This recipe is from Duncan Hines Signature Banana Supreme Cake Mix. I am always searching for new recipes to try, on side of the box there was a recipe for Banana Coffee Cake which calls for Streusel, the Cake itself sounded great so thought I would try it. It was delicous, my family enjoys Bundt Cakes.

1 pkg 1 package duncan hines signature banana supreme calke mix
1 3/4 pkg vanilla instant pudding and pie filling
4 large eggs
1 c ripe mashed bananas
1/3 c vegetable oil
1/4 c water

Steps:

  • 1. Preheat oven to 350 degrees F. Grease and flour 10 inch Bundt pan or tube pan.
  • 2. For cake, combine cake mix, pudding mix, eggs, banana, oil and water in large bowl. Beat at medium speed with electric mixer for 2 minutes. Pour batter into pan.
  • 3. Bake at 350 degrees F for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan for 25 minutes. Invert onto cooling rack. Cool completely.
  • 4. I used a can of Cream Cheese Frosting for the glaze.

3/4 c butter
2 1/8 csugar
3 eggs
2 tsp vanilla
3 c flour
1 1/2 tsp baking soda
1/4 tsp salt
1 1/2 c buttermilk
2 tsp lemon juice
1 1/2 c mashed bananas
frosting:
1/2 c butter
1 - 8 oz cream cheese
3 1/2 c. confectioners sugar
1 tsp vanilla

Steps:

  • Directions 1.Preheat oven to 275 degrees F (135 degrees C). Grease and flour a 9x13 inch pan. In a small bowl, mix mashed bananas with lemon juice, set aside. In a medium bowl, mix flour, baking soda and salt. Set aside. 2.In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in banana mixture. Pour batter into prepared pan. 3.Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and place directly into freezer for 45 minutes. This will make the cake very moist. 4.For the frosting: In a large bowl, cream 1/2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add confectioners sugar and beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake.
