This dressing has wonderful flavour with virtually no fat. Try this on a Spinach and Strawberry salad....it will blow your mind and your tastebuds. Taken from her 'Heart Smart' cookbook, she notes: "This dressing can also be made with other mild vinegars such as raspberry, sherry, Champagne or a good red wine vinegar." NOTE: after several reviews, I'm going to adjust the water amount to 1/2 - 1 cup. Thanks for the suggestions everyone. :)

1/2 cup balsamic vinegar
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 garlic clove, minced
1/2 teaspoon pepper
1/2-1 cup water (start with 1/2 cup and increase if needed)
1 teaspoon honey (optional)
1/4 teaspoon salt (optional)

Steps:

  • Whisk together vinegar, lemon juice, oil, mustard, worcestershire, garlic and pepper.
  • Whisk in water.
  • Taste and add honey and or salt only if necessary.

¼ cup balsamic vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1 shallot, minced
1 clove garlic, minced
salt and ground black pepper to taste

Steps:

  • Combine the olive oil, balsamic vinegar, honey, Dijon mustard, shallot, garlic, salt, and black pepper together in a glass jar with a lid. Replace lid on the jar and shake vigorously until thoroughly combined.

I LOVE this dressing on a salad of mixed greens, onion, tomato, cucumber, green pepper, celery....oh, heck...just about anything!!! I created this one a while back when I was experimenting to find a good dressing without oil, and I have been using it ever since. If I am making only a single-serve salad, I estimate the amounts and add more swetener or spices to fit my taste. Super-healthy and super-tasty!!!

1/2 cup fat-free Italian salad dressing
1/4 cup balsamic vinegar
1 (1 g) packet sugar substitute
1/4 teaspoon fresh ground black pepper
1/4 teaspoon garlic powder
grated fat free parmesan, for sprinkling on salad

Steps:

  • Combine all ingredients except Parmesan and whisk well.
  • Pour over salad,toss to coat, and top with grated Parmesan cheese.

I'm such a lover of cornbread, that I couldn't pass up this version. Another wonderful recipe from her book "Friday Night Dinners". Bonnie writes that "she received this recipe from executive chef Anthony Rose of Toronto's Drake Hotel". Very easy and flavourful. She also mentions that the follow may be added: diced olives, sun-dried tomatoes or fresh herbs. We enjoyed the plain version very much. Easily halved and baked in a 9 x 9 pan.

2 cups all-purpose flour
1 1/2 cups cornmeal
2 tablespoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup granulated sugar
2 eggs
1/4 cup extra virgin olive oil or 1/4 cup butter, melted
2 1/2 cups buttermilk (see note below) or 2 1/2 cups soymilk (see note below)
1 cup corn kernel, grilled (optional)
1 jalapeno pepper, seeded and chopped (optional)

Steps:

  • In a large bowl, combine flour, cornmeal, baking powder, salt and sugar.
  • In a separate bowl, combine eggs, oil and buttermilk.
  • Add egg mixture to the large bowl and combine. Add corn and jalapeno, if using. Stir until all ingredients are moistened.
  • Transfer batter to an oiled 13 x 9 baking dish. Bake in a preheated 350*F oven for 35 minutes, or until bread springs back when pressed in center or a cake tester comes out clean.
  • Cool for 20 minutes before cutting.
  • NOTE: If using Soy Milk, sour by adding 1 tbsp of vinegar or lemon juice and let stand for 10 minutes before adding.
