Nice 'appies' for a get together - hot or cold. Can use crackers or toasted bagette rounds. Have changed recipe to chopped pepperoni for more taste and ease of eating.

3 dozen Snackwell's fat-free wheat crackers
3/4 cup spaghetti sauce
2 -3 ounces pepperoni, chopped
1 cup mozzarella cheese, shredded
dried oregano leaves

Steps:

  • Heat oven to 400°F.
  • Chop pepperoni and mix with sauce and cheese.
  • Spoon sauce mix on crackers or toasted rounds; sprinkle with oregano.
  • Bake on ungreased cookie sheet until cheese is melted, 3 - 5 minutes.

Pastry Rounds:
2 cups all-purpose flour
1 teaspoon salt
2/3 cup shortening
1/4 cup water

Bambinos:
1 (6-ounce) can tomato paste
1 teaspoon garlic salt
1/4 teaspoon oregano
1/4 pound American or mozzarella cheese, cubed
1/8 pound salami or pepperoni, cut into rounds
additional oregano

Steps:

  • Pastry Rounds: Heat oven to 475°. Mix flour and salt; cut in shortening. Sprinkle with water and mix with fork. Divide in half and roll each to 1/8-inch thickness. Cut into 1 1/2- to 2-inch circles. Place on foil-covered baking sheet and prick with fork. Bake 8-10 minutes or until lightly browned. Bambinos: Before serving, heat oven to 400°. Combine tomato paste, garlic salt, and oregano. Spoon a small amount onto a pastry round. Top with small cube of cheese and a piece of meat. Sprinkle with oregano. Bake 3-5 minutes. Serve hot.
