Yield 2 cups

Number Of Ingredients 9

3 TBS butter
2 medium skinless boneless chicken breast halves, cut into 1/2 in pieces
1 TBS chopped garlic
1/3 cup lightly salted roasted cashews (2 oz)
1/3 c mayonnaise
1/2 c finely chopped onion
1/4 c Asiago cheese, grated
1/2 tsp hot pepper sauce
1/4 c chopped fresh basil

Steps:

  • Melt butter over medium heat, sprinkle chicken with salt and pepper. Add chicken and garlic to skillet and saute until chicken is cooked through. Remove from heat. Transfer mixture to food processor. Add mayonnaise, onion, cheese, and pepper sauce. Process until smooth. Add basil, process until just blended. Transfer to small bowl, cover with plastic and chill (2 hours).May be made two days ahead, Serve with toasted baguette slices, tomatoe, and sweet gherkins.

1 tablespoon chopped garlic
1/3 cup lightly salted roasted cashews (about 2 ounces)
1/3 cup mayonnaise
1/2 cup finely chopped onion
1/4 cup grated Asiago cheese
1/2 teaspoon Tobasco sauce
1/4 cup chopped fresh basil

Steps:

  • Melt butter in heavy large skillet over medium high heat. Sprinkle chicken with salt and pepper. Add chicken and garlic to skillet and saute until chicken is cooked through, about 3 minutes. Stir in cashews. Remove from heat and let cool. Transfer mixture to food processor. Add mayonnaise, onion, cheese and hot pepper sauce; process until smooth. Add chopped basil; process until just blended. Tansfer to decorative mold, cover with plastic wrap and chill at least 2 hours or overnight. (Can be made 2 day ahead).

1 tablespoon Garlic Chopped
1/3 cup Salted Roasted Cashews
1/3 cup Mayonnaise
1/2 cup Onion, Finely Chopped
1/4 cup Asiago Cheese - Grated
1/2 teaspoon Tabasco Hot Pepper Sauce
1/4 cup Basil Fresh Chopped

Steps:

  • Melt butter in heavy large skillet over medium high heat. Sprinkle chicken with salt and pepper. add chicken and garlic to skillet and saute until chicken is cooked through, about 3 minutes. Stir in cashews. Remove from heat and let cool.
  • Transfer mixture to processor. Add mayo, onion, cheese and hot peper sauce; process until smooth. Add chopped basil; process until just blended.
  • Transfer to small bowl. Cover with plastic wrap and chlll at least 2 hours or overnight. (can be made two days ahead)

Stir in cashews. Remove from heat and let cool. Transfer mixture to food processor. Add mayonnaise, onion, cheese and hot pepper sauce. Process until smooth.
