MMMM! I love plantains, especially sweet ones. This is a lower fat method of making "maduros" without the use of oil and frying in a pan.

4 very ripe plantains (when the skin is yellow with spots of black they're perfect)
cooking spray

Steps:

  • Preheat oven to 450°F.
  • Coat a nonstick cookie sheet with cooking spray.
  • Cut the ends off of the plantains and peel.
  • Cut each plantain on the diagonal into 1/2 inch slices.
  • Arrange in single layer and coat tops with cooking spray.
  • Bake, turning occasionally, for 10-15 minutes, until plantains are golden brown and very tender.

1 large plantain, skinned and sliced into 1/2-inch pieces
1/2 cup guava jelly
1 tablespoon rum
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a baking sheet with oil and arrange the plantains on it.
  • In a small saucepan, melt the guava jelly and rum over medium heat and season with salt and pepper. Pour the mixture over the plantains and bake for 15 to 20 minutes.

2 large ripe plantains
1 tablespoon ground ginger
1 teaspoon ground red pepper
1 tablespoon garlic powder
salt
cooking spray or coconut oil

Steps:

  • Select very yellow ripe plantains, some black spots should be visible. Cut Ends off plantains and peel remaining shin off. It should peel almost like a banana. Slice diagonally in a slanted cut pattern about 1 inch or a little thicker. Sprinkle generous amounts of ginger, garlic and red pepper if you like some spice. Lightly sprinkle with salt. Arrange on baking sheet and bake in preheated oven at 450 degrees. Turn plantains occasionally until both sides have a nice golden top about 15 minutes. Remove from oven and serve.
  • you can also use fresh ginger 1 tablespoon, 4 cloves garlic and 1 small habenero pepper and a dash salt prepared in food processor with tablespoon olive oil. Let plantains marinate in mixture for hour than arrange on cookie sheet and bake or fry in oil until golden brown.

butter, for greasing pan
3 large plantains (fully black and soft are best)
1/4 cup granulated sugar
2 Tbsp dark brown sugar
1/2 tsp ground cinnamon
2 Tbsp dark rum
2 Tbsp orange juice
2 Tbsp unsalted butter, cut into small pieces
OPTIONAL TOPPINGS
scoops of coconut ice cream (garnish with shredded coconut)
scoops of vanilla ice cream
dollops of whipped cream

Steps:

  • 1. Heat the oven to 375°F. Generously butter bottom and sides of an 8×8-inch baking dish; set aside.
  • 2. Peel plantains and trim 1/4 inch off both ends. Slice plantains at an angle to make 1/2-inch oval slices. Layer the plantain slices in the bottom of the baking dish, slightly overlapping slices. (You should get 4 to 5 rows, depending on width of the plantains.)
  • 3. Mix together the sugar, brown sugar and cinnamon, and sprinkle it evenly over the top of the layers. Then drizzle the rum and orange juice over the layers. Distribute the butter pieces evenly on top.
  • 4. Bake for 30 to 40 minutes or until the plantains are golden brown and beginning to lose their shape. Cool at least 10 minutes, then serve warm or completely cooled. It's great as is, but you can also top each serving with a scoop of vanilla ice cream, for an added touch of sweetness.

1 cup coconut milk
1/3 cup coconut, sweet shredded

4 extremely ripe plantains, peeled and sliced lengthwise
8 tablespoons butter
3/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4-1/2 cup dark bacardi rum
1/4 cup chopped and toasted macadamia nuts (optional)

Steps:

  • Preheat oven to 350ºF.
  • Melt the butter in a medium saucepan.
  • Add the brown sugar and continue cooking, stirring occasionally until the sugar is dissolved and the sauce starts to thicken somewhat.
  • Add the cinnamon and the rum and remove from heat.
  • Place the plantains in a covered baking dish.
  • Pour the sauce on the plantains.
  • Cover and bake 20 to 25 minutes.
  • Add the macadamia nuts now, if using.
  • Turn the plantains over, baste with the sauce in the dish, and continue baking uncovered for about 15 minutes.
  • This will allow the plantains to brown slightly.
  • Wonderful eaten alone, on ice cream or with pound cake or angel food cake.

4 medium yellowish brown plantains
1 1/2 tablespoons fresh lime juice (or more)
1/2 teaspoon chili powder (or to taste)

Steps:

  • Preheat oven to 375.
  • Trim ends from plantains and cut a slit lengthwise along the plantain.
  • Arrange with slit side up and bake on a pan or cookie sheet for 30-40 minutes or until they are creamy and soft.
  • Remove from oven and let cool until you can remove the peels.
  • Slice into 1/2-inch rounds (or do on diagonal for something a little more interesting) and put in a pie pan or something you can put back in the oven.

1/4 cup brown sugar
Pinch of ground allspice
1/4 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400°F. Don't peel the plantains, but cut off their ends, then split them in half the long way. Make a few gashes in their flesh. Mix together the sugar, allspice, and cinnamon and push into those gashes. Dot with butter, pushing some of the butter into the slits as well.
  • Put the plantains in a baking dish that will hold them comfortably. Bake until the tops are bubbly, about 20 minutes; you can run them under the broiler if you'd like, to brown them a bit. Let cool a little before serving.

1 teaspoon Dijon mustard
1/2 cup fresh orange juice
4 boneless skinless chicken breast halves
2 ripe plantains
1/2 papaya, sliced lengthwise

  • Rinse chicken with cold water; pat dry with paper towels. Place chicken in a glass or stainless steel bowl.
