BAKED SAUERKRAUT WITH APPLES
This German recipe is borrowed (with a tweak) from Recipes4us.co.uk. The original recipe calls for 120ml beef stock, but I wanted a vegetarian version. You could revert to the beef stock or replace my suggested vegetable stock with a small amount (say ½ teaspoon) of Marmite or Vegemite dissolved in 120ml of very hot water. Recipe posted for Zaar World Tour 2005.

PORK CHOPS BAKED IN PEAR SAUERKRAUT
Served with mashed potatoes, this meal reminds me of time I spent in Germany. A real German hausfrau would cook up an apple in her sauerkraut, but using baby food is a real time-saver and still softens the flavor of the sauerkraut and makes it delicious.

Steps:
- Heat oven to 375°F.
- Heat oil in a large ovenproof skillet over medium heat.
- Add pork chops and cook about 2 minutes per side, turning once, until lightly browned.
- Remove skillet from heat and remove chops to a plate.
- Sprinkle with pepper and salt.
- Meanwhile drain sauerkraut, rinse under cold water, and squeeze dry with paper towels.
- Mix sauerkraut and puréed pears in the skillet.
- Top with pork chops.
- Bake uncovered, 18 to 20 minutes, until centers of chops are opaque and barely pink.
- Serve with mashed potatoes.
- Note: My supermarket stores the bagged sauerkraut in the meat section near the bratwurst and other sausages.
- It really is better tasting than any of the canned or jarred kinds I've tried, if you can find it.

PHYLLO BAKED SAUERKRAUT HALIBUT
Steps:
- Defrost the phyllo pastry but don't open it until your fish is ready. Preheat oven to 350°F.
- First pat fish dry with paper towels and salt and pepper each side. Place one cup Claussen Sauerkraut on each fillet. On top of the sauerkraut arrange the 1/4 cup diced tomato on each fillet...then set them aside.
- Now the phyllo...remove one sheet at a time and brush with butter (protecting the rest from drying out) and then repeat so that you have 4 layers put together. Place a fillet on one end of the pastry and roll up folding in sides (like a burrito) then place on a lightly oiled cookie sheet. Repeat with each fillet. I usually brush each with a little more butter.
- Bake until the pastry is golden (about 12 to 15 minutes depending on your oven and the thickness of fillets). A splash of lemon juice or malt vinegar if you wish and you're good to go.
