These taco sliders are sandwiches stuffed with taco meat and cheese, then brushed with garlic butter and baked to perfection. Serve with salsa and guacamole for a party snack that will earn rave reviews.

2 teaspoons olive oil
1/2 cup onion (finely diced)
1 pound ground beef (I use 90% lean)
2 tablespoons taco seasoning
8 ounce can tomato sauce
1 pound small dinner or slider rolls
8 ounces sliced cheddar cheese
2 tablespoons butter (melted)
1/4 teaspoon garlic powder
2 tablespoons chopped cilantro
toppings such as guacamole and salsa

Steps:

  • Heat the olive oil in a large pan over medium heat. Add the onion and cook for 3-4 minutes or until translucent.
  • Add the ground beef to the pan and cook for 5-6 minutes, breaking up the meat into small pieces with a spatula.
  • Add the taco seasoning and tomato sauce, then bring to a simmer.
  • Preheat the oven to 375 degrees. Slice the rolls in half and place the bottom half of the rolls on a sheet pan.
  • Bake for 5 minutes or until bread is lightly toasted.
  • Spoon the meat over the bottom of the rolls, then layer the cheese on top.
  • Place the top buns over the cheese layer.
  • Mix the butter and garlic powder and brush the mixture over the tops of the rolls.
  • Bake for 10 minutes or until the rolls are browned and the cheese is melted.
  • Sprinkle with cilantro and serve with guacamole and salsa if desired.

12 dinner rolls (connected)
1 cup sour cream
1 lb taco meat
2 cups shredded taco cheese (divided)
1/2 cup yellow bell pepper (diced)
1/2 cup sliced grape tomatoes
1/4 cup Mezzetta Deli Sliced Hot Jalapeño Peppers
1/2 cup 1 stick butter, melted
1 tsp onion powder
1 tsp garlic powder
1/2 tsp crushed red pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 9 x 13-inch pan with cooking spray.
  • Slice rolls like you would a burger bun and place bottom half in the pan and set the top half aside.
  • Spread sour cream over the bottoms of the rolls, evenly spread prepared taco meat out on the sour cream.
  • Sprinkle the taco meat with 1 cup of the shredded cheese. Evenly distribute peppers and tomatoes on the cheese and cover with the remaining cup of cheese.
  • Place roll tops back on the top, stir together melted butter, onion powder, garlic powder, and crushed red pepper and pour evenly over the tops of the rolls.
  • Cover with aluminum let set for 10 minutes, then bake for 10 minutes.

I grew up eating taco burgers at a local fast food restaurant. They no longer make the burger so I decided to make my own but wanted a smaller slider version. A "funeral sandwich" recipe was my inspiration in developing this slider.

3 pound(s) ground beef
1 medium onion, finely diced
3/4 cup(s) taco seasoning mix
2 cup(s) water
1 jar(s) mild taco sauce
8 ounce(s) cheddar cheese, finely shredded
24 - dinner rolls
1/2 cup(s) butter, melted

Steps:

  • In a Dutch oven boil ground beef, in enough water to cover, until no longer pink. Break beef up into very small pieces as it is cooking. Drain and discard water.
  • Return ground beef to pan and add the diced onion, taco seasoning mix, and 2 c. water. Mix thoroughly then simmer until all liquid is absorbed.
  • Grease a large cookie sheet. Split all the rolls in half and spread a thin layer of taco sauce on each half. Lay the bottom halves on the cookie sheet.
  • Layer the tops of the bottom halves in the following order: 1 tablespoon of grated cheddar, 2 tablespoons of taco meat, 1 tablespoon of grated cheddar, top bun.
  • Once all 24 rolls are assembled, brush the top of each roll with the melted butter.
  • Cover the rolls with aluminum foil. Bake in 350 degree oven for 10 minutes. Remove the foil and bake another 10 minutes.

3/4 cup minced onion, divided
2 teaspoons garlic powder
1 teaspoon salt

1/2 cup Thousand Island salad dressing, divided
10 slices American cheese
12 sliced dill pickles
1-1/2 cups shredded Iceberg lettuce
1 tablespoon butter, melted
1 tablespoon sesame seeds, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. Bake until a thermometer reads 160°, 15-20 minutes., Meanwhile, without separating rolls, cut rolls in half horizontally. Spread 1/4 cup of dressing evenly over bottom halves of rolls., Blot meat with paper towels to remove excess fat; top meat with cheese and return to oven. Bake until cheese has just melted, 2-3 minutes. Place meat on bottom halves of rolls; spread with remaining 1/4 cup dressing. 2 packages (17 ounces each) Hawaiian sweet rolls
4 cups shredded cheddar cheese, divided
2 pounds ground beef
1 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
3/4 teaspoon pepper
24 bacon strips, cooked and crumbled
GLAZE:
1 cup butter, cubed
1/4 cup packed brown sugar
4 teaspoons Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 350°. Without separating rolls, cut each package of rolls horizontally in half; arrange bottom halves in 2 greased 13x9-in. baking pans. Sprinkle each pan of rolls with 1 cup cheese. Bake until cheese is melted, 3-5 minutes., In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, breaking beef into crumbles, 6-8 minutes; drain. Stir in tomatoes, mustard, Worcestershire sauce, salt and pepper. Cook and stir until combined, 1-2 minutes., Spoon beef mixture evenly over rolls; sprinkle with remaining cheese. Top with bacon. Replace tops. For glaze, in a microwave-safe bowl, combine butter, brown sugar, Worcestershire sauce and mustard. Microwave, covered, on high until butter is melted, stirring occasionally. Pour over rolls; sprinkle with sesame seeds. Bake, uncovered, until golden brown and heated through, 20-25 minutes. Freeze option: Cover and freeze unbaked sandwiches; prepare and freeze glaze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Pour glaze over buns and sprinkle with sesame seeds. Bake sandwiches as directed, increasing time by 10-15 minutes, until cheese is melted and a thermometer inserted in center reads 165°.

½ cup mayonnaise
2 cups shredded Cheddar cheese

  • Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
  • Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.

1 (1 ounce) packet taco seasoning
5 slices pepper Jack cheese
5 roll (blank)s hamburger buns, split
¼ cup sour cream, or to taste
¼ cup salsa, or to taste
1 cup chopped fresh cilantro
1 tomato, sliced
1 avocado, sliced
½ onion, sliced

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground beef and taco seasoning together in a bowl with your hands. Separate mixture into 5 equal portions. Form into patties.
  • Cook patties on the preheated grill for 5 minutes. Flip, top with pepper Jack cheese slices, and continue to grill until no longer pink or to desired doneness, about 5 minutes more.
