FISH EYE SALAD (TAPIOCA FRUIT SALAD)

This recipe is from my Mother in Law. My brother in law told my kids not to eat grandma's salad because it was made with fish eyes!! It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad--hence the name! Prep time does not include the overnight soaking of the tapioca

1 cup pearl tapioca
2 cups water
2 cups milk
1 teaspoon salt
3/4 cup sugar
1 (20 ounce) can fruit cocktail, , drained
3/4 cup whipped cream (my mother in law uses Nutriwhip non dairy whipped topping)

Steps:

  • Soak tapioca and water over night,drain Add milk and salt and cook until transparent.
  • Add sugar, and cool.
  • Add fruit cocktail.
  • Fold in whipped cream.
  • Chill.

Number Of Ingredients 7

3 cups water
1 package (3 ounces) orange gelatin
1 package (3.4 ounces) instant vanilla pudding mix
1 package (3 ounces) tapioca pudding mix
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a saucepan, bring water to a boil. Whisk in gelatin and pudding mixes. Return to a boil, stirring constantly; boil for 1 minute. Remove from the heat and cool completely. Fold in oranges, pineapple and whipped topping. Spoon into a serving bowl. Cover and refrigerate for 2 hours.

This is an old family recipe. Mom's cousin, Mae, was known to be an excellent cook and baker. Everyone was thrilled to be invited to her home for a meal. This is one of her signature desserts!

Number Of Ingredients 9

3 c tart apples, sliced
2 Tbsp butter, cut in cubes
1/4 tsp cinnamon
1/8 tsp nutmeg (my addition)
1/3 c quick cooking tapioca
1 c light brown sugar
1 tsp salt
2 1/2 c water
lemon juice, 1-2 tbsp.

Steps:

  • 1. Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
  • 2. Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
  • 3. Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.
  • 4. Remove from oven and stir. Serve warm with cream poured over or ice cream by the side.

This is an easy way to fix, and old fashioned favorite! My neighbor Arlene's Mother Roberta'a recipe.. she was a GREAT cook... Enjoy!

Number Of Ingredients 7

1 cup(s) pearl tapioca
5 cup(s) water
1 1/3 cup(s) sugar
1 teaspoon(s) salt
1 package(s) cool-whip whipped topping
1 tablespoon(s) dry jello (i use strawberry)
- sliced bananas, crushed pineapple, or drained fruit; to add as you like!

Steps:

  • Soak tapioca overnight in 5 cups of water, drain in the morning, and replace with 5 fresh cups of water. Stir in sugar and salt.
  • Place in large glass casserole dish and bake in 325* oven for 2 hours stirring often. Cook until tapioca is clear. Remove from oven and let cool.
  • Once cooled fold in 1 tablespoon of dry jello, and add your fruits as desired. Add your cool whip and lightly stir in. You can add a drop or two of food coloring if you like, I have added colored miniture marshmallows befor. Refrigerate until well chilled... Enjoy!

Homemade tapioca pudding topped off with fresh pineapple, strawberries, mangoes, blueberries and blackberries. I haven't had a chance to try this yet, but wanted to put it here for safekeeping. This recipe is from Favorite Brand Name Sunday Suppers cookbook. Time does not include chill time.

1 1/2 cups coconut milk
1 cup milk
3/4 cup sugar, divided
2 eggs, beaten
1/4 cup water
3 tablespoons quick-cooking tapioca
1/2 teaspoon vanilla
1 pinch salt
2 cups fresh pineapple, chunks
2 cups fresh strawberries, quartered
1 cup mango, diced
1 cup fresh blueberries
1 cup fresh blackberries
1 lime peel, grated
2 tablespoons lime juice

Steps:

  • Mix coconut milk, milk, 1/2 cup sugar, eggs, water, tapioca, vanilla and salt in medium saucepan. Let stand 5 minutes. Cook over medium heat, stirring, until full boil. Remove from heat. Cool 30 minutes. (Pudding thickens as it cools.).
  • Spoon into individual dessert bowls. Combine pineapple, strawberries, mango, blueberries and blackberries in large bowl. Stir in remaining 1/4 cup sugar, lime peel and juice; mix well. Spoon over tapioca.
  • Cover; refrigerate 2 to 3 hours before serving.

1 cup sugar
2 eggs
2 teaspoons bicarbonate of soda
1/2 teaspoon salt
1 (425 g) can fruit cocktail, in syrup including juice (425g)
1 (8 ounce) can milk
1 cup sugar
4 tablespoons butter
5 ml vanilla essence

Steps:

  • Mix all ingredients except Ideal milk, butter and vanilla essence.
  • Bake at 350 F for 30 minutes.
  • While baking, mix together: 1 small tin Ideal Milk, 1 cup Sugar, 4 Tblsp Butter, 5ml Vanilla Essence and dissolve over low heat. Pour over baked pudding as soon as it comes out of oven.
  • Serve with cream or ice-cream.

Steps:

  • In a large saucepan, combine the water, sugar and tapioca; let stand for 5 minutes. Bring to a full rolling boil. Remove from the heat; stir in orange juice concentrate. Cool for 20 minutes. , Stir in the peaches and oranges. Transfer to a serving bowl. Cover and refrigerate until serving.
