun to thicken.
- Serve over meats prepared as desired.
