CHEESY BARBECUE BACON CHICKEN CASSEROLE

BBQ Bacon Chicken Casserole has pasta, chicken, bacon, cheese and tomatoes in a creamy bbq sauce. It's kid friendly, easy to whip up and totally delicious!

1 cup barbecue sauce (your favorite is fine)
1 cup sour cream
1 teaspoon garlic powder
½ teaspoon black pepper
3 cups cooked and diced chicken breast
12 ounces small pasta (cooked to al dente (Rotini or Farfalle))
½ pound bacon (cooked crisp and crumbled, divided)
15 ounce can petite or fire roasted diced tomatoes (drained)
1 red onion (diced)
2 1/2 cups grated Cheddar-Jack cheese (divided)
2 green onions (thinly sliced)
Fresh minced cilantro or parsley (for garnish)

Steps:

  • Preheat oven to 375 degrees F. Spray a 13x9-inch casserole dish with nonstick cooking spray.
  • In a large bowl, combine barbecue sauce, sour cream, garlic powder and black pepper. Stir in chicken, pasta, bacon (reserve 2 tablespoons for topping), tomatoes, red onion and half of the cheddar-jack cheese until well combined. Pour into the prepared casserole dish and spread evenly. Top evenly with remaining cheddar-jack cheese, sliced green onions and reserved bacon.
  • Bake casserole in the preheated oven for 20-25 minutes. Top should be melty and golden and the sauce should be bubbly.
  • Let rest for about 5 minutes, then garnish with fresh minced parsley or cilantro and serve warm.

2-3 Cups Colby Jack Cheese
1 can (14.5oz) Diced Tomatoes with onions and green peppers
1 TBS dried ranch seasoning
16 ounces penne pasta, cooked (1 box)
1 Cup Sour Cream
1 Cup diced, cooked bacon
1 Cup barbecue sauce
3 Cups of chicken, cooked (about 1 1/4th pounds)

Steps:

  • Preheat oven to 375 F.
  • In a large mixing bowl, combine the sour cream, ranch seasoning, and BBQ sauce. Mix.
  • Add the cooked chicken, cooked pasta, 1/2 the cheese, diced bacon and drained, canned tomatoes to the BBQ mixture and fully combine.
  • Spread the mixture in a greased 9 x 13 baking dish.
  • Top with remaining cheese and drizzle with about 1/4 cup of BBQ sauce.
  • Bake, uncovered, for 25 minutes.

1 lb chicken tenders or breast, cut into 1" cubes
3 Tbsp bbq seasoning, divided
1/2 c bbq sauce
3 large russett potatoes cut into small chuncks
1/2 c cooked bacon, crumbled
1 c shredded cheddar cheese
1 Tbsp olive oil
2 green onions, chopped

Steps:

  • 1. Preheat oven to 475 degrees. Toss the cubed potatoes with extra virgin olive oil, 1 tbsp bbq seasoning. Transfer the potatoes into a cooking spray coated baking dish. Bake the potatoes for 35-40 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside.
  • 2. While the potatoes are cooking, in a large bowl mix together the chicken, bbq seasoning and bbq sauce, refrigerate. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 F.
  • 3. Top the cooked potatoes with the bbq chicken mixture. Bake for an additional 25 minutes, turning occasionally. In another bowl mix together the cheese, bacon & green onion and top the chicken with the cheese mix. Return the casserole to the oven and bake for 5-10 minutes until cheese mixture is melted

1 bottle (12 oz) Annie's™ Naturals organic sweet & spicy BBQ sauce
1/2 cup chopped green onions

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat water and butter to boiling over medium-high heat. Remove from heat; stir in potato mix, and let stand 1 minute. Stir in sour cream and 1 cup of the cheese until completely blended. Spoon mixture into baking dish.

I decided to experiment one day, and actually write down what I did and how I did it. This is the result. My friends loved it, and my mother (Kayne) did too. She talked me into posting it.

4 cups cooked rice
1 red onion, chopped
1 red bell pepper, chopped
2 garlic cloves, crushed
1 whole store bought rotisserie-cooked chicken
2 cups barbecue sauce, divided
2 teaspoons barbecue seasoning
8 ounces beer
2 (10 ounce) cans Pillsbury Grands refrigerated buttermilk biscuits
3 cups finely shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook the rice according to instructions.
  • In a large skillet sautee onion, pepper, and garlic over low heat.
  • Add the shredded chicken to the skillet.
  • Add 1 1/2 cups of the BBQ sauce and the BBQ seasoning.
  • Bring to a slow boil, add the beer and simmer for about 35 minutes or until mixture is thick.
  • Place the cooked rice in the bottom of a greased casserole dish, spread the chicken mixture on top of the rice, and pour 1/2 cup of BBQ sauce on top. Add cheese, then top with biscuits.
  • Bake until biscuits are golden brown, about 15 minutes.
